This German Cabbage with Bacon recipe is a tangy, delicious side dish to serve your family, especially good with a pork or corned beef dinner. Filled with cabbage, onion, bell peppers, and bacon, it's perfect for your next Oktoberfest celebration!

To begin, gather your ingredients so that you have everything nearby on the counter or table.

Using a sharp knife and cutting board, shred the cabbage. Chop the sweet onion and green and red bell peppers.

In a small bowl, combine the apple cider vinegar, granulated sugar, and water, stirring well until sugar is dissolved.

Prepare the Ingredients

In a large skillet, cook the bacon until it is nicely brown and crisp. Remove from heat and allow to cool. Crumble into small pieces. Set aside.

In the remaining fat drippings, saute the prepared sweet onion and bell peppers for 2-3 minutes.

Add in the shredded cabbage.

Pour the sweet and sour sauce over the cabbage and stir to combine. Season with the celery seed, kosher salt, and freshly ground black pepper.

Cover and simmer until the cabbage is tender for about 20-25 minutes, stirring often.

Before serving, sprinkle crumbled bacon over the top.

Place in a pretty bowl and serve warm. This recipe will serve 4 people.

Prepare the Cabbage Dish

Onion Soup - Traditional French

yellow onion (3 medium thinly sliced yellow onions)

sweet vidalia onions (2 medium sweet Vidalia Onions thinly sliced)

unsalted butter (3 tablespoons unsalted butter)

olive oil (1 tablespoon olive oil)

½ teaspoon sugar (½ teaspoon sugar)

unbleached all-purpose flour (1 tablespoon unbleached all-purpose flour)

beef stock (5 cups beef broth)

oxtail (1 pound oxtail)

red wine (1 cup red wine)

thyme (2 fresh thyme sprigs)

tablerspoons cognac (3 tablespoons cognac)

French bread (4 slices French bread)

Gruyere cheese (1 cup grated Gruyere cheese)

salt and pepper (salt and pepper)

Preheat the oven to 400º. Spread the rounds of baguette on a cookie sheet and bake until golden brown. Set aside.

Heat the butter with the oil in a large saucepan until melted. Add the onions and cook gently over medium heat and occasionally stir. When the onions are completely soft and slightly light golden.

Add the sugar, pinch of salt and increase the heat to high. Cook for about 2 minutes until the onions caramelize slightly.

Stir in flour and cook for about 1 more minute until light brown. Pour in the beef stock, the oxtails, red wine, fresh thyme, add pepper to taste, and bring to a boil. Lower the heat, partially cover and simmer for about 50 minutes.

Remove the oxtails and the thyme. Add the Cognac to the soup. Stir well. Taste and adjust the seasoning.

Turn on the broiler. Leave the door open while reaching the temperature.

Ladle the soup in 4 French onion soup terrines. Cover with the baguette and pile on the Gruyere cheese. Place the terrines on a cookie sheet.

Put the soup terrine under the broiler until the cheese melts.

Serve immediately.

Stuffed Onions Recipe

(6 oz. box) stuffing mix

Slice ½-inch off the top of each onion. Slice a small section from the root end of each onion to allow onions to sit flat in baking dish. Peel skin off of onions.

Form your stuffable onion “bowls” by using a spoon or melon baller to scoop out the majority of each onion, leaving only two to three outer layers intact. Mince the onion centers that you have scooped out and set them aside.

Sprinkle onion bowls all over (inside and out) with salt. Transfer them, hallowed-out side up, to a 9&#215;12-inch baking dish.

Prepare stuffing according to box directions and then stir in the minced onion.

Fill each hallowed-out onion with about ¼ cup of the stuffing. Divide any remaining stuffing evenly between onions. 

Distribute butter pieces in the baking dish around the onions. Cover baking dish tightly with foil.

Place dish in oven. Bake 35 minutes. Remove foil. Bake uncovered until onions are soft and the stuffing and onions are lightly browned, about 25 minutes more. 

Baste onions with the browned butter drippings from the bottom of the casserole and serve.
