Loaded Sweet Potato Bites!

Sour cream (or Vegan Sour Cream)

Cut the sweet potatoes into ¼-inch slices. Place the slices in a large bowl, sprinkle with 1 ½ tablespoons olive oil, 1 teaspoon garlic powder, 1 teaspoon chili powder, and 1 teaspoon kosher salt, and stir to thoroughly coat both sides of all slices. Place on a baking sheet lined with parchment paper, taking care that the rounds do not overlap (if possible). Bake 10 minutes on one side, then remove from the oven, flip all rounds, and bake another 10 minutes until soft.

While the potatoes bake, thinly slice the green onions.

When the potatoes are done, remove them from oven and add a dot of hot sauce on each round (or more if desired). Top each round with shredded cheese and wait a few minutes for the cheese to melt (the potatoes will be hot enough at this point to melt the cheese).

To serve, place the rounds on a platter. Add a dollop of sour cream on each round, and garnish with sliced green onions. (Tip: To make the sour cream easier to dollop, mix it in a bowl with a few drops of water to loosen it).

Place the sliced sweet potato rounds on a parchment paper-lined 9 x 13 baking sheet in a single layer.

Drizzle the sweet potato slices with half of the olive oil, salt, and ground black pepper.

Place the baking sheet into the preheated oven and bake for 10 minutes.

Remove the baking sheet from the oven and flip the sweet potatoes over.

Drizzle the remainder of the olive oil, teaspoon salt, and pepper over the sweet potatoes.

Place the baking sheet back into the oven and bake for an additional 10 minutes or until the bottoms are crispy and the slices are slightly golden brown.

Remove the baking sheet from the oven and top with the cranberry sauce, goat cheese, and walnuts.  Finish them off with a drizzle of honey and garnishing with chopped rosemary.

Serve immediately.

Sweet Potato Croquettes are delicious, flavorful, savory balls of mashed sweet potatoes, cheese, and an assortment of seasoning. They have the perfect crisp on the outside, and soft and tender inside. The best bite-sized comfort food ever.

Sweet Potato Croquettes

mashed sweet potatoes, chilled

milk

cheddar cheese

green onions, finely chopped

paprika (or chili powder)

black pepper

panko breadcrumbs

In a large mixing bowl, combine mashed sweet potatoes, milk, cheese, ham, green onions, garlic powder, paprika, salt, and pepper. Mix well until smooth.

To prepare mashed sweet potatoes from scratch, add peeled sweet potatoes in a large pot of boiling water, simmer until tender, about 25 minutes. Drain well and mash with a potato masher.

Take 2 tablespoons of the sweet potato mixture at a time and use your hands to shape into balls like meatballs. Alternatively, you can use an ice cream scoop to shape into even balls.

Add breadcrumbs to a large bowl or shallow plate. Dip the mashed potato balls in the breadcrumbs and gently press the crumbs to coat.

Arrange the mashed potato balls evenly in a parchment lined half sheet baking pan and transfer into the freezer. Freeze for 15-20 minutes to firm up (and help the croquettes hold their shape while cooking).

You can cook the croquettes on the stove, in the oven, or in the air fryer.

Serve warm with mayonnaise or your favorite dipping sauce.

Add oil to a cooking pot to cover at least 2-inches high. Heat the oil over medium-high heat for 3-4 minutes until the oil is shimmering and sizzling hot.

Deep fry the croquettes in batches (about 4-5 pieces each time) until golden brown, about 1-2 minutes. Turn the balls occasionally to get an even golden crust on all sides.

Transfer the croquettes to a paper towel lined plate to drain excess oil. Let cool for 5 minutes before serving.

To deep fry the croquettes:

Place the croquettes evenly on a parchment paper lined half sheet baking pan. Spray with cooking oil spray to coat.

Bake for 20 minutes until the crust becomes golden brown.

To bake the croquettes:

Place the croquettes in a single layer in the air fryer basket and spray evenly with cooking oil spray. Depending on the size of your air fryer, you may have to do this in batches.

Air fry at 350F for 13-15 minutes until the crust becomes golden brown.

To air fry the croquettes:

We tried this. At best it was just OK.  There was very little sweet potatoe taste or any taste for that matter.   I might try adding some sugar to make it a sweet dish vs. A savory dish IF we try it again.

Preheat the oven to 180C/ 350F and line a baking tray with baking paper.

Combine everything in a large bowl and mix until well.

Use a tablespoon sized measuring spoon to form the mixture into 32 “bites”, forming into round ovals with your hands. Place on the baking slightly separated.

Lightly sprinkle the bites with sesame seeds on top.

Bake for about 20-25 minutes, or until golden brown (keep an eye on them so they don’t burn). Serve with your favourite dipping sauce and enjoy.
