Similar to apple dumplings, sweet potato dumplings are simply heaven on a plate! With each bite, you get a mouthwatering taste of flaky biscuit, spiced sweet potato, and irresistible sugar syrup.

Sweet Potato Dumplings

Grands Flaky Biscuits

corn syrup

cinnamon,nutmeg, or ginger (whichever you like best)

Melt the butter in a 9x13-inch baking pan in a 350-degree oven.

Divide each biscuit in half by pulling layers apart and pat each side out flat.

Slice the sweet potato rounds in half and sprinkle with the spices of your choice. I use cinnamon since that is my favorite spice with sweet potatoes.

Place half of 1 sweet potato round (thawed) on the biscuit half.

Fold the biscuit over and seal the edge like a fried pie or turnover.

Place biscuits in the melted butter in the pan.

Stir the water, sugar, and corn syrup together in a saucepan and bring to a boil over medium-high heat, stirring occasionally. Reduce heat and allow to simmer until sugar is completely dissolved, still stirring occasionally.

Pour the hot syrup around the biscuits.

Bake at 350 degrees for 25-35 minutes or until golden brown. The sauce with thicken as the dumplings cool.

This deliciously creamy and unique mashed potato salad recipe combines potatoes with sweet pickles, mustard, mayo, and boiled eggs.

Mashed Potato Salad

32-ounce package cubed frozen hash browns

boiled eggs, chopped

onion

sweet pickles

mayonnaise

sweet pickle juice

mustard

salt

pepper

Place hash browns in a large pot and add enough water to cover. Bring to a boil over medium-high heat. Once boiling, allow to cook for ten minutes or until tender.

Drain potatoes and place them in a large bowl. Mash all of this up a bit with a potato masher, but leave them lumpy.

Place chopped sweet pickles and chopped onion into a blender, chopper, or small smoothie blender and pulse a few times until very fine, almost like a relish.

Place mayonnaise, pickle juice, mustard, finely minced pickles and onions, salt, and pepper in the bowl with the potatoes. Stir until well mixed, then stir in the chopped eggs just until incorporated.

Cover and refrigerate for several hours or until cold. Enjoy!

Wash and dry your sweet potato.

Poke holes in it with a fork and wrap it in a paper towel and cook in the microwave until you can stick a fork all the way thru and it feels done (soft). Mine takes 8-10 minutes in the microwave. (Directions in notes on how to make a sweet potato in your Instant Pot!)

Carefully cut the sweet potato in half and place banana slices on the sweet potato. Then drizzle the peanut butter on top, followed by the chia seeds and ground cinnamon.&nbsp;

I eat the skin and all! Such a satisfying breakfast. Enjoy!

I made this for breakfast today! I skipped the microwave and threw my sweet potato in the oven (simply because I had time to). Added walnuts, almond butter, cinnamon, banana and a handful of dark chocolate chips. It was so good

Sweet potato and peanut butter- say whaaaat?  Need to try this!

I need to try this. I definitely have mornings where I don't want yogurt and fruit, or a smoothie. and I don't want to eat cereal because I feel like that is just all sugar! This would be much more filling.
