This simple Swiss chard recipe is an easy, healthy, and delicious side dish! You could also toss it with pasta or serve it over creamy polenta to make it a meal.

Sautéed Swiss Chard

Slice the stems off the chard leaves and chop the stems into 1/4-inch slices. Coarsely chop the leaves.

Heat the oil in a large skillet over medium heat. Add the chard stems and cook for 1 to 2 minutes, or until they begin to soften. Add the chard leaves, garlic, salt, and several grinds of pepper, and sauté for 1 to 2 minutes, or until the leaves are wilted.

Turn off the heat, squeeze a little lemon juice over the chard, and toss. Season to taste and serve.

Lidia's Swiss Chard Potatoes recipe is a creative and lightened version of mashed potatoes, relying on garlic and olive oil for flavor.

Lidia's Swiss Chard Potatoes

lbs Swiss chard,

potatoes,

tbsp extra virgin olive oil, divided

garlic,

salt and pepper

Prepare the Swiss chard

use a sharp paring knife to remove the thick stems from the chard, then thinly slice the stems. Set aside in a pile. Coarsely chop the chard leaves, and set aside in a separate pile.

Boil the potatoes

Bring a large pot of water to a boil, then add the potatoes.

Add the chard

After 20 minutes, add the sliced chard stems to the pot of boiling water. Cook the stems for 10 minutes, then add the chard leaves and boil for another 5 minutes. Drain in colander.

Start garlic in skillet

Heat 2 tablespoons of the olive oil in a large skillet over medium heat. Add the garlic, cook about 1 minute until the begins to brown.

Add the cooked chard

and potatoes, season lightly with salt and pepper. Cook, stirring and gradually mashing the potatoes, until the liquid is absorbed and the potatoes are coarsely mashed. Add the remaining 2 tablespoons of olive oil, season to taste with salt and pepper. Stir to combine the added olive oil and seasonings. Add a bit more olive oil if needed to achieve desired consistency. Serve and enjoy as a substantial side dish.

I love this recipe! I made it with kale and it was very satisfying.  Lower calorie count helps satisfy my potato habit.

Mediterranean Swiss Chard Salad, packed with summer veggies, chickpeas, olives and optional goat cheese, tossed in a lemon dressing. Vegan-adaptable.

Mediterranean Swiss Chard Salad 

red pepper – thinly sliced

English cucumber

cherry tomatoes-

avocado- sliced

red onion, thinly sliced

kalamata olives- optional

chickpeas (optional)

Italian parsley basil

¼ cup toasted pepitas (or slivered almonds)

sprouts

goat cheese

lemon juice

lemon zest

-2 garlic cloves

teaspoon honey (or other sweeteners)

Dijon mustard

Place all the salad ingredients in a large bowl ( Either in separate ingredients into small piles over the greens, or toss all.

Whisk lemon dressing ingredients together in a small bowl.

Dress the salad and toss- you may not need all the dressing.

Sprinkle with salt and pepper, taste and adjust salt and lemon to taste, adding more if necessary.

Sprinkle with nuts or seeds and optional crumbled cheese and sprouts.

I recently received a bunch of swiss chard in my CSA box and was not sure how to use it.  This salad was amazing! The colors and flavors were salad perfection.  The dressing was a great complement to the greens and veggies.

So tasty &amp; fresh! I used full grown yellow swiss chard sliced &amp; diced up the stems. The dressing did a great job softening and reducing any bitterness.  I don't like olives so I included some pickled artichokes for that brine flavour. Even my salad hating partner loved it and ate seconds!

This was a delicious salad. I just feel great when I eat like this! I added more tomatoes, but didn't change anything else. Thank you!

I belong to a community agriculture plan  and I have struggled every time there is fresh Swiss chard in the bag. I have tried every which way to use the plant. I literally either chocked it done steamed roasted or tossed it in the bin after letting it spoil in the fridge.
I made this salad today and I ABSOLUTELY LOVE THIS recipe. My husband even said, wow, than looks great and served himself a delicious bowl full.
