Taco Rice Casserole

Beef

Onion (chopped)

Corn

Black Beans (drained and rinsed)

Tomatoes

Package of Taco Seasoning ((or 4 tablespoons of homemade seasoning))

Salt

Shredded Cheddar Cheese

First brown your ground beef. Add in chopped onions and cook until soft.

Stir in Taco seasoning seasoning.

Add corn, tomatoes and beans.

Spray 2 9x13 pans with non stick spray. Spoon 2 cups of rice into the bottom of each pan, spreading it out evenly.

Spoon the meat mixture over the rice.

Top with the 1/2 of the cheese on each pan.

Bake covered at 350 degrees for about 25 minutes until cooked through.

If you want to eat it right away:

Cover with foil and label. To reheat, let thaw overnight in fridge. Bake at 350 degrees for 45 minutes covered with the foil. Then remove foil and cook until the top is nice and brown.

Warm a large (10") skillet over medium high heat. Add ground beef and 1/2 teaspoon salt. Cook until beef is cooked through. Drain excess drippings if necessary (I had very little drippings and did not have to drain). Sprinkle spices over the beef (chili powder, cumin, paprika, onion powder, pepper and remaining 1 teaspoon salt). Stir to combine.

Add black beans, tomatoes, corn, jalapenos and rice to skillet. Stir to combine. Add water. Stir to combine. Cover and bring to a boil. Once mixture is boiling, stir well making sure there are no bits stuck to the bottom. Reduce to simmer.

Cook 15 minutes or until rice is cooked through. Remove cover half way through and stir well, unstick any bits stuck on the bottom of the pan.

Remove skillet from the heat, sprinkle with cheese. Place skillet under broiler until cheese is completely melted, about 2 minutes.

Sprinkle with cilantro. Serve and enjoy!

(1-ounce) package taco seasoning

Preheat the oven to 350 degrees Fahrenheit. Spray a 13 x 9 x 2-inch baking dish with non-stick cooking spray and set aside.

In a large skillet, cook and brown 1 pound lean ground beef for 7-8 minutes until no longer pink.

Add the cooked beef to the prepared pan, followed by the 2 cups uncooked Minute Rice, 1 (10-ounce) can Rotel, and 1 (1-ounce) package taco seasoning.

Pour in 2 cups beef broth and stir to combine. Make sure the taco seasoning is mixed well and the rice is submerged in the liquids.

Top with 1 ½ cups shredded Mexican cheese blend, cover with foil, and bake for 20 minutes. Remove the foil and bake an additional 5 minutes to melt and brown the cheese on top! Enjoy with your favorite taco toppings!

Preheat your oven to 350°F and spray a 9x13 casserole dish with nonstick spray.

In a large skillet over medium-high heat, brown the ground beef. Drain the excess grease and transfer the beef to the casserole dish.

Add the rice, salsa, beef broth, onion, and taco seasoning to the dish, stirring everything together.

Cover with aluminum foil and bake for 30-35 minutes, or until the rice is tender.

Remove the foil, then top with queso and Mexican cheese blend. Bake for another 5 minutes, until the cheese melts.

Finish by sprinkling with tomatoes and cilantro.

Thought this recipe was going to be harder to put together and cook. One of the easiest meals to fix for large groups. Everyone loves the blend of flavors

I just made this for my family and they can't stop raving about it! It was so easy and the finished product was amazing!
Only thing I would do differently next time is I think I will add a half a cup of Sour cream To the mix before I bake it. Just seemed like it needed a little bit more moisture. But overall this is definitely a family favorite now.

This is our new favorite family recipe! It was perfect for our busy schedule and it fed all of us even with seconds. Great recipe!
