Taco Salad Dressing (Genius Hack!)

red salsa (mild

Greek yogurt* (or vegan yogurt)

sour cream (or mayonnaise

hot sauce (optional; we like Cholula brand)

salt

Mix together all ingredients. Taste and adjust seasonings as desired. Stored refrigerated in a sealed container for up to 1 week.

Catalina Dressing Recipe

ketchup

red wine vinegar

honey

paprika

onion powder

celery seed

Worcestershire sauce

garlic powder

grapeseed oil oil

salt and pepper,

Combine ketchup, vinegar, honey, paprika, onion powder, celery seed, worcestershire sauce, and garlic powder in a blender or a container that works with a handheld blender.

Blend until combined.

With the blender on, drizzle in the grapeseed oil until it comes together in an emulsion.

Use immediately or store in a covered container in the fridge for up to two weeks.

Taco Salad Bowl with Creamy Avocado Dressing

romaine lettuce

beef (cooked)

10 oz bag frozen microwavable quinoa (cooked)

4 oz can diced green chilis

black beans (drained)

olives

Colby jack cheese

avocado (diced)

cherry tomatoes (diced)

taco seasoning

tortilla chips

Hot sauce (for garnish)

avocado

cilantro

garlic

garlic salt

sugar

lime juice

mayonnaise

water (added as needed to thin dressing)

Brown ground beef and season with taco seasoning. Add green chilis and quinoa, mix until combined and heated through. Set aside.

Make the dressing, by adding all the ingredients into a blender or food processor and blending until smooth. Slowly adding water until you have reached your desired consistency.

Place the beef mixture and the rest of the salad ingredients into a large bowl and mix.

Add the salad dressing just before you are ready to serve and mix to combine.

Serve with tortilla chips and garnish with hot sauce (optional).

tomato paste*

apple cider vinegar

pepper

Dijon mustard

garlic (chopped)

water (plus more if needed to reach desired consistency)

Add all the ingredients to the jar of a blender.

Blend until smooth. Adding more water, a teaspoon at a time, if needed until desired consistency is reached.

Pour into a glass jar and refrigerate. Keep in the refrigerator up to 2 months.

This French drsg is delicious. I subbed one T. of an erythritol/ monkfruit/stevia blend for the honey and added one tsp. of Worcestershire. Will make again. Thanks.

I was so happy to come across this! I did have to modify slightly, as I did not have fresh garlic and onions in the house. I used about a TBS of onion powder and 1 tsp garlic powder. I also did half honey and half dark maple syrup for the sweetener. I loved this recipe and plan to make it frequently! (Modified and original, too). Thanks for sharing!!

Loaded Chicken Taco Salad with Creamy Lime-Cilantro Dressing

chicken breasts

tomatoes tomatoes

corn

black beans

cheese

mayonnaise (lite okay)

sour cream (lite okay, plain Greek yogurt may be substituted)

cilantro leaves (minced)

Cook

To a large skillet, add the olive oil, chicken, evenly sprinkle with 1 heaping tablespoon taco seasoning, and cook over medium-high heat for about 5 minutes, flipping intermittently so all sides cook evenly. Cooking time will vary based on thickness of chicken breasts and sizes of pieces. Allow chicken to rest in pan off the heat while you assemble the salad.

Layer

To a large platter, add the lettuce, and evenly sprinkle with the tomatoes, corn, black beans, avocado, cheese, tortilla chips, and chicken; set aside.

Whisk

To a small bowl, add the mayo, sour cream, lime juice, 1 heaping tablespoon taco seasoning, and whisk to combine.

Thin

Add the cilantro and stir to incorporate. Add additional lime juice to thin out dressing if desired.

Drizzle

Taste dressing and depending on how much lime juice was used, add sugar to taste. Evenly drizzle dressing over salad.

Beautiful presentation.  Baked tortilla over a bowl, 200 degrees 10-15 minutes.
