Beat the eggs with the salt until the whites and the yolks are completely combined, with no spots of egg white remaining.

Over medium-low heat, melt the butter in a skillet, then pour in the eggs.

Using a rubber spatula, constantly scrape the bottom of the pan while shaking the pan in a circular motion to ensure that the eggs cook slowly, forming only small curds, about 1-2 minutes.

Once you start to see the bottom of the pan for more than a second after scraping, push the eggs into a round circular shape. Cook until the edges solidify, then tilt the pan and carefully roll the omelette on itself.

Invert onto a plate, then sprinkle with chives.

In a large mixing bowl, add the eggs, sugar, salt, sake, mirin, and broth, and mix well.

Heat a tamagoyaki pan at over medium heat. Brush a thin layer of oil on the pan.

Pour ⅙ of egg mixture into pan and quickly swirl to cover the entire pan. When the egg is set, gently roll the egg.

With the rolled egg still in the pan, pour in ⅙ of the egg mixture. Lift up the rolled egg and let the mixture to flow under it. When the egg is set, roll the omelette toward you.

Repeat, adding ⅙ of the mixture at a time, continuing to roll the egg into a large roll.

Cut the tamagoyaki in half and pierce with a skewer.

Serve with a shiso leaf, grated radish, and soy sauce.

Crack the eggs into a medium size mixing bowl.

Add seasoning (add shirodashi and water for dashimaki or add sugar, salt and water for atsumaki)&nbsp; and mix them all together gently to avoid too much bubble forming.&nbsp;

Strain the egg mixture through a sieve a few times.

Pour about 2tbsp oil (*not listed in the ingredients) in a small bowl and soak kitchen paper and set aside.&nbsp;

Heat 2 tsp olive oil in the frying pan over medium heat till you can feel the heat when you hover your hand over the pan.

Pour 1/3 of egg mixture into the pan (you should hear a sizzling sound).&nbsp;

Break any bubbles that have formed with the edge of the chopsticks and scramble gently and slightly .

When the surface is solidified a little, fold and push the egg to one end of the pan with chopsticks *2

Wipe the empty side of the pan with oil-soaked kitchen paper and pour another 1/3 of the egg mixture into the empty space of the pan.

Lift the folded egg up to let the egg mixture run under it.

Fold and roll the egg from one side of the pan and wipe the empty space of the pan with the oil-soaked kitchen paper.

Pour the last 1/3 of egg mixture and repeat fold and roll.&nbsp;

Turn the heat off and wrap the rolled egg with thin kitchen towel.&nbsp;

Roll the wrapped egg roll with a sushi mat to shape and rest to cool down.*3

Once it is cool down slice it 2cm (7.9inch) thick and serve.

Tamagoyaki is a Japanese rolled omelet made with beaten eggs that are seasoned with dashi, soy sauce &amp; sugar. Layers are then rolled together in a tamagoyaki pan to create its shape. This easy 3 ingredient tamagoyaki recipe is great for any home cook!

Tamagoyaki (Japanese Rolled Omelet)

Beat Eggs

Add the eggs, water, and memmi sauce into a cup with an easy-to-pour spout. Beat the eggs with a whisk until the egg whites and yolks are well combined. Optional: strain the mixture for a smoother consistency.

Roll first omelette layer

Heat a tamagoyaki pan or regular pan over medium heat and lightly oil the bottom. Pour a thin layer of the egg mixture to cover the surface of the pan. Slightly scramble the eggs for the first few seconds but allow them to set into an even layer after it starts to cook. When it&#39;s 70% cooked but the surface is still wet, roll into an omelet and move to one side of the pan.

Re-oil the pan. Pour another thin layer of the egg mixture into the pan and lift the omelet to allow the egg mixture to flow under it. Slightly scramble the eggs for a few seconds and allow to set in an even layer. When the eggs are 70% cooked but the surface is still wet, roll another layer of the omelet and set it to one side of the pan. Repeat this set until the egg mixture is gone.

Cool and slice

Remove from the pan and allow it to rest for several minutes for easy slicing. Cut into even slices and serve. Enjoy!

Tamago Sushi is sweet and savory, with a light, fluffy texture. It’s made with Japanese rolled omelet (Tamagoyaki) and seasoned sushi rice. This classic egg sushi is a favorite for adults and children alike and is usually served for breakfast or as a side dish in a bento box. Tamagoyaki is also delicious when served on top of sushi rice.

Wash the rice and add it to the rice cooker together with water. Once cooked, transfer to a large bowl and let it cool down slightly. When it’s still very warm, stir in the sushi vinegar (or the mixture of rice vinegar, sugar, and salt).

Cook Sushi Rice

Beat the eggs in a bowl. Make sure not to over-beat the eggs.

In another bowl, whisk together water, rice vinegar, sugar and mirin until sugar is dissolved.

Combine the egg mixture with the seasoning mixture. Whisk gently. Strain the egg mixture through a sieve. Pour the mixture into a measuring cup or a jar with a spout and handle for easy pouring during cooking.

Heat a rectangular tamagoyaki pan (you can also use a round pan, see notes*) over medium. Then dip a folded paper towel in oil, and apply to the pan.

Once the oil is hot, pour a thin layer of the seasoned egg mixture into the pan. Tilt the pan to allow the liquid to flow to the edge of the pan.

After the egg has set a little bit but still soft on the surface, start rolling it into a log shape. Make sure the egg is not cooked too much, otherwise, it won’t stick as you roll the log. (It’s fine if your eggs are not neatly folded).

Move the rolled omelette to one side, and apply more oil to the pan with the paper towel. (Remember to apply the oil under the omelette.)

Pour another layer of egg mixture cover the bottom of the pan. Lift the omelette to let the mixture run underneath.

When this new layer has set slightly and still soft on the top, start rolling the log back onto the set egg to the other end of the pan.

Repeat this process until you’ve used all the egg mixture.

Remove from the pan and place the tamagoyaki on a sushi mat. Wrap it up and shape the tamagoyaki when it’s still hot. Let it rest for about 5 minutes.

Slice the tamagoyaki into 12 pieces, and set aside.

Make Tamagoyaki for Sushi

Cut the nori seaweed into ¼-inch wide strips. Set aside.

Take 3/4 handful cooked rice and shape it to a long oval form (about 1 ½ inche). Squeeze the rice gently and flatten the bottom. (You can dip your hands in vinegar water** to prevent sticking.)

Place a piece of tamagoyaki on the rice, and then press it firmly to sick on the rice.

Wrap the nori strip around the width of the sushi to secure the tamagoyaki to the rice. Repeat to make 12 pieces.

Place the assembled Tamago sushi on the plate. Serve with optional soy sauce.
