These tandoori cauliflower make for a filling and flavour-packed vegetarian dish. Who said vegetables had to be boring?

Tandoori cauliflower, my way

cauliflower (1 small head)

(50 grams) chickpea flour (besan)

cashews

garlic

(25 grams) ginger, finely grated

(60 milliliters) sunflower oil, plus extra to grease

thick Greek-style yoghurt

tsp chilli powder

tsp carom seeds (from Indian food shops – substitute with fennel seeds)

tsp each garam masala & ground cumin

creme fraiche

coriander

Roasted Tandoori Cauliflower = the BEST cauliflower recipe ever! The DIY tandoori paste is made with yogurt and staple pantry spices and is so flavorful. Serve the delicious cauliflower with an easy to make tahini cilantro sauce for a healthy and crazy delicious side dish recipe.

Roasted Tandoori Cauliflower with Tahini Yogurt

yogurt (vegan, if needed)

EACH: coriander and paprika

EACH: cumin, fennel, turmeric, garam masala or curry powder, chili powder, salt

garlic cloves, very finely minced

ginger,

lemon

cauliflower,

cilantro and lemon slices,

yogurt

cilantro

tahini

garlic clove, very finely minced

sea salt

In a medium-sized bowl, whisk together all the DIY tandoori paste ingredients.

Place the cauliflower florets in a bowl and pour in the DIY tandoori paste. Mix the cauliflower so that it is completely covered in the tandoori paste. Set the bowl aside for a 1/2 hour or in your fridge for up to 24 hours.

Make the tahini cilantro sauce while the cauliflower is marinating. In a small bowl, whisk the yogurt, cilantro, tahini, lemon juice, garlic, and salt. Add enough water to thin it to a dipping sauce consistency, about 1/3 cup water.

Preheat your oven to 400 degrees. Line a baking sheet with parchment paper. Empty the bowl of marinating cauliflower onto the baking sheet. Roast in the oven for 40 minutes, tossing halfway through.

Serve the tandoori cauliflower with cilantro and lemon slices and the tahini cilantro sauce on the side.

Tandoori Gobi also known as Gobi Tikka or Cauliflower Tikka are marinated cauliflower florets which are later grilled in an oven or tandoor. A scrumptious appetizer recipe.

Tandoori Gobi | Gobi Tikka | Tandoori Cauliflower

cauliflower ((gobi/gobhi), small to medium-sized)

Ginger Garlic Paste

red chili powder (or cayenne pepper)

Garam Masala (or tandoori masala)

turmeric powder

coriander powder ((ground coriander))

chaat masala

carom seeds ((ajwain))

fenugreek leaves ((kasoori methi))

gram flour (- roasted (besan), swap with chickpea flour

lemon juice

black salt (or pink salt

If using plant based yogurt like cashew yogurt, drain its water first. Place the yogurt in a fine meshed sieve, which is placed on top of a bowl. Cover and set aside for 45 minutes to 1 hour.

With using a fine mesh sieve, this whole process takes about 45 minutes to 1 hour. You don&#39;t want too thick a yogurt. So 45 minutes is fine.

If you prefer, you can use Greek yogurt or hung curd straightaway. To follow the method of making your own hung curd, check this DIY recipe: Hung Curd.

Meanwhile, rinse and chop the cauliflower/gobi into a medium-sized florets.

Try to keep them in one size as its helps in uniform grilling or baking.

Boil some water with about ½ teaspoon of salt. Add the florets and simmer them for 3 to 4 minutes on medium heat.

Turn off the heat and let the florets be in the hot water for 7 to 8 minutes.

Drain the water and keep the partly cooked florets aside. 

Preparation

In a bowl, take the strained yogurt or the hung curd or greek yogurt.

Add all of the ground spices, seasonings and herbs, listed under the marinade.

Mix all the ingredients listed under the heading &quot;For The Marinade&quot; including roasted gram flour, oil and salt.

Check the seasonings and add more salt or the spices if required. Add the cauliflower florets and mix thoroughly.

Place in the fridge and marinate for an hour or two. You can also marinate for a longer period of time.

Making gobi tikka marinade

Preheat the oven to 200 degrees C/395 F for 15 minutes. On a grill rack, place the cauliflower florets. Place the grill rack on a top of a baking tray lined with foil or parchment for easy cleanup.

You can also brush the florets with oil if required.

Grill or bake the cauliflower florets at 200 degrees C/395 F for 20 to 25 minutes or till they become tender and the edges start to brown. While grilling, after 10 or 15 minutes, remove the tray and turn over the florets.
