Slow Cooker Cream Cheese Chicken Taquitos

Add chicken, chili powder, garlic powder, cumin, salt and pepper to taste, cream cheese, and water to crock pot. Cover and cook on low 8 hours or on high 4 hours.

Minutes before serving, remove chicken from crock pot, shred with two forks, and return to slow cooker. Give it a stir. Let it cook about 15 minutes longer.

Preheat oven to 400. Place about 1/4 cup of the chicken mixture onto the middle of each tortilla. Top with 1-2 tablespoons shredded cheese. Roll tightly and place in a single layer on a greased baking sheet. Bake 10 minutes, until tortillas are slightly browned and shredded cheese is melted. Serve with desired toppings and sauces.

Add chicken, 1/2 cup water, cream cheese, jalapeños, garlic powder, salt, and cumin to crockpot. Cover and cook on low for 6-8 hours or on high 3-4 hours. (lesser times are for thawed chicken, greater times for frozen chicken)

Minutes before serving, preheat the oven to 425 and grease a baking sheet with cooking spray.

Use two forks to shred chicken and stir it in with the other contents of the crockpot.

Heat tortillas in the microwave for a few seconds to soften them up, this will make them easier to work with. Sprinkle cheese in the middle of each tortilla (just divide the cheese evenly between all of the tortillas).

Top cheese with 2-3 tablespoons of shredded chicken mixture. Roll tortillas tightly into a log-shape taquito.

Place taquitos on baking sheet and spray heavily with cooking spray. Bake 10-15 minutes until cheese is melty and tortillas begin to brown. (For crispier taquitos, switch the oven to broil for 2-3 minutes - watch carefully so they don't burn!)

Serve warm with dipping sauces and toppings if desired.

Chicken taquitos are perfect as lunch, dinner, or a savory snack.

Crispy Homemade Chicken Taquitos With Cilantro And Pepper-Jack Cheese

tbsp chopped Cilantro

Lime juice

oz Green Chilis, canned (½ cup green salsa verde if you have that on hand)

tsp Cumin

Chili Powder

tsp Onion Powder

tsp Garlic Powder

Pepper-jack cheese

small corn or flour tortillas

fine sea salt

cooking spray

Crispy Homemade Chicken Taquitos with Cilantro and Pepper-Jack Cheese

Melt your cream cheese until it’s soft and melty. Add all spices, cilantro, lime juice, green chilis, chicken and cheese to a large bowl. Mix until well blended.

Heat your tortillas so they are soft and won’t break as much when you roll them. Add a little bit (about 2 tablespoons) of chicken mixture to each tortilla, roll and place seam side down on parchment or foil lined cookie sheet. Spray with a little olive oil spray and sprinkle with a little bit of salt. Bake in 425 degree oven for 15 minutes.

To freeze: As you roll your chicken Taquitos, place them on a parchment lined cookie sheet without touching. Then place cookie sheet in freezer. When Taquitos are frozen remove them from the cookie sheet and add them all to a freezer safe gallon sized bag. Label and add back to freezer. When you are ready to eat just take a few or a lot of the taquitos, place on a foil or parchment lined cookie sheet. Spray lightly with olive oil and sprinkle with a little salt. Bake in 425 degree oven for 15-20 minutes or until crispy.

Baked Cheesy Chicken Taquitos

chicken breasts (pounded to ½ inch thickness)

garlic salt

cayenne pepper

onion powder

shredded mexican blend or cheddar cheese

guacamole

pico de gallo or salsa (or salsa)

Preheat oven to 450. Line a baking sheet with nonstick foil and spray heavily with cooking spray.

In a small bowl whisk together garlic salt, cayenne pepper, onion powder and cumin. Rub seasoning into both sides of chicken breasts. Spray a large pan or skillet with cooking spray and cook chicken over medium heat about 8-10 minutes or until cooked through.&nbsp;

Shred chicken with two forks. Divide chicken evenly among all tortillas, spreading the chicken into a strip down the middle of each tortilla. Top chicken with about 2 tablespoons of shredded cheese.&nbsp;

Tightly roll each tortilla into a taquito. (If using corn tortillas, see notes!) Place end side down on prepared baking sheet. Spray taquitos heavily with cooking spray. Bake 10-15 minutes until tortilla edges begin to brown/blacken and cheese is melty. Serve with guacamole and pico or salsa, and any other topping you desire.&nbsp;

Easy Vegan Taquitos

Spread out the tortillas on a baking sheet lined with parchment paper and bake at 400 degrees Fahrenheit for 4 to 5 minutes. Remove the tortillas from the oven once they have been warmed up.

Using a spoon add 1 to 2 tablespoons of the refried beans to the middle of the tortillas. Roll the tortilla up tightly and place onto the baking sheet lined with parchment.

Bake the taquitos at 400 degrees Fahrenheit for 10 minutes. Turn the taquitos and bake for another 5 to 10 minutes or until the taquitos are golden brown and crispy.

Remove from the oven and allow to cool before dipping in your favorite salsa or taco sauce.

Switch up Taco Tuesday with oil-free, crunchy vegan taquitos. With various filling choices, tortilla choices, and even two cooking options, this vegan taquito recipe is fabulous, especially for the kids.

Vegan Taquitos

Brown lentils (rinsed and picked over)

diced White Onion (diced)

Garlic

Jalapeño de-seeded (diced)

Rotel Fire Roasted Tomatoes with Green Chilies

Organic Vegetable Broth

Vegan Taco Seasoning

lime juice

Chilii powder (sprinkled)

Jalapeños (de-seeded and sliced)

Salsa of choice or hot sauce

Vegan sour cream

Mushroom Chorizo Filling

Potato Taco Filling

Cauliflower Filling

Walnut Taco Filling

Tempeh Taco Filling

Corn tortillas need to be heated in a skillet or microwave to soften them before rolling the taquitos.

Flour tortillas do not need to be heated.

Tortillas

Sauté the onion in a medium-sized saute pan with garlic and jalapeno.

You do not need oil.

The vegetables sweat and produce moisture.

You can always splash with vegetable broth, but don&#39;t waste the fat and calories on oil.

When the onions begin to be translucent, add the lentils and 3 cups of vegetable broth, 1 can of tomatoes, and the seasoning packages, stir, and bring to a boil.

Once boiling, turn the heat down to low and cook, covered for 30 minutes.

After 30 minutes, remove the top of the saute pan, and stir the contents.

Add the next can of tomatoes.

Continue to cook on low, stirring often.

Use the remaining vegetable broth if the mixture appears dry.

The goal is for it to have a thick consistency.

Allow cooling completely before rolling taquitos.

Lentil Taco Meat (or choose one of the other filling options)

Place each tortilla (corn or flour on a flat surface.

Add a small amount of taco filling on one side of the tortilla (about 4 Tablespoons) and tightly roll each tortilla.

Brush each taquito with lime juice and sprinkle with chili powder.

Choose your cooking method: air-frying or baking.

Rolling and cooking the taquitos

Set as many taquitos (fold down) in the base of the air-fryer.

Cook at 400 degrees for 7-10 minutes until crispy.

Remove from the air-fryer and cover to keep warm while the other taquitos cook.

Air Frying

Preheat the oven to 400 degrees

Place a silicone baking mat or parchment paper on a baking sheet.

Lay each taquito fold it down on the baking sheet.

Cook for 20 minutes until crispy.

Baking

These were so good!  I made them exactly as written.  My corn tortillas did break after I rolled them, so I obviously didn't wet them enough, but I'm going to try again.  They still cooked up crispy in the oven, just not pretty.  They do crisp up even more when left to rest for about 4-5 minutes before eating.  Served with cashew sour cream and salsa Verde.  Making them again tomorrow as I have filling left and I want to get my roll down.  Thanks!

Used your amazing recipe (cut in half) with my cup of leftover cooked lentils to make two giant taquitos for us today. Simply started with the onion, jalapeno and garlic, added the cooked lentils and fresh chopped tomatoes with some spices. Absolutely perfect!!!
