Sticky crispy baked sweet chili chicken bites is so much better than takeout and so easy to make healthier at home. An easy weeknight dinner or game day appy.

Sweet Chili Chicken Bites

chicken

salt

black pepper

teaspoon paprika

all purpose flour

eggs, beaten

breadcrumbs

cooking oil spray

sweet chili sauce,

green onions, finely chopped (for garnish)

white sesame seeds (for garnish)

rice vinegar

fish sauce (or soy sauce)

brown sugar

sambal oelek (or chili garlic sauce)

cornstarch (or flour)

water

Pat dry chicken breasts completely with a paper towel and cut into 1-inch cubes. Place into a medium mixing bowl and season with salt, pepper, and paprika. Set aside for at least 5 minutes.

In a large ziploc bag, add flour and cubed chicken. Seal the bag and shake well to coat.

Prepare a shallow plate with the beaten eggs and another with the breadcrumbs. Dip the chicken, one at a time, into the egg wash and evenly coat it. Then dip into breadcrumbs and fully coat. You can gently squeeze crumbs into each piece to adhere and fully coat. The flour will stick to the chicken, the egg wash sticks to the flour, and the breadcrumbs will stick to the egg wash.

Arrange the breaded chicken on a large half sheet baking pan lined with parchment paper or a silicone mat. Spray the chicken with cooking oil spray. This helps create a crispy crust on the outside during baking.

Bake the chicken for 25 to 30 minutes until chicken is fully cooked. The internal temperature for the chicken should be 165F.

Transfer the cooked chicken to a large mixing bowl and add in sweet chili sauce (or if making homemade sweet chili sauce, add the chicken into the saucepan after the sauce has been cooked and thickened). Toss gently and well to coat evenly. Sprinkle with sesame seeds and green onions.

To make homemade sweet chili sauce (instead of using store-bought), add vinegar, fish sauce, brown sugar, sambal oelek, cornstarch and water into a medium mixing bowl. Whisk well to combine until cornstarch and sugar dissolves.

Transfer the sauce to a shallow saucepan and heat over medium heat for 3-4 minutes. Stir until thickened to desired consistency.

These chicken bites went so fast! I will definitely be making them again!

I made this last night in the air fryer and it was so good!! Used a frozen bag of Trader Joe's veggie fried rice with the bites and it left everyone full! Bites only needed about 10 minutes (shaken half way) in the air fryer to reach 165 degrees. Will definitely make this again/add to the rotation of quick dinners!

These Chicken Bites are everything you want in a Thai Chicken recipe! Crispy, salty, sweet nuggets of pure joy and the recipe is pretty simple to make too!

Thai Chicken Bites

chicken breast (boneless, skinless)

garlic powder

salt and black pepper (to taste)

tbsp milk

canola oil (or peanut oil, for frying)

sweet chili sauce

carrot (julienned, for garnish)

cilantro (fresh, chopped, for garnish)

sesame seeds (for garnish)

Preheat Oil

Pour 1-2 inches of oil into a deep skillet. Preheat over medium heat. Oil is ready when it reaches 350° F.

Prep Ingredients

Cut chicken into bite-sized pieces and set aside.

In a shallow dish, stir together flour, garlic powder, salt, and black pepper.

In another shallow dish, whisk egg, milk, salt, and black pepper together.

Dredge and Coat

Toss chicken pieces into dry mixture first, then into the egg mixture, and back to the dry. Make sure you coat the chicken completely during each step!

Pan Fry

Place chicken pieces into hot oil and fry until golden brown on each side. (About 3-4 minutes per side.) Remove and drain on paper towels. Sprinkle with salt.

Toss and Serve

Transfer to a large bowl and toss with sweet chili sauce. Sprinkle with sesame seeds and top with carrot and cilantro. Serve warm.
