Here is a really easy recipe for Thai style pork tenderloin with peanut sauce. &nbsp;The sauce has a really nice flavor with garlic, coconut &nbsp;milk, soy, ginger and cilantro. &nbsp;Make this a meal or serve as an appetizer. &nbsp;

Thai Style Pork Loin with Peanut Sauce Recipe Card

2.5 lbs pork loin (1 pork tenderloin)

garlic

Dijon mustard

soy sauce (paleo diet: coconut aminos)

orange juice

salt (paleo diet: sea salt)

pepper

peanut butter (paleo diet: almond butter)

coconut milk

Tbsp. cilantro (chopped)

tsp ginger (fresh, ground)

Place pork loin in a large Ziploc bag.

In a bowl mix together the garlic, mustard, soy sauce, orange juice, salt and pepper. Pour over the pork and allow to marinate about 6-8 hours.

Marinate the pork loin:

Preheat oven to 350°F

Place pork loin in glass baking dish with marinade. Cook until internal temperature is 150°F. (about 25 minutes). Baste pork loin using a turkey baster about every 10 minutes. Remove from oven.

Cover and allow to rest for about 5-10 minutes.

Cooking the pork loin:

In a small saucepan on low heat mix all sauce ingredients. Stir with a wooden spoon until all ingredients are well integrated. Continue to stir for about 5 minutes until the consistency is smooth. Transfer to a small bowl and serve over sliced pork loin. Garnish with green onion.

Super simple to make Thai lettuce wraps. In this recipe I am using a couple of ingredients that are typical of Thai cuisine: tamarind paste and fish sauce or nam pla. If you can’t find either, you can use lime juice and soy sauce respectively. Although the tastes differ, you will achieve the sourness and saltiness tamarind paste and fish sauce offer.

Thai Lettuce Wraps - Larb Gai Recipe

Bib lettuce

chicken

vegetable oil

onion (diced)

tsp pepper

tsp ginger (fresh ground)

brown sugar

tamarind paste (See notes)

Tbsp fish sauce (See notes)

Tbsp rice wine vinegar

Tbsp chili garlic sauce

tsp sesame oil

In a non stick skillet on medium, heat the oil, add onions, garlic and cook until translucent. Add the ground chicken and stir breaking it apart.

In a small bowl mix together, pepper, ginger, and brown sugar. Add to the chicken. Mix well

Mix tamarind paste with fish sauce, chili garlic sauce, and rice vinegar. Add to the chicken mixture.

Mix well until fully cooked. Add the sesame oil, and stir to combine.

Serve on lettuce leaves. Garnish with cilantro and shredded carrots.

This looks and taste fresh for me, the presentation looks nice and i bet it is delicious, based on the seasonings this dish is great!

I am going to write this recipe on one of my cardboard recipe cards so that I can quickly access this recipe again and again. I had never had lettuce wraps before, but I investigated several recipes on the internet and decided to try this one. This particular recipe is fantastic. I did garnish it with fresh basil and fresh cilantro.
