Gluten-Free Pumpkin Cheesecake! NOBODY will guess this is gluten-free! Lightly spiced, creamy and totally luxurious. The perfect crowd-pleasing holiday dessert!

Gluten-Free Pumpkin Cheesecake

gluten-free graham crackers ((I use Schar))

walnuts

brown sugar

butter

cream cheese, softened

sour cream

cornstarch

nutmeg

cloves

vanilla extract

pumpkin puree

cream cheese (softened)

vanilla

whipping cream

Preheat the oven to 350F. In the bowl of a food processor, add the gluten-free graham crackers and walnuts. Process until the mixture resembles sand. Add the brown sugar and cinnamon and pulse to combine. Remove the food processor blade and stir in the melted butter. Press the crumbs into the bottom of a 10-inch springform pan. Place the springform pan on a foil-lined larger baking pan and bake for 6-8 minutes, until the crust is lightly golden and toasted. Let cool before adding filling.

For the Crust:

In the bowl of a hand or stand mixer, add the cream cheese and sour cream and whip until fully incorporated. (Be sure the cream cheese is softened!) Add the cornstarch, sugar, cinnamon, nutmeg and cloves and mix until evenly combined. Mix in the vanilla and pumpkin until fully incorporated.

Pour the filling over the cooled crust. Smooth the top and return the oven (keep the pan on the foil-lined baking sheet). Bake at 350F for 45-60 minutes until the edges are set and the center jiggles just slightly. Let the cheesecake cool completely to room temperature.

For the Cheesecake:

In the bowl of a hand or stand mixer, combine the cream cheese, nutmeg, vanilla, and powdered sugar. Mix until smooth and combined. While mixing on low, slowly add the whipping cream over 1-2 minutes. Increase the speed and whip until fluffy. Spread evenly over the cooled cheesecake.

Refrigerate for at least 2-3 hours or up to a day. Garnish with a light dusting of freshly grated nutmeg, if desired.

For the Topping:

My go-to apple pie recipe made with fresh apples! Homemade, flaky crust with juicy apple filling. Makes a delicious pie that goes perfectly with ice cream!

Basic Apple Pie Recipe

Double pie crust

egg white + 1 tablespoon water

granulated or chubby sparkling sugar, optional

In a medium bowl add the sliced apples. Sprinkle with the sugar, flour, cinnamon, and salt and toss gently to combine well.

Roll out and place an uncooked pie crust in the bottom of a deep 9-inch pie plate.

Place the apple mixture in the uncooked pie shell. Place the small pieces of butter on top of apple mixture.

Top with second pie crust, crimp the edges, and then cut a few slits in the top crust to allow steam to vent.

Mix the egg white and 1 tablespoon of water together in a small bowl and then brush the top with water and sprinkle with sugar before baking.

Bake at 450 degrees F. for the first 15 minutes, then reduce the heat to 350 degrees F.  and continue cooking for an additional 40 to 45 minutes, or until the top is golden brown.

If the edge of the crust starts to brown more quickly than the center, carefully cover the edge with foil for the last 15-20 minutes of baking to prevent over-browning.

Let the pie cool for 10 minutes before serving. Can be made ahead of time and served at room temperature.

I have never made a better and easier apple pie.  This has been my go to for the past 4 years or so.  Never fails, comes out perfect every time.  I use HoneyCrisp apples. I also use the refrigerator crusts pre-made, and you would never know.  The butter under the crust and the little bit of sugar on top is the perfect finish.  Have the T-Day pie in the oven, right now!

We’ve used this pie recipe many times and LOVE the simplicity of it.  We made it for Thanksgiving &amp; used a variety of apples, Granny Smith,  Pink Lady, &amp; Honey Crisp. Oh man, this was legit the easiest, but hands down the most delicious homemade apple pie I've ever eaten. This was also my first time even making a pie! I was shook! LoL. I would highly recommend anyone to make this. It's so yummy!

Read through this recipe  before printing it.  The first instruction says mix the first 5 ingredients together. Hmmm, if you count the ingredients #5 is the pie crust, hmmm that sounds like a problem.  But I continued scanning to find later the instructions say to take the egg white… Hmmm, I went back to check and I don’t see eggs on the ingredients list. Maybe I need to find a recipe that is complete, accurate and non assuming.

It was easy, easy as pie and I'm not a cook. I did enjoy giving it a whirl. It taste great!!
