A simple and family-friendly Thermomix Potato &amp; Leek Soup recipe that everyone will love!

Thermomix Potato &amp; Leek Soup

leeks, roughly chopped

onion, halved

g butter

tsp minced garlic

800 g liquid chicken stock

salt and pepper, to season

cooking cream

Place the leeks and onion into the Thermomix bowl and chop on Speed 6, 5 seconds. Scrape down the sides of the bowl.&nbsp;

Add the butter and minced garlic and cook on 100 degrees, Speed 1, 5 minutes.&nbsp;

Add the potatoes and cook on 100 degrees, Speed 1, 5 minutes.&nbsp;

Add the chicken stock, salt and pepper and cook on 100 degrees, Speed 2, 20 minutes (with the MC removed but the rice bowl sitting on top to stop any splashes).&nbsp;

Allow the soup to cool slightly. Very slowly increase to Speed 6 to puree the soup, 30 seconds.&nbsp;

Add the cooking cream and heat for a further 3 minutes, 100 degrees, Speed 2.&nbsp;

Amazing Thermomix Pumpkin Soup

g garlic

black peppercorns

tbsp butter

pumpkin

carrot

potato

water

tbsp Massel vegetarian chicken stock

Add garlic and peppercorns to TM bowl. Chop 2 sec/Speed 9.

Scrape

Add butter to the TM bowl. Cook 5min/Varoma/Speed 1 (MC OUT)

Add carrot, potato, pumpkin, water and chicken stock to the bowl.

Cook

Remove

Remove the MC. Cook 20 min/Varoma/Speed 1 (add the splatter gaurd or internal steam basket to the lid to prevent splatters.)

Fit MC

Blend

Blend the soup 1min/speed 5 slowly turn the selector to increase the speed until speed 9 is reached.

Serve

Serve the soup with a swirl of cream if desired or some garlic croutons.

Made using pumpkin or butternut squash, this creamy soup is easy, flavorful &amp; good for you!

The Best Creamy Thermomix Pumpkin Soup

pumpkin (peeled, chopped & seeds removed)

85 g potato (peeled & chopped)

vegetable stock

paprika powder

cumin powder

ginger powder

cinnamon

salt & pepper

thyme, rosemary, sage, etc (to taste)

pumpkin seeds (toasted)

Add onion and garlic to bowl, chop 6 seconds / Speed 5. 

Scrape down the sides of the bowl. 

Add olive oil and saute for 3 minutes / 100 degrees / Speed 1. 

Add chopped pumpkin, potatoes, stock &amp; spices. Cook for 20 minutes / 100 degrees / Speed 1. Make sure to add a splatter cover or steam basked in order to prevent any splatter or splashes.

When the veggies have softened, it’s time to puree the soup. Start by pureeing for 1 minute / Speed 4 and then GRADUALLY increase to Speed 9 until pureed. 

If the soup splatters or your TM has trouble blending, let the soup cool down a little. Then start pureeing again at Speed 1 and gradually, SLOWLY increase the speed to 9.

Once blended, taste the soup. Adjust salt, pepper &amp; spices to taste. Add more liquids if the soup is too thick.

Serve with herbs, pumpkin seeds &amp; other toppings of choice. Enjoy!
