Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, combine the cauliflower, carrots, cumin, paprika, salt, pepper and olive oil. Toss until well-coated.

Spread the vegetables on the baking sheet in a single layer and roast for 20-25 minutes, until the carrots are tender.

Make the dressing: In a medium bowl, whisk together the tahini, garlic, lemon juice, and water. While whisking, slowly drizzle in the olive oil until the dressing is emulsified. Season with salt and pepper.

In a large bowl, mix together the onion and parsley. Add the roasted cauliflower and carrots, and toss well.

Drizzle the salad with the dressing, then serve.

Vegetarian 3 Bean Chili Recipe

TBS Olive Oil

large Yellow Onion (– small dice (about 2 -2 1/2 cups))

Bell

Poblano Pepper (– stemmed, seeded and small dice (about ¾ cup))

Garlic (– minced)

EACH:

½ tsp EACH: Smoked Paprika, Ground Coriander & Dried Oregano (NOT ground)

TBS Tomato Paste

¾ Cups Beer

(14.5 ounce) Can EACH: Fire-Roasted Diced Tomatoes & Crushed Tomatoes (- UNDRAINED)

Bay Leaves

(14.5 ounce) Can Red Kidney Beans (– drained & rinsed)

(14.5 ounce) Can Black Beans (– drained & rinsed)

(16 ounce) Can Refried Beans (– (SEE NOTES))

Cup Frozen Corn Kernels

TBS Fresh Lime Juice (– or more to taste)

Salt & Ground Black Pepper

Sauté vegetables

Sauté vegetables: In a large heavy-bottomed pot or Dutch oven, heat oil over medium heat.  Add the onions and all three peppers.  Sauté (sweat), stirring occasionally, until softened, about 7-8 minutes.   Add the garlic, chili powders, cumin, paprika, oregano and coriander.  Season with 1 teaspoon of salt and ½ teaspoon of ground black pepper.  Cook, stirring, until fragrant, about 1 minute.  Add the tomato paste and cook, stirring, until the tomato paste is caramelized, about 2 minutes.

Deglaze pan

Deglaze the pan: Slowly add the beer to deglaze the pan, using the back of a wooden spoon to scrape up any browned bit from the bottom of the pan.  Bring to a simmer. Add the tomatoes and bay leaf. Increase heat to medium-high and bring back to a simmer.  Immediately reduce heat to maintain a gentle simmer.

Simmer

Cook: Cover and simmer for 10 minutes.  Remove lid, stir and continue to simmer for an additional 10 minutes.

Add beans

Add the beans and corn: Add the kidney beans, black beans, refried beans and frozen corn.  Bring the soup back to a gentle simmer over medium heat.  Immediately reduce to low and cook for 8-10 minutes, or until the soup is thickened and chili is warmed through.  Stir in lime juice.  Taste and adjust for seasoning with salt, pepper, hot sauce and/or lime juice.  Use tongs to remove bay leaf and discard.

Serve

Serve: Ladle warm chili into individual bowls and garnish with desired toppings.  Enjoy!

Vegetarian 3 Bean Chili

A satisfying vegan chili made with a three bean medley and spiced with warm flavors. Simple, cozy, and filled with plant-based protein!

Fiesta Three Bean Chili

yellow onion

bell peppers (I use green and red)

garlic garlic

black beans

can pinto beans

kidney beans

vegetable broth

organic sweet corn (canned, frozen, fire-roasted)

Tbsp. chili powder (1 Tbsp. + 1 tsp.)

smoked paprika

Avocado, cilantro, green onion, hot sauce, dairy-free sour cream, tortilla crumbles, etc.

Dice onion.

In a stockpot over medium-high heat, sauté onion for 7-8 minutes. (I use 3 Tbsp. water/broth for no-oil sauté method. Add more as needed to prevent sticking.)

Meanwhile, dice bell peppers and mince garlic.

When onion is translucent, add bell peppers, garlic, chili powder, cumin, and smoked paprika. Stir and sauté for 2 minutes.

Add broth and diced tomatoes with juice.

Rinse and drain beans. Add to stockpot.

Increase heat and bring to a light boil. Then cover, reduce heat, and simmer for about 25 minutes.

Stir in corn during the last 5 minutes of cooking. (If using frozen, no need to thaw first.)

Salt to taste and serve with any desired toppings. (I love avocado &amp; cilantro.)

This is my favorite vegan chili!! So easy to pull together after a busy day and tastes even better as leftovers! I love to enhance my bowl with cilantro, lime juice, crushed blue tortilla chips and hot sauce mixed in. Yum!

Made this and loved it! Had a bowl for dinner then filled 5 small containers for meals throughout the week!
