Easy Indian Tikka Masala Sauce

Cup Marinara Sauce, Smooth Pasta Sauce

1.5 tsp Garam Masala

Unsalted Butter

Cup Heavy Cream

tsp Cayenne Pepper, or Paprika, add more if like heat

Honey

Garlic, clove, grated, optional if using garlic marinara sauce

tsp Salt, adjust per taste

Heat 1 tablespoon butter in a heavy bottom deep pan. Add garam masala and cook until fragrant. (about 30 secs)

Add cayenne (or Indian Red Chili Pepper), grated garlic, honey, and marinara sauce with 1/2 cup of water. Bring to boil and simmer for 6-7 minute on medium-low heat. 

Add heavy cream and remaining 1/2 tablespoon butter. Heat the sauce for 1 minute while mixing the ingredients. I usually start with 1/4 cup of cream and then taste and adjust with few tablespoons more. Taste and adjust salt. Remove from heat.

Tikka Masala Sauce is ready!! Serve plain with rice. Or mix with your favorite protein and serve with traditional Indian Naan. Enjoy!

An authentic Tikka Masala Sauce recipe with a blend of spices that is smooth, creamy and ready in under 30 minutes in the Instant Pot or on the Stove.

Tikka Masala Sauce - Instant Pot | Stove

unsalted butter (or ghee)

onion (1 medium onion coarsely chopped/sliced)

garlic (3 cloves, crushed or minced)

ginger (1-inch piece, minced or grated)

can diced tomatoes (14.5 oz can, or, 4-5 Ripe Roma tomatoes

cashews

water

salt

turmeric powder

garam masala

coriander powder

cumin powder

Kashmiri red chili powder ((or paprika

cardamom powder (5-6 pods, de-seeded and crushed)

dried fenugreek ((Kasoori Methi))

butter ((optional))

Agave ((or honey/sugar), adjust as needed)

Turn on Saute and adjust to High. Wait for 30-40 seconds and add butter (or ghee) and chopped onions, cook for 3 minutes, till they soften.

Add minced garlic, ginger and sauté for one minute. Add tomatoes, spices, cashews and cook for 2 minutes. Add water and scrape up any brown bits that have stuck to the bottom. Turn off Saute.

Close the lid and pressure cook on High for 5 minutes, followed by a natural pressure release. If in a rush, QR (quick release) after 5 minutes following your cooker instructions. Unlock and open the lid after the pin drops.

Using an immersion blender, puree the sauce to a smooth consistency. If using a traditional blender, wait for the sauce to cool down and then blend to a smooth consistency.

Add dried fenugreek and butter and simmer (on Saute) for 2-3 minutes. Add agave or honey to balance the flavors, and you&#039;re done! If not using immediately, cool and store for later. For Freezing, see &#039;notes&#039; below.

Instant Pot Method

Heat a heavy bottom pot on medium-high heat, add add butter (or ghee) and chopped onions, cook for 3 minutes, till they soften.

Add minced garlic, ginger and sauté for one minute. Add tomatoes, spices, cashews and cook for 2 minutes. 

Add water and stir well. When the sauce comes to a boil, reduce heat to medium, cover the pot and simmer for 15-20 minutes. Stir a few times to prevent the sauce from sticking to the bottom. If it looks dry, add a little water and continue cooking.

Using a hand immersion blender, puree the sauce to a smooth consistency. If using a traditional blender, wait for the sauce to cool down and then blend to a smooth consistency.

Add dried fenugreek and butter. Simmer uncovered for 2-3 minutes. Add agave or a little sugar to balance the flavors. If not using immediately, cool and store for later. For Freezing, see &#039;notes&#039; below.

Stovetop Method

Thaw the sauce and add to pressure cooker. If the sauce looks too thick, add 1/4 - 1/2 cup of water. Add bite size pieces of any ONE of the following options:1. Chicken (thigh/breast): Add 1-1.5 lbs. chicken and pressure cook at LOW pressure for 5 minutes, followed by natural pressure release. Alternatively, simmer in a sauce pan for 15-20 minutes at medium-high heat.2. Paneer: Add 10-12 oz. cubed paneer. Turn on Saute and simmer for 4-5 minutes, until the paneer becomes soft (No pressure cooking required). Alternatively, simmer in a sauce pan for 10 minutes at medium-high heat.3. Vegetables: Add 4 cups vegetables of choice. Adjust pressure cooking time to &#039;0&#039; minutes at LOW pressure, followed by quick pressure release. Alternatively, simmer in a sauce pan for 10-12 minutes at medium-high heat.4. Fish/Salmon: Add fish cut in 2-inch pieces. Turn on Saute and simmer for 6-8 minutes, until the fish cooks through and turns opaque (No pressure cooking required). Alternatively, simmer in a sauce pan for 6-8 minutes, at medium-high heat.5. Cooked Chickpeas: Add 2 cans of rinsed and drained chickpeas and adjust pressure cooking time to 2 minutes at LOW pressure, followed by natural pressure release. Alternatively, simmer in a sauce pan for 10-12 minutes at medium-high heat.6. Shrimp: Use 1 lb. extra large thawed shrimp (21-30 count) and turn on Saute. Simmer for 6-8 minutes, or until shrimp are cooked through, turn pink and opaque. Alternatively, simmer in a sauce pan for 6-8 minutes at medium-high heat.

How to Use Tikka Masala Sauce (Instant Pot &amp; Stove)

Cool the sauce completely. Store in an airtight container and refrigerate for 4-5 days, or freeze up to 2 months.

To re-use, thaw the sauce, ideally overnight in the refrigerator, and use per instructions.

Tikka Masala Sauce- Instant Pot & Stove

This boldly flavoured vegan tikka masala has chunks of tofu and vegetables marinated in a tangy and spicy marinade. The sauce is rich, creamy sauce and rounded off with fresh herbs.

Vegan Tikka Masala

block extra firm tofu

sweet potato

mushrooms

red pepper

soy yoghurt (unsweetened)

olive oil

garlic (pressed)

tbsp grated ginger

tsp tandoori masala

¼ tsp kala namak (black salt)

tsp kashmiri chili powder

vegetable oil

black mustard seeds

cumin seeds

onions (sliced)

brown sugar

tomatoes

coconut milk

lemon juice

1½ tsp garam masala

mint leaves (chopped)

cilantro

Mix together all the marinade ingredients: soy yoghurt, olive oil, garlic, ginger, tandoori masala, kala namak, kashmiri chili powder and salt.

Marinate

Combine well with the chopped vegetables and tofu and marinate in the fridge for 4 hours.

Roast

Spread the marinated vegetables and tofu out on a large baking tray (lined with a reuseable baking sheet) and roast in the oven at 220°C (430°F) for 30 minutes. Set aside until the sauce is ready.

For the &#039;tikka&#039;

Temper

While the veg is roasting, heat up the vegetable oil in a large frying pan on medium-high heat. Add in the whole cumin and black mustard seeds and fry them for 30 seconds.Tip: The whole spices should sizzle up if the oil is hot enough.

Onions

Next, add the sliced onion and brown sugar and saute on medium-high heat until golden brown, about 10 minutes.

Garlic

Stir in the garlic and continue to saute for 1 minute.

Tomatoes

Add the chopped tomatoes and cook them down, stirring frequently, on medium-high heat for about 6-7 minutes. Tip: The oil should start to separate from the thick tomato.

Coconut

Now stir in the coconut milk. Continue to cook until the sauce starts to thicken, about 3-5 minutes.

Combine

Take the sauce off the heat. When the vegetables and tofu are finished roasting, add them into the pan and stir to combine with the sauce.

Seasoning and herbs

Finally, stir in the garam masala, salt, lemon juice and the fresh coriander and mint leaves.

This vegan tikka masala has got an amazingly flavourful thick masala sauce with beautifully roasted marinated veggies and tofu.

Tikka Masala Sauce is a creamy and luscious tomato-onion based gravy. This sauce is super versatile and can be used as a base for many dishes.

Tikka Masala Sauce Recipe

butter (divided) ((

½ inch cinnamon stick

white onion, diced

½ inch ginger

garlic cloves, chopped

tomato

tomato paste

½ teaspoon Indian red chili powder (spicy)

½ teaspoon garam masala (divided)

½ teaspoon honey or sugar

½ teaspoon kasuri methi (dry fenugreek leaves)

cream

Heat one tablespoon butter and one tablespoon oil in a pan on medium heat. Add one teaspoon cumin seeds and small piece of cinnamon stick. Toast the cumin seeds for 30 seconds and 2 chopped medium onion, 1 ½ inch ginger, 4 large garlic cloves and a pinch of salt.

Saute for 7-8 minutes till onions turn slight brown.

Add four large ripe tomatoes with the juices, 2 teaspoon tomato paste, ½ teaspoon turmeric powder, 1 teaspoon Indian red chili powder, 1 tablespoon coriander powder, 1 teaspoon cumin powder and salt to taste. Mix it well and cook for 12-15 minutes till mixture turns soft and some the water from the tomato is evaporated.

Remove the cinnamon stick and cool the mixture and transfer it to a blender. Make a fine paste.

Now transfer the sauce back to the same pan, add ¼ cup heavy cream, ½ teaspoon honey or sugar, 1 ½ teaspoon dried fenugreek leaves, ½ teaspoon garam masala, 1 tablespoon butter, water to adjust the thickness of the gravy ( about ½ to ¾th cup)

Mix and check for seasoning. Simmer the tikka sauce for 5 minutes and its done

Stove Top Method -

Turn on the instant pot and press sauté mode. Add the butter and oil and let it melt. Add one teaspoon cumin seeds and small piece of cinnamon stick. Toast the cumin seeds for 30 seconds and 2 chopped medium onion, 1 ½ inch ginger, 4 large garlic cloves and a pinch of salt.

Saute for 3-4 minutes till onions turn slight brown.

Add four large ripe tomatoes with the juices, 2 teaspoon tomato paste, ½ teaspoon turmeric powder, 1 teaspoon Indian red chili powder, 1 tablespoon coriander powder, 1 teaspoon cumin powder and salt to taste. Mix it well and saute for 2 minutes. Add 1/2 cup water and mix it well scraping the bottom of the pot.

Cancel the saute mode, close the lid and adjust the vent to sealing position.  Press the manual or pressure cooker mode and adjust the time to 6 minutes.

Naturally release the pressure. Remove the cinnamon stick and puree the mixture using a immersion blender. If using a regular blender, let the mixture cool before grinding.

Add ¼ cup heavy cream, ½ teaspoon honey or sugar, 1 ½ teaspoon dried fenugreek leaves, ½ teaspoon garam masala and 1 tablespoon butter.

Instant Pot Method -

Saute onion, bell peppers and paneer cubes and add them to the sauce.

You can also oven roast or air fry cauliflower, zucchini, green beans and mix it with the tikka masala.

Pair it with just paneer cubes or sautéed tofu.
