Pre-heat

Line

Line a baking tray with foil and spritz with low calorie cooking spray. Set aside.

Spread

Spread the mincemeat onto one side of the bread and then sprinkle the cheese on top.

Place

Place the second piece of bread on top and press down. Spray the top with low calorie cooking spray.

Place into the oven for 5 minutes, or until the cheese has melted and the bread is toasted.

What better way to use up the odds and ends from your cheeseboard than the ultimate festive cheese toastie? No need for a toastie maker – it’s made in a frying pan.

grams/3½oz hard cheese, grated (such as strong cheddar, gruyère)

grams/2¾oz soft cheese, diced (such as camembert, soft blue)

mustard,

tbsp fruity chutney (festive leftovers

grams/1¾oz butter, softened

salt and black pepper

pickled walnuts, cornichons, thinly sliced apple, to serve (optional)

Sighing at what&#8217;s leftover from your Christmas feasting? This quick recipe makes ingenious use of the ends of the cheeseboard, odd nuggets of stuffing and even the last spoonfuls of gravy.

Heat the oil in a pan over a medium heat. Fry the onion for 10-15 minutes until browned. Add the cranberry sauce and fry for a few minutes more.

Meanwhile, cook the bacon in a frying pan over a medium-high heat for 5 minutes until golden and crisp. Set the bacon aside on kitchen paper, then add the stuffing to the pan. Fry for 3 minutes or until starting to crisp.

Butter one side of each bread slice. Put 2 slices, buttered-side down, on a work surface and top each one with 1 tbsp gravy, then layer each with half the onion, bacon, turkey, stuffing, cheese and remaining gravy. Sandwich with the non-buttered side of the remaining 2 bread slices.

Heat the grill to high. Melt the rest of the butter in a pan on a medium heat and fry both sandwiches for 3-4 minutes on each side until golden, then put under the grill for 5 minutes more until the cheese is oozing.

The air fryer is perfect for cooking a grilled cheese sandwich to perfection. It is super easy and does not require much effort.

Preheat the air fryer to 180°C (350°F). It should take roughly 5 minutes to heat.

Place the cheese on the unbuttered side of the bread.

Assemble the sandwich, so the buttered sides of the bread are facing outwards.

Cook for 10 minutes. I recommend flipping the sandwich halfway through cooking.

Preheat your oven to a toasty 180°C

Get your bread ready: arrange 4 cheese rectangles around the edges of one slice, leaving a hole in the middle (or use grated cheese to cover the whole slice).

Top it off with the second slice of bread and give it a good press in the middle to make an indent.

Time for the pizza transformation: Add your pizza sauce to the centre of the bread.

Load it up with your grated cheese, chopped pepperoni, and let&#39;s not forget a hearty sprinkle of Mingle&#39;s Pizza blend seasoning.

Now, let the oven do its magic: Bake your pizza toast sandwich for 12-15 minutes or until the cheese is bubbling and beautifully oozy.

Paneer & cheddar sandwich

Heat the oil in a pan and add the mustard and cumin seeds. When they start to pop, add the chilli and onion, and cook over medium heat for 10-12 mins until the onions begin to caramelise.

Transfer the cooked chilli and onion to a large bowl, add the chives and both cheeses, then mix well. Season with ½ tsp salt and a pinch of black pepper.

To cook the sandwiches, you can use either a toastie maker or frying pan. Butter a slice of bread and spread with some of the paneer filling, then top with another slice and press gently.

Heat 1 tsp butter in a pan and cook the sandwich over medium heat for 2-3 mins until golden, before flipping it over to cook the other side (add another 1 tsp of butter to the pan if needed). Serve the sandwich straightaway.

Make a classic ham & cheese toastie in your air-fryer – try gruyère instead of cheddar, if you like, or sourdough in place of your usual bread

Heat the air-fryer to 190C. Butter the slices of bread on one side each, then combine the remaining butter with the mustard, cheese and chives, if using. Season with black pepper.

Spread the cheese mixture over the plain sides of the bread, then sandwich the ham between the two slices so the buttered sides are facing out. Air-fry for 10 mins, turning once until golden and crunchy on the outside, and the cheese has melted in the middle.
