Toffee Crumble Apple Pie

pie dough (see note)

Roll out and place one pie crust into the bottom and sides of a 9-inch pie plate, trimming to the edge of the pie plate all the way around. Preheat the oven to 375 degrees F.

For the filling, in a large bowl, toss the apples with the lemon juice. Add the brown sugar, granulated sugar, flour, cinnamon, nutmeg and salt. Stir to combine. Add vanilla and cream and mix.

In a large pot, melt the butter over medium heat. Add the apple mixture and cook for about 6-8 minutes, stirring often (and adjusting the heat if the apples start to stick to the bottom of the pot) to soften the apples just a bit.

Scoop the apple mixture into the pie shell and spread evenly.

In the same bowl you used for the filling dry ingredients, combine the flour and sugar. Cut in the butter with a fork or your fingers until the mixture resembles coarse crumbs. Stir in the chopped toffee bars. Sprinkle this mixture over the top of the apples.

Roll out the top pie crust and place it on top of the pie. Leave a 1/4- to 1/2-inch overhang all the way around. Fold the top crust over the bottom crust and underneath. Press lightly to seal. Flute the edges and cut a few long slits in the top to vent the pie.

Beat the egg white with a teaspoon of water and brush the top of the pie with the egg mixture. Sprinkle lightly with sugar.

Place the pie on a baking sheet (to avoid any potential leaks dripping into your oven) and bake for about 50-60 minutes until the crust is golden and the apples are soft and tender. Serve warm or at room temperature.

Just 3 ingredients and 15 minutes and you have DIY homemade toffee bits from scratch! They're absolutely amazing in cookies, brownies, streusel toppings on muffins or pies, or just as a sweet snack.

Homemade Toffee Bits

(200 grams) light brown sugar

Line a small rimmed baking sheet with parchment paper or a silicone baking mat.

In a heavy bottomed small saucepan, melt the butter over medium heat. Add the sugar and salt and whisk vigorously for one minute until combined. Cook, stirring constantly, until the mixture looks like melted peanut butter and a candy thermometer reaches 295 to 305°F, about 10 minutes.

If the mixture separates at all, remove from heat and whisk vigorously until recombined. Return to heat and continue cooking.

Immediately and carefully pour the hot toffee onto the prepared baking pan, allowing it to spread into an even layer. Let cool and harden for about 20 minutes.

Place the sheet of toffee on a cutting board or in a zip top bag. Use a mallet, rolling pin, or heavy object to crack it into small pieces. You can also cut into bits with a sharp serrated knife. Store in an airtight container for up to 1 week.

You NEED to bake a batch of these Brown Sugar Pecan Toffee Cookies! They&#039;re chewy and moist and the toasted pecan and buttery toffee flavor combo is totally dee-lish!

Brown Sugar Pecan Toffee Cookies

baking soda

(1 1/2 sticks) unsalted butter, (softened to room temperature)

dark brown sugar, (firmly packed)

egg, (room temperature)

vanilla extract

pecans, (roughly chopped, plus 28 halves if you choose to top each of the cookies

sea salt, (for sprinkling on top of warm cookies, if desired)

Preheat oven to 350 degrees. Line a large baking sheet with parchment paper and set aside.

Spread your pecans on another baking sheet and bake in a 350 degree oven for 7-8 minutes or until fragrant. Remove from the oven and set aside to cool.

In a medium bowl, whisk together flour, baking soda, cinnamon and salt. Set aside.

Beat butter and dark brown sugar together until smooth and creamy. Add the egg and vanilla extract and beat until combined. Add the flour mixture and mix until just combined. Fold in the toasted pecans and toffee bits.

Using a 1 1/2-inch cookie scoop, drop cookie dough onto prepared sheets, 2 inches apart. Tope each cookie dough ball with a pecan halve, if desired. Bake 11-13 minutes. Remove from oven and cool on wire racks. While the cookies are fresh from the oven, sprinkle with some sea salt, if desired.

Line a baking tray with parchment paper; set aside. Before beginning to melt the chocolate, have all the ingredients chopped, prepped, and ready to go so that they’re ready to be added while the chocolate is hot and melty. I use my Mini-Prep Plus Food Processor to grind the nuts in seconds rather than hand-chopping, but I hand-chop the cookies.

Coarsely chop the chocolate or break into chunks to encourage smooth melting.

Place chocolate in a large microwave-safe bowl. Heat on high power to melt, about 2 to 3 minutes, stopping every 15 seconds to check and stir until mixture can be stirred smooth. Be careful not to scorch it; or use a double boiler.

Pour melted chocolate onto parchment and with a spatula or offset knife, smooth into a large rectangle, about 10×15-inches, and about 1/8-inch thick; just eyeball.

Evenly sprinkle with pretzels, Oreos, toffee bits, peanuts, almonds, and sea salt to taste.

Allow chocolate to set up for at least 1 hour at room temp, or in the freezer for about 30 minutes.

After chocolate has set, break into pieces or chop with a knife. Bark will keep airtight at room temp for many weeks and in the fridge or freezer for many months.

Delicious!  However ingredients don't stick well.  Next time will melt additional chocolate to drizzle over in hopes of toppings adherering better.
