A rich and creamy vegan alfredo-style pasta sauce made from silken tofu.

Silken Tofu Pasta Sauce

(16 oz package) pasta

(12.3 oz block) silken tofu

onion ((about 1 cup diced))

garlic

olive oil

yeast

lemon juice

pasta water

salt ((divided))

pepper ((or red pepper flakes))

Cook your pasta of choice according to package directions. (Reserve 1 1/2 cups of the cooking water.)

While your pasta is cooking, peel and dice an onion and mince 3 cloves of garlic.  Then saute them over low heat in 3 tablespoons of olive oil with a sprinkle of salt (1/4 tsp) until they turn translucent.

Cut open the package of silken tofu and drain off any excess water then add the tofu to the blender. (There is no need to press silken tofu.)  Then add the sauteed onion and garlic, 1 tbsp nutritional yeast, 1 tbsp lemon juice, 3/4 tsp salt, and 1/4 tsp pepper.

Add 1 cup of the starchy pasta water to the blender and blend until smooth.  Add an additional 1/2 cup of the pasta water and blend again until very smooth.

Pour the tofu cream sauce back into the frying pan used to saute the onions and warm it over low heat.  Add salt and pepper to taste.

Toss in the cooked drained pasta and stir to coat the pasta in the sauce and serve hot. Garnish with fresh parsley if desired.

Creamy Tofu Pasta Sauce is a delicious and healthy alternative to dairy and a lighter option than vegan sauces made with nuts. Enjoy it on pasta as a garlicky tofu cream sauce, or add one more ingredient to transform it into a tofu cheese sauce that&#039;s perfect for mac and cheese! Only 7 ingredients and 10 minutes prep time. Gluten-free, oil-free and nut-free.Yield: makes about 2¼ cups of sauce, enough for 8 ounces of dry pasta. Double the recipe for a full pound of pasta.

silken tofu (I prefer the refrigerated type)

Tablespoons nutritional yeast (For the best flavor choose a non-fortified brand like Sari)

lemon zest, optional

white wine vinegar

fine sea salt

mustard,

red pepper

Plan

Note that as written the recipe makes about 2¼ cups of sauce, enough for 8 ounces of dry pasta. For a full pound of pasta, prepare a double batch of sauce.

Blend

Combine all ingredients except the roasted red pepper, if using, in a full size blender. Start on low speed, then increase to high. Blend until smooth. Stop to scrape down the side of the blender as needed.

Season

Taste the sauce, and add more lemon, garlic, salt, or nutritional yeast as desired. Add a small piece of roasted red pepper, if using, and blend again. Taste and add more if you like.

Simmer

If not serving right away, transfer to an airtight storage container and refrigerate until ready to use. Otherwise, pour into a saucepan. While whisking, cook over medium-low heat until bubbly and hot, 3-4 minutes.

Serve

Toss with your choice of cooked pasta, or serve as a sauce over roasted vegetables, potatoes, french fries, and more.

I made it in about 5 minutes, and took it to my sister's house where she was serving spaghetti with meat sauce. It was really good as a vegan alternative, and the omnivores who tried it, agreed.

My hub said he loved it!  Made the Mac and cheese version for lunch today!  I didn’t have roasted red peppers or silky tofu…but I subbed half of a sweet potato for color and used firm tofu….best ev-er!  Thanks Lori ❤️

Simple and delicious Roasted Red Pepper TOFU Pasta sauce!

Roasted Red Pepper Tofu Pasta

pasta

shallot (diced)

garlic (minced)

tofu (block, about 15 ounces*)

plant based milk

Italian seasoning

garlic powder

Salt and pepper

red peppers (jar, drained)

Cook the pasta according to package directions.

Meanwhile, in a large skillet, heat the olive oil over medium heat. Add in the shallot and garlic and sauté for 5 minutes, stirring often.

Add the shallot + garlic mixture to a blender with the remaining ingredients. Blend until creamy and smooth.

Pour sauce into a large skillet (I used the same skillet I used for the shallot). Heat up the sauce over medium heat, add in the pasta and stir to combine until heated through. Add in salt and pepper to taste and ENJOY!

I followed the recipe with exclusion of the nutritional yeast, or its substitutes, and it was still great. It was better than I expected—you wouldn’t believe that this has tofu!

My family loved this! Nice creamy &amp; tasty pasta, we all enjoyed it very much :)
