TOFU RICOTTA

block (14 ounces.) tofu, soft, firm

yeast

mellow white miso

teaspoon garlic powder

teaspoon onion powder

juice of 1 lemon

To make tofu ricotta, add crumbled tofu, miso, nutritional yeast, garlic powder, onion powder, salt, pepper and lemon to the bowl of food processor or blender and blend until creamy, stopping to scrape down the sides as needed. Taste for spices adding anything you may like.

Store

Leftovers can be kept in the refrigerator, in a covered container, for up to 5 days.

i made as the recipe suggested but i found that the miso paste and the nutritional yeast were a bit too much.
i would suggest to start with half the amount and add as you go (;

Vegan Ricotta Cheese

14 oz package extra firm tofu (drained and pressed)

nutritional yeast

olive oil

salt

garlic garlic powder (omit for sweet dishes))

basil

soy milk

spinach ((or wilted spinach) thawed, drained and pressed)

Drain and press a container of extra firm tofu getting out as much liquid as possible.

Crumble the tofu into a large food processor.

Add 2 tbsp nutritional yeast, 1 tbsp olive oil, 1 tsp salt, a clove of garlic, and a handful of basil.  (Omit the garlic and basil if you are using the ricotta for a sweet dish).

Blend well for 2 minutes in a food processor.  Add a splash of soy milk if needed to thin out the ricotta to a smooth spreadable texture.

Use as you would ricotta in your favorite recipes like stuffed shells, lasagna, ravioli, and more.

Thaw the frozen spinach then put it in a colander, press out the water and then add it to the ricotta.  Stir the spinach in with a spoon if you want it to stay in bigger pieces or add the spinach to the food processor and blend if you want it more hidden in the ricotta.

Vegan Lasagna with Spinach

lasagna noodles ((standard size, enough for 3 layers))

½ large yellow onion, diced

¼ cup of unsweetened, plain soy milk

In a large pot of boiling salted water, cook the lasagna noodles according to the directions on the package. Drain the noodles, rinse with cold water to cool, and set aside.

Heat the olive oil in a large skillet over medium heat. Add the onion, zucchini, mushrooms, and garlic and saute for about 5 minutes, stirring occasionally until slightly softened. Turned off the heat. Stir in the spinach, cover the skillet, and set aside to allow the spinach to wilt.

Place the tofu, soy milk, lemon juice, basil, and salt in the bowl of a food processor and pulse to combine. Depending on the size of your food processor, you may need to push everything down with a spoon several times between pulses so all the tofu gets evenly crumbled. When you reach a crumbly ricotta­style consistency, spoon the mixture into a large bowl. Stir in the sautéed vegetables and spinach until evenly combined.

Preheat the oven to 350 degrees F (176 degrees C).

Spread 1 cup of the marinara sauce evenly across the bottom of a 9 × 13­inch baking dish. Follow this with a layer of 4 overlapping lasagna noodles, then a layer of half of the tofu mixture. Repeat with another 1 ½ cups of the marinara, another layer of noodles, and the second half of the tofu mixture. End with another 1 ½ cups of the marinara and a final layer of noodles, and spread the remaining 1 cup of marinara sauce on top, being sure to coat all the noodles.

Bake for 45 minutes. Garnish with the basil leaves (if using).

It&#39;s Fall and time for pumpkin everything! This sweet and savory pumpkin stuffed shells dish is easier to make than you&#39;d expect and tastes even better the next day.

Pumpkin Stuffed Shells With Sage Cream

large shells

extra firm tofu, (pressed)

oregano

Pepper

cornstarch

½ teaspoon of smoked paprika

nutmeg

1/16 teaspoon of ground cloves

maple syrup

¼ cup of chopped fresh sage

miso paste

garlic powder

plant-based milk

Cook shells according to package instructions, drain and set aside.

For the Tofu Ricotta: Add all tofu, nutritional yeast, basil, oregano, salt, pepper, cornstarch and water, and lemon juice together, combine, and set aside.

For the Pumpkin Filling: Combine the paprika, salt, nutmeg, cloves, pumpkin, and maple syrup, and set aside.

Fill shells with tofu ricotta and pumpkin fillings then put in the oven for 15 minutes at 350 degrees F. While that cooks, make your sage cream.

For the Sage Cashew Cream: Blend cashews, sage, miso paste, garlic powder, and plant-based milk until smooth and set aside.

Once shells are done, drizzle with sage cashew cream.
