Tomato Salad

tomatoes

red onion (, finely sliced)

basil

tbsp cider vinegar ((Note 3 for others))

2.5 tbsp extra virgin olive oil

tsp dijon mustard ((or other non spicy mustard))

salt and pepper

Shake Dressing in a jar. Taste and add more salt or pepper, or oil if you want less tart.

Cut Tomatoes - cut cherry tomatoes / grape tomatoes in half. If using large ones, cut into wedges then bite size pieces.

Place tomatoes, onion and basil in a bowl.

Pour over Dressing. Gently toss and serve immediately.

Tomato Cucumber Basil Salad

English/hothouse cucumber*

salt, plus more to taste

extra virgin olive oil

red wine vinegar (or sub balsamic)

garlic, crushed (optional)

tomatoes,

shallot, thinly sliced

(11 g) fresh basil leaves, torn or chopped

black pepper,

Smash the Cucumber: 

Cut the cucumber in half lengthwise and rest the flat side on a cutting board. Use a heavy rolling pin or the flat side of a knife to crush the cucumbers, then cut into 1/2&#8243; pieces or chunks. Transfer the cucumber to a fine mesh sieve and mix with a generous pinch of salt; let sit for 15 to 20 minutes, or while you prepare the remaining ingredients.

Make the Dressing: 

add the oil, vinegar, garlic clove, and 1/2 teaspoon of salt to a small jar; seal and shake until emulsified, then set aside.

Combine: 

add the chopped tomatoes to a large bowl, then add in the cucumbers, shallot, and basil. Top with the dressing and black pepper, to taste. Mix well, then place in the fridge for 15 minutes to chill.

Serve: 

season with additional salt and pepper to taste, if necessary. Serve cold; store leftovers in the fridge in an airtight container for up to 3 days.

Add the tomatoes, onion, and fresh basil to a large salad bowl. Gently mix to combine.

In a separate bowl whisk together the olive oil, balsamic vinaigrette, garlic, salt, and pepper.

Combine the tomatoes with the vinaigrette. Allow salad to rest for 5-10 minutes at room temperature to allow flavors to marinate together. Enjoy!

Thank you for a quick yummy salad!!! We couldn't stop eating it...going on our favorite list. I did add some chopped mini cucumber and grated parmesan cheese. Next time will add some fresh Mozzarella. But it is excellent as is!

I made several of your salads already. Living on a 13 acre's with a large farmhouse we have fresh veggies and herbs on our lower level. Plenty of sunlight there as on the main level. Having a root spot on the far end of the lower level lets us store fall root veggies all year round. My husband is a retied Master Chef ( 28 ) years at Clint Eastwoods Tennis Ranch in Carmel Valley, Ca. So he cooks meals and I do anything with Salads- Baking Everything in my Baking Station area- and he loves all my anything Casseroles I learned from my Great-Grandmother- and Grandmother who raised me. Having fresh herbs all year round up here on a mountain on the boarder of Pa- NY is a blessing. We don't buy anything in cans- boxed. All from scratch when we can. Then you must be using the wrong balsamic. I use Belazu 1.34. It tastes great, especially with tomatoes
