In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt.  Stir in the egg, oil, and milk, followed by the grated cheese.  The batter will be very thick.

Combine the chopped garlic, tomatoes, basil, and oregano in a food processor.  Using a series of 10-15 one-second pulses, chop the tomatoes and garlic until no large pieces remain, but mixture is not completely smooth.

Fold the tomato and garlic mixture into the batter.  Resulting batter will still be thick, but should be fully moist.  If dry patches of flour remain, stir in an additional 2-3 tablespoons of milk.  If batter is quite wet, stir in an additional 2-3 tablespoons of flour.

In a large bowl whisk together the flour, baking powder, oregano, black pepper and salt.  Add melted butter, eggs, sour cream, buttermilk, mayonnaise, chopped onion and tomatoes.  Mix well with a spoon.  Fold in cheese.

Spray a 9 x 5 bread pan with cooking spray.  Add your bread mixture.  Bake in preheated 350 degree oven 60 to 65 minutes checking to see if bread is done since ovens vary.

Preheat the oven to 375°.

Place bread on a baking sheet and place in the oven to lightly toast for about 5 minutes, or until slightly crisp on top and barely golden; remove from the oven.

While still hot, lightly rub the garlic cloves over the surface.

Then rub the tomato halves over the tops of the toasted bread.

Sprinkle with salt and pepper and drizzle with extra virgin olive oil; serve immediately while still warm.

I’ve never heard of this bread so I am thrilled to have tried and loved it. My bread slices were on the thinner side so I had no trouble with it breaking apart. Also I never knew garlic would melt on hot bread so that was cool lol the tomato made a nice color and the taste Omg. I will sub this quite a bit for garlic bread as this was so much fresher. This No-Knead Sun Dried Tomato Bread has a crunchy and crispy crust on the outside, an airy and fluffy crumb on the inside, and a ton of chewy sun dried tomatoes throughout. Vegan.

No-Knead Sun Dried Tomato Bread

all-purpose flour (plus more for dusting)

Italian seasoning blend

garlic powder

instant yeast

+ 2 tablespoons room temperature water (divided)

grated parmesan (optional 30 grams)

Prep: Add the flour to a large mixing bowl along with the Italian seasoning, garlic powder, salt, and yeast; whisk well. Form a well in the center of the dough, then pour in 1 1/2 cups of water and mix with a wooden spoon. Once the dough starts to thicken (there will still be some flour left), add in the tomatoes and parmesan (if using) and mix well, until all of the flour is absorbed. The dough should be thick and lumpy, but if it is too dry, add in the extra 2 tablespoons of water. Cover the bowl with plastic wrap (I like to use a rubber band to seal it tight) then set aside and let rest for 12 to 18 hours, until the dough looks loose and has doubled in size.

Preheat: Preheat the oven to 450F; once it’s pre-heated, add a 6 quart (or similar sized) coated dutch oven or cast iron pot to the oven and allow it to preheat for 30 minutes. Set a sheet of parchment paper aside.

Shape the Dough: Right before baking, use a spatula to transfer the dough onto a well-floured surface. Dust your hands with flour as well and pull the bottom edges of the dough ball towards the center of the top, pinching well to “shape” it – remember, no kneading! Repeat several times to get a tight ball, then flip the ball onto the sheet of parchment paper so the pinched side is on the bottom. I like to do this right before taking the cast iron out of the oven.

Bake: Carefully remove the preheated dutch oven, place the parchment paper (and dough) in it, then cover and return to the oven. Bake for 30 minutes covered, then remove the lid and bake for an extra 18 to 20 minutes to get a nice and crispy crust.

Serve: Remove from the oven and transfer to a cooling rack. Let cool before slicing. Store leftovers in an airtight container at room temperature for up to 5 days, or pre-slice your loaf and store in the freezer for up to 2 months.
