Tomato chutney is a spicy South Indian condiment made with tomatoes, garlic &amp; chilies. It goes well with any breakfasts, snacks &amp; even as a spread for your sandwiches and wraps. 

Tomato chutney recipe

tomatoes ((1½ cups chopped))

onion ((½ cup cubed, optional))

chana dal ((bengal gram) or 2 tbsp peanuts)

urad dal ((skinned black gram) (optional))

red chilies (or green chillies

garlic (cloves (or ½ inch ginger))

cumin seeds ((jeera))

salt ((adjust

turmeric

curry leaves

mustard seeds

asafoetida ((hing))

red chili ((broken

Heat a pan with 1 tablespoon oil. 

On a medium flame, roast chana dal &amp; urad dal (or peanuts) until aromatic &amp; deep golden. 

Add half teaspoon cumin seeds &amp; saute for a minute. Remove to a plate &amp; set aside to cool completely.

Next add 4 to 6 red chilies and fry until they turn crisp. 

Then add 1 cubed onion &amp; 2 garlic cloves.

Fry them until a sweet aroma comes out from the onions. This takes about 3 to 5 mins.&nbsp;

When the onions turn golden add 3 large chopped tomatoes, ¼ teaspoon salt &amp; 1/8 teaspoon turmeric.&nbsp;

Saute until soft &amp; mushy. The raw smell of onions and tomatoes must go away completely.

Cool this and blend until smooth. Taste the chutney and add more salt if needed.

You may need to pour little water if using peanuts.

If you like thick chutney &amp; the tomatoes are pulpy you can also skip water completely.

How to make tomato chutney

If you are on a low fat diet you can also skip the tempering. Heat 1 tsp oil in a pan.&nbsp;

Add ¼ tsp mustard seeds and ¼ tsp urad dal.

When the dal turns golden, fry 1 sprig curry leaves and 1 broken red chili till the leaves turn crisp.&nbsp;

Add hing &amp; onion tomato chutney to the pan and mix. Or pour this tempering to the tomato chutney.

Serve with idli, dosa and pesarattu. You can also refrigerate the chutney &amp; use.

Tomato Onion Chutney for Dosa and Idli | South Indian Style Recipe

Taking the best from both Indian and British chutneys, this Anglo-Indian is the easiest, quickest and tastiest tomato chutney you’ll find on either continent.

Chop the garlic cloves and the red onions. In a deep pan pour the oil, add the garlic and onions and fry on a low-medium heat until transparent.

In the meantime, cut the ripe tomatoes into small pieces. Add to the pan and fry for two minutes on high heat. Add the raisins, the white vinegar, the brown sugar and the spices: sweet paprika, chopped chilli peppers and the cardamom seeds. Simmer all the ingredients into a medium heat, uncovered for 20 minutes or until thickened.

Blend all in a food processor or with a hand blender. Easy.

Optional:

A delicious tomato chutney recipe that&#39;s basically a ketchup substitute, full of complex flavors and a little heat. Everybody who tries it agrees it is amazing - be prepared to give lots away!

Addictive Tomato Chutney Recipe

tomatoes, (peeled,

garlic ((about a medium sized head))

brown sugar, ((LOWER SUGAR VERSION: 1/2 cup))

white sugar ((OMIT FOR LOWER SUGAR AND SUB 1/4 cup honey))

apple cider vinegar

salt

lime, (zested and juiced)

ginger

hot pepper flakes (or to taste**)

cumin

black pepper

Prep the tomatoes, chopping either by hand or with a food processor: Core and quarter the tomatoes and add them - unpeeled - in batches to a food processor, whirring until evenly chopped (fairly fine). Alternately, core, peel and chop the tomatoes by hand. You should have 7 cups of chopped/pureed tomatoes.

Combine the tomatoes and all the remaining ingredients in a heavy, nonreactive 4-6 quart pot (if doubling the recipe, use an 8 to 12-quart stockpot).

Bring to a boil over high heat, then lower heat and cook at a low simmer (just a few bubbles here and there) for 1-1/2 to 2 hours until thickened.*** Stir often as it thickens to prevent scorching.

To Can: Prepare water-bath canner, lids and jars. (Refer to this complete water-bath tutorial here.)

Ladle the chutney into 1/2 pint canning jars leaving 1/4&quot; headspace and attach the two-piece canning lids. Transfer to canner as you fill and seal.

Once all the jars are added, bring the canner to a boil for 10 minutes (both half-pints and pints), adjusting heat as needed to keep a medium boil (not too hard).

When timer goes off, turn off burner, remove lid and let jars sit for 5 minutes before removing the jars to a towel-lined surface to cool for 12 to 24 hours. Check seals and store in a dark, cool place.

To Freeze: Ladle into freezer-safe containers (canning jars are okay to freeze), label and store in the freezer up to a year.

Tomato Chokha or Bharata is a simple, zestful, smoky relish, made with fire-roasted tomatoes, fresh herbs, and mustard oil.

TOMATO CHOKHA

Rinse the tomatoes well, pat dry the tomatoes with a clean kitchen or paper towel. Follow one of the methods discussed below to roast the veggies.

You will need Mealthy crisplid,  tongsIMPORTANT: Completely UNPLUG the Instant Pot unit, before proceeding with this recipe.

Using a pastry brush, grease the crispy basket with some cooking oil. Arrange the tomatoes and garlic in the crispy basket. Using a pastry brush, apply some oil over the tomatoes.

Depending upon the size of the tomatoes, arrange the tomatoes in the crispy basket. I could fit 4 large tomatoes.

Place the trivet (that comes with a crisp lid) inside the inner pot of the Instant Pot. Place the crispy basket on top of the trivet. Now place the mealthy crisp lid on top of the inner pot. Plug the crisp lid and lower the handle.

Roast the tomatoes at 425 degrees Fahrenheit for 20-25 minutes, check halfway through.

Check if the tomatoes are done. The tomatoes will be soft and slightly charred. Insert a clean knife in the center of the tomatoes, if it goes through it without any resistance the tomatoes are cooked through. If required add a few more minutes of cooking time.Note: Please use timing as a guideline. Depending upon the size of the tomatoes, the cooking time will vary. 

Remove the crispy basket and allow the tomatoes to cool down for a few minutes.

AIR FRYER ROASTED TOMATOES

You will need 9*13 inches baking sheet, tongs

Preheat the oven at BROIL or 425 degree Fahrenheit.

Arrange the tomatoes and garlic on a 9*13 inches baking sheet. Brush the tomatoes with some oil.

Place the baking sheet on the top shelf in the oven. Roast the tomatoes for 20-25 minutes, check halfway through.

Check if the tomatoes are done. The tomatoes will be soft and slightly charred. Insert a clean knife in the center of the tomatoes, if it goes through it without any resistance the tomatoes are cooked through. If required add a few more minutes of cooking time.Note: Please use timing as a guideline. Depending upon the size of the tomatoes, and also different ovens have different temperature settings, the cooking time will vary. 

Remove the tomatoes from the oven, and let them cool down for a few minutes. 

OVEN ROASTED TOMATOES

You will need roti jali, tongs

Place a roti jali on a stovetop. On medium heat, roast the tomatoes and garlic, until tomatoes are soft and charred.

Turn the tomatoes every few minutes for even roasting. 

Check if the tomatoes are done. The tomatoes will be soft and slightly charred. Insert a clean knife in the center of the tomatoes, if it goes through it without any resistance the tomatoes are cooked through. If required add a few more minutes of cooking time.

Remove from heat. Let tomatoes cool down for a few minutes. 

STOVETOP ROASTED TOMATOES

Using one of the methods discussed earlier, roast the tomatoes.

Once the tomatoes are cool, remove the skin the tomatoes, and place the tomatoes in a mixing bowl. Squeeze the roasted garlic from the garlic pods and add it to the bowl.

Using a potato masher, mash the tomatoes to the desired consistency. I prefer a mix of small and large chunks to add texture to the chokha.Note: You can use a handheld blender or a food processor, pulse a few times, or until desired consistency.

Next add raw onions (optional), green chili as per taste, grated ginger, green garlic (optional), and a handful of fresh cilantro. Some fresh lemon juice, and Pink Himalayan Salt,

SKIP THIS STEP IF ADDING TEMPERING – Add mustard oil or for milder flavor use olive oil, mix well.

HOW TO MAKE TOMATO CHOKHA (BHARTA)

Heat some mustard oil in a pan. Once the oil is hot, add panch puran spice mix, dried whole red chili, and asafoetida. Turn OFF the heat. Add the tempering over tomato chokha. Mix well. 

Garnish with some fresh cilantro and serve Tomato Chokha with some avocado litti, baingan chokha, and Dhaba (restaurant) style dal fry, green garlic cilantro chutney, jaggery, and some salad. YUM!!!

FOR TEMPERING (OPTIONAL)

Recipe video above. We can do better than ketchup! This is essentially a tomato chutney but far less sweet and doesn&#039;t include ginger, chilli or other spices you often find in chutney (which I didn&#039;t want for a burger sauce). Use for your burger of choice and anything you&#039;d ordinarily dollop/smear chutney on - see in post for extensive suggestion.Makes 1 1/2 cups, enough to generously slather onto 5 to 6 burgers (But I&#039;m quite greedy).

Quick tomato chutney sauce for burgers

800 g / 28 oz canned tomato (, crushed

Worcestershire sauce

tbsp apple cider vinegar

garlic powder

onion powder

tsp smoked paprika

mustard powder

tsp celery salt

tsp cooking/kosher salt

tsp black pepper

Mix all the ingredients in a medium saucepan.

Simmer Bring to a simmer over medium heat then lower heat to medium low so it&#39;s simmering gently.

Cook for 25 minutes, stirring regularly, until it reduces down and is thick enough so you can draw a path across the base of the saucepan (see video or step photos).

Cool &amp; slather: Transfer into a bowl. For use on burgers, cool then slather. Browse my Burger collection for options! If using to dollop or dip for any number of the other suggested uses in the post, use warm or cooled!

An easy tomato chutney that&#039;s perfect served with cheese, cold or hot meats or just on a cracker.

cornflour ((plus enough extra vinegar to make a runny paste) – if required to thicken chutney)

Roughly chop tomatoes and onions.

Peel and core apples and roughly chop.

Place all ingredients (except cornflour) in a large saucepan and heat gently until sugar dissolves.

Increase heat until mixture starts to boil and boil gently, uncovered and stirring occasionally, for approximately 1 hour and 15 minutes or until most of the liquid has evaporated.

Add enough extra vinegar to the cornflour to reach a runny paste consistency. Add to the chutney and continue to boil for another 1-2 minutes or until mixture is thicker and glossy.

Pour hot mixture into sterilised jars and seal immediately.
