Two cups rice? I made this recipe and the moisture was gone before the rice cooked through.  I think another cup of liquid is needed or reduce the rice to one cup.  I ended up quickly microwaving a cup of water to add.. it came out a bit sticky.  Otherwise it’s tasty!  I like using fresh ingredients and this recipe certainly does the trick!  Might swap the garlic powder for fresh next time too. Will make again.

The amount of liquid in this recipe to the amount of rice is totally incorrect! One needs to double the amount of chicken broth, and the cooking time to even get close to cooked rice. The flavor was really good however. I also added about 2 TBS tomato paste to balance out the additional chicken broth I added.

Just made it. We loved it! Substituted ketchup for tomato sauce and added basil, didn't have garlic salt, used avacado oil instead of olive oil, didn't have vegetable broth, used vegetable oxo and 2 cups water. We'll use less ketchup next time. And a little more water.

Definitely only use 1 cup rice. Needs to cook for about 25 min. A little on the tomatoey side but otherwise came out well

Excellent recipe. I made this twice now according to the recipe, only difference is I used veggie stock instead of chicken and added minced garlic instead of the garlic powder. I would like to stress that for white rice the ratio is 1 cup of rice to 1.5 cups of liquid! Brown rice is different and requires more liquid. Be mindful of the type of rice you’re using. Also, I used 1 cup of purreed tomatoes rather than tomato sauce, but either way the tomato sauce serves as 1 cup of your liquid! If you omit the tomato sauce you MUST put an extra cup of broth or water. Otherwise your rice will come out as “pebbles” like some of the other reviews state. Rice is not hard to cook you just need to have the right ratio of rice to water and a little patience.

Was very easy and tasty. Didn’t need to adjust or add anything. Shared it with my children.

I’m confused - the ingredients list tomato sauce, but the directions say tomato purée . . . Is it either one?  I can’t wait to try this recipe!

I love this recipe ! I have not made homemade Spanish rice in years because I lost my recipe. This is the closest I have come to it. I have a question, since it made so much (I should have cut in 1/2) can you freeze leftover of this Spanish rice ? Thanks

I made this a few weeks ago and it was perfect. Followed directions and it turned out exactly as I had hoped. Was worried with all the criticism. I plan on making it again tonight and I can’t wait.

This rice did not have enough liquid for the rice. Definitely added at least 1.5 cups water/chicken stock. Real bummer since reviving undercooked rice is very difficult and such a waste of food.

Tomato rice recipe

Add 1½ cup rice to a bowl and rinse it well a few times until the water runs clear. Pour fresh water and soak the rice for 30 mins. Then drain to a colander &amp; set aside.

Heat a pressure cooker or a pot with 2 tbsps ghee or oil.

Add cashews and fry until golden. Remove to a plate &amp; set aside.

Saute 3 cloves, 1 inch cinnamon piece, ¾ tsp cumin, 3 green cardamoms and 1 small bay leaf.

When they begin to crackle, add 1 finely chopped onion and 1 slit green chili.

Saute until the onions turn golden. Next saute 1 tbsp ginger garlic paste until a nice aroma comes out for 30 seconds. 

Next add in 1 cup tomatoes, salt as needed and ¼ tsp turmeric.

Saute for 2 to 3 minutes. Cover &amp; cook until the tomatoes break down &amp; turn mushy.

Add ½ to 1 tsp red chili powder and ¾ to 1 tsp garam masala powder. 

Mix and cook until the tomato masala turns completely soft and mushy.

At this stage the masala leaves the sides of the pan. Pour water &amp; stir well. Taste the water and add more salt if needed.

Bring the water to a rolling boil. Add the drained rice.

Cook until the water has almost absorbed. When the rice is still soggy, lower the flame completely and cover with a lid until the tomato rice is cooked completely.

Sprinkle chopped coriander leaves and squeeze in some lemon juice. Tomato rice is ready to serve hot or warm with a raita. Garnish with  cashews.

Making tomato rice in a pot

Stir and cover with the lid. Cook on a medium high heat. Allow to whistle once. When the pressure goes down, open the lid. Fluff up the tomato rice.

Making tomato rice in a pressure cooker

Soak rice for 30 mins. Press SAUTE button &amp; pour oil to the inner pot of the instant pot. Then fry cashews until golden and remove them. Stir in the whole spices and then add onions.

Saute them until transparent. Add the ginger garlic paste &amp; saute for 30 seconds. Add tomatoes and salt. Saute them until the tomatoes break down and turn mushy.

Add chilli powder, garam masala &amp; turmeric. Saute for just 1 to 2 mins untilthe moisture from tomatoes almost dries up.

Next pour 1¾ cups + 2 tbsp water. Press CANCEL button. Scrape off any bits of spices stuck at the bottom. This prevents from getting a burn notice.

Stir &amp; check the salt. Add more if needed. Then add the rice. Then secure the lid. Set the steam release handle/ value to sealing. Press PRESSURE COOK button (highpressure) for 5 mins.

When the tomato rice is done, Instant pot beeps. Wait for 2 mins &amp; release the pressure manually with the help of a spoon by moving the steam release handle to venting from sealing. If you like softer rice then let the pressure release naturally for 7 to 8 mins. Then release the rest manually.

Sprinkle coriander leaves &amp; fluff up the tomato rice with a fork. Garnish with cashews.

Tomato rice is a simple Indian one pot dish made with spices, ripe tomatoes and rice.  There are a few different ways of making tomato rice. This recipe uses whole spices like cinnamon, cardamom and cloves which add flavor to the dish.

I have used bay leaf here, it can be replaced with fresh curry leaves. Do adjust the amount of water as needed since that depends on the quality & variety of rice used. I have used aged basmati rice in the video.

This quick, delicious Tomato Rice recipe is a favorite dish from the Tamil Nadu state of South India. Also known as Thakkali Sadam, this one pot wonder is tasty, healthy and perfect to pack in a tiffin for lunch on the go.

Tomato Rice (Thakkali Sadam)

basmati rice (or any regular rice)

tomatoes tomatoes

onions (or 1 medium-sized onion)

green chilli (or serrano pepper

mustard seeds

½ inch true cinnamon

green cardamoms

cloves

curry leaves ((medium-sized))

turmeric powder

red chilli powder

black pepper powder (or crushed black pepper)

coriander powder ((ground coriander))

cumin powder ((ground cumin))

mint leaves

coriander leaves

water (or add as required)

oil oil

Rinse basmati rice or any regular rice for a couple of times in water.

Then soak the rice in water for 20 to 30 minutes. Later drain the rice and keep aside.

Chop the tomatoes, onions and green chillies finely. Peel and crush the ginger-garlic in a mortar pestle. Also, chop the mint and coriander leaves

Keep aside all the spices required for the rice.

Preparation

In a 3 litre pressure cooker, heat the oil. Keep the flame to a low and add mustard seeds and crackle them. Then add fenugreek seeds and just lightly fry for a couple of seconds without burning them.

Then add finely chopped onions and cinnamon, cardamoms and cloves.

Stir and sauté until the onions turn translucent and soften.

Add the ginger-garlic paste, chopped green chilies and curry leaves.

Stir and sauté for some seconds until the raw aroma of ginger-garlic goes away

Now add chopped mint leaves and coriander leaves.

Stir and saute for a minute.

Keep heat to a low or switch off the heat. Add the finely chopped tomatoes and turmeric powder, red chilli powder, black pepper powder or crushed black pepper, coriander powder and cumin powder.

Mix very well and sauté the tomatoes until they soften and become pulpy with oil releasing from the sides.

Sautéing onions, tomatoes, spices

Add the soaked rice. Gently mix the rice with the tomato mixture very well. Sauté for a minute.

Add 1.75 cups water. For a more softer consistency in the rice, you can also add 2 cups water.

Season with salt as per taste.

Cover and pressure cook tomato rice for 2 whistles on medium flame or about 10 to 11 minutes. To get a softer rice, you can also pressure cook for 3 whistles.

When the pressure settles down on its own. Then remove the lid and gently fluff the tomato rice.

Serve tomato rice with appalams or chips or with a side raita.

Recipe video above. This is a copycat of the Tomato Basil Rice convenience packs sold at supermarkets. It's a seasoned rice flavoured enough that you can eat it plain. Ideal served on the side of many mains! Makes 3 cups of cooked rice.

Tomato Basil Rice

olive oil ((or butter))

garlic (, finely chopped)

brown onion (, finely chopped)

(180 grams) long grain white rice

tomato paste

tsp paprika (, sweet or normal (not smoked))

tsp sugar ((any))

Heat oil in a large saucepan over medium heat. Add garlic and onion, cook until translucent, 2 - 3 minutes. Add basil and cook for 20 seconds - don't let it burn.

Add remaining ingredients except basil. Mix until tomato paste is dissolved.&nbsp;

Crush basil sprig in hand, drop on surface then push in (leave on surface, don't stir).

Cover and bring to simmer, then immediately turn down heat to medium low (or low if stove is strong) and cook for 15 minutes or until liquid is fully absorbed - tilt saucepan to check.&nbsp;

Remove from heat and set aside, covered, for 10 minutes.

Remove basil sprig. Fluff with fork, taste for salt. Then leave to stand for another 5 minutes, uncovered. Stir through fresh basil. Serve immediately.

Mince the garlic and finely dice the onion. Add the onion, garlic, and cooking oil to a saucepot and sauté over medium heat until the onions are soft and translucent.

Add the rice, chili powder, and cumin to the pot. Continue to stir and cook for a couple of minutes more to toast the rice and spices.

Add the diced tomatoes (with juices), tomato paste, and broth to the pot. Stir to combine and dissolve and spices that are stuck to the bottom.

Place a lid on the pot, turn the heat up to high, and let the broth come up to a full boil. Once boiling, turn the heat down to low (or just above low) to bring the broth down to a gentle simmer.

Let the rice gently simmer for 20 minutes without lifting the lid or stirring. After 20 minutes, remove the pot from the heat, and let the rice rest for five minutes without lifting the lid.

After resting, fluff the rice with a fork to redistribute the tomatoes throughout. Serve hot!

Mexican Red Rice (Homemade Arroz Rojo)

Rinse rice thoroughly to remove starch. Set aside.

Saute diced onion and garlic in butter for 3-4 minutes, stirring occasionally. Add tomato paste, cumin, cayenne and salt, cooking for 2 minutes. Add rice, tossing in the tomato-ey butter for another 2-3 minutes.

Add stock, stirring to dissolve the tomato paste into the stock. Taste the broth - it should be a little too salty. Once the stock comes up to a boil, cover the pot and reduce the heat to low, cooking for 15 minutes, until all of the stock has been absorbed. Remove the pot from the heat, but leave it covered for an additional 10 minutes.

Once finished steaming, add in diced cilantro and toss. Serve warm.
