How to Cook Top Sirloin Steak

(1-pound) top-sirloin steak,

Morton kosher salt

Preheat a large cast-iron skillet over high for 5 minutes.

Pat steak dry with paper towels, then season  with 1 teaspoon salt and ½ teaspoon pepper.

Reduce heat to medium-high. Place steak in skillet. Cook until charred and beads of moisture begin to form around edges of steak, about 3 minutes. Flip and continue cooking until an instant-read thermometer inserted in the center registers 125ºF for medium-rare, about 3 more minutes. For medium cook to an internal temperature is 135ºF, about 4 minutes per side.

Transfer steak to a clean plate, tent loosely with foil or parchment paper and let rest 10 minutes.

When ready to serve, slice thinly against the grain and enjoy.

Stove top

Turn all burners to high, cover, and let grill preheat for about 15 minutes. Brush grill grate clean.

When ready to cook, keep primary burner on high and turn other burners off.

Place steak over hot part of grill and cook until beginning to char and beads of moisture appear on edges of steak, 5–6 minutes. Flip steak and continue to cook until an instant-read thermometer inserted in the center registers 125ºF for medium-rare, about 5 minutes.

Gas Grill

Open bottom vent completely.

Light large chimney starter filled with charcoal briquettes (about 6 quarts). Once top of coals are partially covered with ash, pour evenly over half of grill.

Set cooking grate in place, cover, and open lid vent completely.

Let grill preheat, about 5 minutes. Brush grate clean.

Place steak over hot part of grill (over coals) and cook until beginning to char and beads of moisture appear on edges of meat, 5–6 minutes. Flip steak and continue to cook until charred and an instant-read thermometer inserted in the center registers 125ºF for medium-rare, about 5 minutes.

Charcoal Grill

Place steak in air fryer basket of a 6-quart air-fryer and cook at 400ºF until steak is lightly browned and an instant-read thermometer inserted in the center registers 125ºF for medium-rare or 135ºF for medium, about 14 minutes, flipping halfway through cooking.

Pan Seared Top Sirloin Steak Recipe

Remove the steaks from the packaging and pat dry if needed.

Tie with butcher's twine along the circumference of the steak to help with even cooking.

Season the steaks liberally on all sides with salt. Set on a wire rack on a baking sheet.

Place them in the fridge for 2 to 4 hours.

Prep the steaks:

Preheat a large cast iron skillet over medium-high heat. Add the oil and 1 tbsp butter and swirl to coat the pan.

When the butter has finished frothing, add the steaks and let them sit for 2 to 3 minutes without touching them to form a crust.

Flip the steaks and top them with the remaining butter, divided evenly over the surface of each.

Reduce the heat to medium and let the steaks cook 3 to 4 minutes longer, until they reach an internal temperature of of 125 degrees F.

Remove from heat and rest, tented with foil 5 minutes.

Meanwhile, make the pan sauce if desired.

Remove the twine from the steaks and serve hot with crushed black pepper and freshly minced parsley.

beef Top Sirloin Steak Boneless, cut 1 inch thick (1 pound)

Cut beef Top Sirloin Steak lengthwise in half, then crosswise into 1/8 to 1/4-inch thick strips. Combine beef, pepper and 1/2 teaspoon seasoning&#160;from 1 ramen noodle package. Reserve remaining seasoning from packet for broth; discard second seasoning packet. 

Heat 1 teaspoon oil in large nonstick skillet over medium-high heat until hot. Stir-fry&#160;half of beef 1 to 2 minutes or until outside surface of beef is no longer pink. Remove from skillet. Repeat with remaining 1 teaspoon oil and beef. Remove from skillet; keep warm. 

Combine water,&#160;onion, garlic, ginger and reserved seasoning from packet in same skillet. Bring to a boil; reduce heat and simmer 2 minutes. Add noodles. Bring liquid to a boil; reduce heat and cook according to package directions or until noodles are al dente, about 3 minutes. Stir in beef; add miso, toppings and garnishes, as desired.
