Bar pies are the pizza for those who love thin crusts, and while making them from scratch is doable, sometimes you just need that pizza NOW. Far from being a compromise, tortilla-based pizzas are in fact the ideal quick and easy-way to make a super-crisp, extra-thin crust for a full-on pizza experience in under 15 minutes from start to finish.

Extra-Crispy Bar-Style Tortilla Pizza Recipe

extra-virgin olive oil,

(10-inch) flour tortilla

store-bought pizza sauce

milk mozzarella cheese

grated Parmesan cheese, divided

basil leaves, roughly torn

Kosher salt

Adjust oven rack to 6 to 8 inches below broiler element and preheat broiler to high. Heat oil in a large cast iron skillet over high heat until shimmering. Reduce heat to medium-low and wipe out excess oil with a paper towel.

Place tortilla in skillet with the rougher textured-side facing down. Spread sauce evenly over tortilla all the way to the edges. Spread mozzarella and half of Parmesan evenly over tortilla all the way to the edges. Season lightly with salt. Scatter with basil and drizzle with olive oil.

Place skillet under broiler and broil until cheese is melted and starting to brown in spots, 2 to 4 minutes. Remove from oven and sprinkle with remaining Parmesan. Using a small metal spatula, gently pry edges of pizza, releasing the cheese from the skillet. Peek under bottom. If more crispness is desired, place skillet over medium heat and cook, swirling pizza and peeking occasionally, until desired crispness is achieved. Slide pizza out onto a cutting board. Cut and serve immediately.

Tortilla Pizzas

whole wheat tortilla (or whole wheat pita bread)

sauce (marinara, pesto, olive oil

shredded/crumbled cheese (mozzarella, cheddar, goat, feta)

Toppings (go wild!)

Preheat the oven to 425 degrees Fahrenheit.

Place the tortilla in a 12-inch cast iron pan or baking sheet (max crispiness option: place the tortilla on a stainless steel, oven-safe cooling rack, and place that on the baking sheet).

Spread sauce evenly across the tortilla, leaving 1/2 inch around the edges. Sprinkle with cheese and toppings.

Bake until the cheese is golden and bubbling (no sooner!) and the edges of the tortilla are lightly browned, about 10 to 14 minutes. Let the pizza cool for a few minutes before slicing.

i used a cookie sheet === preheated to 425,  sprayed pan and bottom of tortilla with olive oil--- 

baked 5-8 min -- turned heat down to 350
baked 10-15 min

very crispy and  nice brown cheese

Thanks for this wonderful suggestion.  I had all of the ingredients right on hand.  I put my cast iron skillet on my gas grill--it worked wonderfully.  I didn't want to heat up the kitchen.  Just the thing for a Friday night.

I preheated my tortillas on a baking sheet for 4 minutes without any toppings, then topped, cooked for 14 minutes (my oven is not well insulated) and they were juuuuust perfect. (really, 30 seconds more would have burned the edges). I did use small tortillas...possibly 6 inch. they were really tiny, I have no idea what they would be made for that they need to be that small. :-/

Used a whole wheat tortilla today to make these. I used salsa as my sauce (I know, weird, right? It's the only thing I had in the house), grated Greek graviera as my cheese (so delicious) and topped it with a little olive oil and some basil. The best thing I've ever had. I'm gonna make my own pizza sauce and use pita bread next time I try this and see how it comes out.

So glad I found this. It was ridiculously easy and way cheaper than takeout.  I used a baking sheet and it still came out crispy.  Unfortunately the only thing I had on hand was canned spaghetti sauce &amp; canned grated parmesan/romano but it just made me excited to plan out my next pizza.  I'm determined to always have tortillas on hand now.

I whipped this up tonight, and it was good, but I think user error kept it from being great. I preheated the oven to 425 and used a cast iron skillet for 12 minutes, but it wasn't very crispy. Should I have left it in longer? Thanks

I was delighted to find your blog because I had ended up with some Ortega soft taco shells that I didn't want to use for tacos and thought that perhaps they might make the kind of thin pizza crust that I can't find easily. Not having a cast iron pan, I simply used the oven rack and they came out fine, except that the crust was just not as crispy as I would have liked. It was okay, but not perfecto. Would this be due to the kind of shell that I was using? Would whole wheat (or some other kind) give me a crispier crust?  Would a cast iron pan do better? The shells were 6-1/2 inches in diameter and were just a perfect size. I used some Ragu pizza sauce, packaged shredded mozzarella cheese, some Dietz &amp; Watson skinny pepperoni (hot dog size) and onions. Pre-heated oven to 400, used the center rack, and waited until the cheese bubbled and the edges were golden brown. Delicious!

I just tried this and I will never use another pizza crust again.  It was so flaky and crisp.  The highlight was on the toppings and not on the bread.

Great idea :)  Tried these for supper and needed to make several at once so I used my lodge cast iron griddles.  Was able to do 2 on each.  Everyone loved being given able to make their own !  I can see doing this for a quick lunch, a quite night home alone....or cut up as appetizers for game night !!!

I really can't believe it never occurred to me to use my cast iron skillet to cook these! I've mad three in the last week since finding this recipe!  It's great because the tortillas are much lower carb then other options, and my toddler doesn't care as long as the name contains the word 'pizza.' These are fabulous, and never soggy. Also, I had no issues making two in a row with the pan (obviously) still very hot.  The bottom didn't burn on the second one.

trying tonight! cleaning out fridge so might have with bacon,fried bologna,and eggs.and store bought hash brown patties(trashy ,but love them).One pizza with kalamata olives,one with alloutte cheese and mozzarella.Thanks so much for such an easy recipe!!!

BTW the cast iron skillets are the only thing we cook with!! Even the 20 year olds are too foody to cook with anything else.They buy them for each other

Air Fryer Tortilla Pizza

8 inch flour tortilla

pizza sauce

mozzarella cheese

Italian seasoning

Place the flour tortilla into the air fryer basket and brush the outer edges with olive oil.

Spread pizza sauce onto the tortilla one inch from the edge then top with pepperoni, then mozzarella cheese, then sprinkle with Italian seasoning.

Cook in air fryer at 400 degrees for 3 minutes or until pizza is brown and bubbly. Be sure to check it after 1 minute to ensure the pizza does not overcook.

Remove pizza from air fryer, let cool, and slice into triangles.

Serve and enjoy!

Mini Halloween Pizzas will delight your friends and family, young and old. They&#39;re easy and fun to make with flour tortillas for the crust and decorations made with sliced cheeses and black olives.

Easy Mini Halloween Pizzas

whole tomatoes, drained

garlic,

white wine vinegar

oregano

Salt and fpreshly ground black pepper

flour tortillas (See Tip 2)

Mozzarella cheese

Cheddar cheese

black olives

Tablespoons mozzarella cheese

Place drained tomatoes in bowl of food processor fitted with steel blade. Add garlic, olive oil, vinegar, and oregano; process until smooth, about 30 seconds. Season to taste with salt and freshly ground black pepper. Yield: 2 cups.

Pizza Sauce

Preheat oven to 400°F. Line a large rimmed baking sheet with non-stick aluminum foil. Set aside.

Cut six 4 1/2 to 5-inch circles from flour tortillas. Brush both sides with olive oil. Cook in skillet over medium heat until golden brown on both sides, abut 2 to 3 minutes per side. Place browned tortillas on prepared baking sheet.

Cut three baby ghosts from one slice of mozzarella cheese. Cut friendly ghost from another slice of mozzarella cheese. Cut Pac Man ghost from slice of mozzarella cheese using egg shaped cookie cutter. Using kitchen shears, cut zigzag pattern from bottom. Cut thin strips from slice of mozzarella cheese for the mummy pizza. Cut Jack O&#39;Lantern from slice of cheddar cheese.

Make spooky spider by slicing a black olive in half lengthwise. Cut 8 legs from sliced black olive. Cut 4 round eyes from sliced black olives. Cut 8 small eyes for baby and friendly ghosts and 1 smile from black olives. Cut eyes and mouth for Jack O&#39;Lantern from scraps of mozzarella cheese.

Place 2 small black olive eyes on each of three baby ghosts. Place 2 small black olive eyes and mouth on friendly ghost. Place 2 sliced black olives on Pac Man ghost for eyes. Arrange mozzarella strips for mummy pizza and place 2 sliced black olives for eyes. Place mozzarella eyes and mouth, and bell pepper stem on Jack O&#39;Lantern cheese.

Spread 2 teaspoons of pizza sauce on each of the tortilla crusts. Top one crust with 2 tablespoons of shredded mozzarella cheese. Leave the other crusts with just the pizza sauce. Bake in preheated 400°F oven for 6 minutes.

Remove from oven. Build spooky spider on pizza topped with shredded mozzarella cheese. Place other pizza toppers on remaining pizzas. Return to oven for 1 to 2 minutes or just until cheese starts to melt. (See Tip 3)

For the easiest thin crust pizza, give this tortilla pizza a try!  It uses simple ingredients you probably have ready to go in your pantry.  It is a great way to feed that pizza craving!

Crispy Personal Tortilla Pizza

Pre-heat the oven to 425F. Prepare the pizza by placing the tortilla on a work surface. Spread the sauce on top, then sprinkle the cheese. finish with the toppings of choice.  Alternatively, prepare the pizza directly in a large cast iron skillet.

For the crispiest tortilla pizza crust, Heat the skillet on the stovetop over medium high heat and crisp the bottom of the tortilla for a few minutes, then transfer to the preheated oven to brown the toppings.

If you do not have an oven safe skillet, you can place the tortilla pizza directly on the oven rack, or on a baking sheet to bake.

Slice the tortilla pizza with a pizza cutter and serve.
