This easy tostones recipe (twice-fried plantains) made with unripe green plantains is a classic Latin staple!

3-Ingredient Tostones Recipe (Twice-Fried Plantains!)

plantains

In a deep nonstick skillet, heat oil over medium-high heat.

Add the thick plantain slices in the skillet, making sure there is enough oil to cover the slices. See video for more info but overall what you want is enough oil where the very top of the plantains are still visible but the rest of the slice is cooking in the oil.

Fry slices for about 5 minutes on all sides. Remove and drain on paper towels to absorb the excess oil.

Using a plantain press or a paper towel folded over, smash the plantains to about 1/2 inch thick.

Fry the now smashed plantains for about 4-5 minutes in the same skillet until golden brown on both sides.

Remove and drain on paper towels and season with salt. (You can transfer the oil to an airtight container and reuse it at a later time, if you’d like)

Tostones (Twice Air Fried Plantains)

green plantain (ends trimmed and peeled (6 oz after))

olive oil spray (I like Bertolli)

water

salt

garlic powder

With a sharp knife cut a slit along the length of the plantain skin, this will make it easier to peel. Cut the plantain into 1 inch pieces, 8 total.

In a small bowl combine the water with salt and garlic powder.

Preheat the air fryer to 400F.

When ready, spritz the plantain with olive oil and cook 6 minutes, you might have to do this in 2 batches.

Remove from the air fryer and while they are hot mash them with a tostonera or the bottom of a jar or measuring cup to flatten.

Dip them in the seasoned water and set aside.

Preheat the air fryer to 400F once again and cook, in batches 5 minutes on each side, spraying both sides of the plantains with olive oil.

When done, give them another spritz of oil and season with salt. Eat right away.

Air Fryer Tostones (Twice Air Fried Plantains)

For a snack that satisfies both salty and sweet cravings, my air fryer maduros (that are cooked like tostones) may be just what you’re looking for!

Air Fryer Maduros That Are Cooked Like Tostones

yellow plantain

Peel your plantain and cut it into 1-inch (2.54 cm) thick coins.

Put the slices on an air fryer rack in a single layer and brush with 1 teaspoon of olive oil.

Air fry the plantain slices for 5 minutes at 350°F (175°C).

One at a time, smash each slice by placing it between two plastic baggies and gently smooshing with a cast iron pan. The baggies help to prevent sticking. Do not use a tortilla press for this!

Lay the smashed slices in a single layer on your air fryer racks. (You may need to cook them in batches if you have a small-capacity air fryer.) Brush the tops with 1 teaspoon of olive oil.

Air fry the smashed plantain slices for 5 minutes at 400°F (200°C).

Remove the plantain slices from the air fryer and flip them over. Brush the sides of the slices that are now facing the top with 1 teaspoon of olive oil.

Put the air fryer trays back in the oven, switching their position in the oven. Air fry for 8 minutes at 400°F (200°C). (Note: air fryer cooking times may vary; feel free to adjust the cooking times listed here as needed.)

Remove the maduros from the oven after air frying. Sprinkle them with the smoked salt while they are still hot. Enjoy!

Magic Green Sauce

Peel the plantains by making a vertical cut through the skin and peeling it back with your hands or the edge of a spoon (see video).

Cut the plantains into 1-inch thick pieces. Heat a layer of oil in a heavy bottomed pan (see video to eyeball the amount).

Fry the plantains in batches. When the plantains are starting to turn light golden brown, remove from the oil and transfer to a plate lined with paper towels. Smash each piece with the back of a wooden spoon &#8211; this gives you a flatter shape with rougher edges. Return to the frying pan and fry for an additional 4-5 minutes or until golden brown and crispy. Transfer back to a paper towel lined plate to drain excess oil.

Sprinkle with sea salt and serve immediately, dipped in some kind of yummy sauce.

Hi! loved your post! I am from Costa Rica, live half the time in Costa Rica and Panama (Central America) and we eat a lot of them here. We call them Patacones not Tostones (In Nicaragua they do call them that!) 

We usually make them skinner, we even have special wooden smashers! :) The secret is that they have to be green!!! Any ripe Plantain will not work or taste the same. The salt has to be put on with the oil hot if not it won't stick as well :)

I LOVE tostones, but I'm Puerto Rican so it's a must  I like them thinner though, thinner and crispy *drools* here in Puerto Rico you can even find them at Chinese restaurants. They make the best garlic tostones! I'm definitely making that cilantro lime sauce mmmmm!

How to Make Tostones

The most traditional of Dominican recipes!

Traditional Dominican Green and Yellow Fried Plantains with Mojo Sauce

tsp Cilantro (finely chopped)

garlic (finely grated or minced)

Heat the oil on medium heat. Two Separate skillets.

While the oil is heating up, peel the plantains.

Cut green plantains into about 1 inch circles.

Cut yellow plantains in thinner diagonal slices.

Fry green plantain for about one minute each side and set aside.At the same time, fry yellow plantain until each side is nice and golden. Set aside until serving.

Take the green plantain circles and flatten them. (You can smash them with the bottom of a plate, pan or cup)

Put the flattened plantains back in the oil and fry for another 2 to 3 minutes until nice and crunchy.

Remove the plantains and drain on paper towels.

In a small bowl, mix oil, cilantro and garlic.

Serve with plantains.

Preparing the mojo sauce

This authentic Dominican Tostones Recipe requires about 1 cup (250ml) or more of oil– enough to submerge the plantains to do a shallow fry. I use Sunflower oil, but any neutral-tasting oil will work (canola, corn, vegetable, peanut, etc.). Alternatively, a light olive oil blend that is made for frying would also work too. 

You will need unripe green plantains for tostones; yellow ones will not do here as they have already started to soften and ripen. Bananas will not work for tostones, either. Plantains can be found at most grocery stores and health foods stores. For the soak, I often just soak the cut plantains in salted water; feel free to toss in a couple cloves of crushed garlic for a little more flavor.

Tostones are traditionally served with an ajillo, an easy homemade garlic dip. I&#x27;ve added some fresh cilantro (coriander) to mine to add some freshness. As simple as my ajillo with cilantro is, it does pack a lot of garlickly flavor. If that&#x27;s not your thing, feel free to go light on the garlic. Another alternative dip, which I&#x27;ve added to the notes of this recipe would be a mayonnaise and ketchup combination– salsa rosada (pink sauce)– I usually add a clove of freshly grated garlic to this to add some more flavor.

/ 15 g mayonnaise

/ 15 g Ketchup

/ 60 ml olive oil

Under cold running water, using your fingers or a butter knife (the tip of your knife works best) to remove the skins. With a sharp knife, cut each plantain into ¾-inch to 1-inch slices. Set aside.

Heat the oil on medium heat (oil should be around 325ºF / 160ºC). In batches, place the plantains in the hot oil and cook for about 4 minutes on each side until golden brown. Repeat with all the plantains, then remove from the oil and drain.

Using the flat side of a meat mallet, the bottom of a mug, bottom of a glass, or bottom of a heavy sauce pan or small cast-iron skillet, smash the plantain down until it is evenly flattened (roughly 1/4-inch / 2/3-cm thick. Repeat with the rest of the fried plantains.

Vegan Plantain Burrito Bowls with Cilantro Lime Rice, Quick Cuban Black Beans, Fresh Mango Salsa, and Pan-Fried Plantains are the perfect meatless meal to add to your meal plan! 

Vegan Plantain Burrito Bowl with Mango Salsa

white rice,

lime (about 2 Tbsp.)

cilantro

Salt and pepper,

yellow plantains,

Tbsp. avocado oil or coconut oil

mango (about 3 yellow or 2 red mangos)

red bell pepper

red onion

jalapeno*

Salt and pepper

Add rice, water, and a pinch of salt to a medium saucepan.

Cover and bring to a simmer over medium-high heat. Simmer for 4-5 minutes, then reduce heat to LOW and allow rice to steam for an additional 10-15 minutes, or until all the liquid is absorbed and the rice is tender.

When the rice is cooked, remove lid and stir in lime juice, cilantro, and salt and pepper, to taste. Gently fluff with a fork to combine.

Taste and add additional salt, pepper, lime juice, or cilantro as needed.

Start the Cilantro Lime Rice:

Heat avocado or coconut oil in a medium skillet over medium heat.

Working in batches so as not to overcrowd the pan, add sliced plantains to the pan and cook 3-4 minutes per side, or until golden. Transfer to a plate and repeat with remaining plantains until they&#8217;re all cooked.

When all the plantains have been cooked, flatten the plantains. To flatten, place the cooked slices between sheets of parchment paper and press down on them with the bottom of a glass, or the back of a spoon.

Return flattened plantains to your skillet and cook an additional 2-3 minutes per side. Season generously with salt, to taste.

Meanwhile, Start Plantains:

Combine diced mango with bell pepper, red onion, minced cilantro, 1 Tbsp. jalapeno, and the juice of 1 lime. Add salt and pepper.

Taste for seasoning, adding additional jalapeno, lime juice, salt or pepper, to taste. Set aside.

While the Plantains are Cooking, Make Your Mango Salsa:

In a small saucepan, heat 2 cans (drained, but not rinsed) of black beans with chili powder and tsp. cumin until the beans are warm. Keep on low heat until ready to serve.

For Quick Cuban Style Black Beans:

Layer cilantro lime rice, Cuban-style black beans, mango salsa, and cooked plantains.

Add additional toppings as desired (such as guacamole, avocado, or tomatillo ranch).

This was AMAZINGLY full of FLAVOR!! I love how you can include what you like best and each person can pick their own ingredients.  I spiced it up as I like heat, finished it with drizzled toasted sesame oil, radish sprouts and dollop of Sriracha.  Next time I'm going to try it with a poached egg as well! YUM, YUM, YUM! Love this recipe and will make this in lieu of plantain black bean tacos from now on.  I used Greek yogurt in the dressing in lieu of mayo and it really kept the flavors of the entire dish fresh and tangy.

We made these burrito bowls pretty much as written except we air-fried the plantain instead of pan frying it. We opted to add in 1 diced avocado as well. This meal was such a treat! We will definitely be making it again and again while mangos are in season. Thank you for sharing!

Tostones are crispy, salty, savory, smashed, and double-fried green plantains. This easy recipe yields delicious tostones in just 30 minutes. Enjoy tostones with dipping sauce as a quick snack, appetizer, or side dish.

Peel plantains, then cut into 1 inch pieces

Add oil to a frying pan on medium heat

When oil comes up to temperature add plantain to the hot oil

Fry until plantain is lightly brown, then flip and continue to fry until other side is also lightly brown

Remove from the oil and place in a plate lined with a few sheets of paper towel

Place pieces of plantain (one piece at a time) on a clean and dry, flat surface (cutting board or clean and dry counter tops work well here)

Using the back of a wooden spoon, underside of a mason jar or cup press on each plantain piece until it flattens to about 3/16 of an inch thick

Return the flattened plantain pieces to the hot oil and to fry until golden brown on one side, flip over and continue to fry until also golden brown on the other side

Remove from the heat and place on a plate lined with a few sheets of fresh paper towel to allow any excess oil to drain

Sprinkle with coarse salt and serve with your favorite, sauce, dip or topping

Add all of the ingredients to a food processor and process until a smooth sauce forms
