Coconut Cloud Cake Recipe

For the Cake:2 1/2 cups all-purpose flour

baking powder

salt

unsalted butter, softened

sugar

eggs, room temperature

vanilla extract

coconut extract

coconut milk

For the Frosting:1 1/2 cups heavy whipping cream

oz cream cheese, softened

For the Topping:1 cup sweetened shredded coconut (toasted or fresh)

Preheat oven to 350°F (175°C). Prepare two 9-inch round cake pans.

Whisk flour, baking powder, and salt. Beat butter and sugar until fluffy. Add eggs, one at a time. Stir in vanilla and coconut extracts. Alternate dry ingredients and coconut milk into the mixture.

Bake for 25–30 minutes. Let cakes cool completely.

For frosting, beat cream cheese and powdered sugar until smooth. Whip heavy cream to stiff peaks and fold it into the cream cheese mixture.

Layer and frost the cakes. Press shredded coconut onto the sides and top for a cloud-like finish.

Pineapple Juice Cake

yellow cake mix (15.25 oz)

vegetable oil

pineapple juice

eggs

brown sugar

tsp vanilla extract

unsalted butter

Preheat oven to 325°F (165°C). Grease and flour a 10–12 cup Bundt pan.

In a large bowl, mix cake mix, oil, juice, eggs, sugars, and vanilla until smooth.

Pour into the prepared pan and bake for 40–45 minutes.

Prepare glaze while baking: heat powdered sugar, pineapple juice, and butter in a saucepan until smooth.

Once baked, poke holes in the hot cake and slowly pour glaze over it in the pan.

Let sit 15 minutes, then invert and cool completely before slicing.
