This easy step by step guide for roasting a turkey breast in the oven will have your turkey dinner on the table in no time at all!

How To Cook (And Carve!) A Turkey Breast

chicken broth

Fresh rosemary, thyme or sage

Place the carrots and onions (and fresh herbs if using) in the bottom of a baking dish for the turkey breast to sit on.

Rub the olive oil and butter all over the skin of the turkey breast, then season with the salt, pepper, garlic powder and paprika.

Pour the wine and chicken broth into the bottom of the baking dish, then place the seasoned turkey breast on top of the vegetable rack.

Roast the turkey in the oven for approximately 20 minutes per pound, depending on the size of your turkey breast. A 7 1/2 pound turkey breast will take between 2 1/2 to 3 hours. Check the temperature of the breast to make sure it&#8217;s at 165 degrees.

Remove the turkey from the oven and let rest for 10 minutes, covered in foil.

Carve both sides of the turkey breast of the bone, then slice into pieces and serve.

Make the base for this gravy up to two days ahead, then simply add your roasted meat juices and heat before serving

Tasty Make-Ahead Gravy

sunflower oil

onion, finely chopped

bay leaf

tbsp plain flour

stock

juices from the turkey(see 'goes well with', right)

Heat the oil in a non-stick pan, then fry the onion, carrot and bay, stirring frequently, until the onion is golden. Stir in the flour, then pour in the stock while stirring. Simmer for 15 mins. Discard the bay leaf, then purée the contents of the pan with a hand blender until completely smooth. Cool, then chill. Can be made 2 days ahead.

When you take the turkey from the oven (see 'goes well with', right), pour the juices from the tin into a deep but narrow jug or bowl. Leave to stand so that excess oil from the turkey rises to the top. Skim off as much fat as you can and discard, then pour the juices into a pan with the gravy base and stir over the heat until bubbling. Season to taste.

A simple and inexpensive turkey dinner that anyone can make.

Roasted Turkey Tenderloin

oz Turkey tenderloin

sage

tbsp rosemary

Fresh ground pepper (to taste)

Preheat the oven to 350 and then season both sides of the tenderloin with dried sage, rosemary, salt and pepper, to taste.

Place the prepared turkey in a roasting pan and cover and then roast for approximately 40 minutes or until the juices run clear. Take out of roasting pan and place on cutting board.

Tent with aluminum foil and all the meat to rest for 5 to 10 minutes before slicing.  Slice the tenderloin into 1 1/2 to 2-inch slices and serve.

Remove the neck and giblets from the turkey, and pat the turkey dry.

Rub the minced garlic all over the turkey, then sprinkle the entire outside of the bird with seasoned salt.

Place the turkey in a large roasting pan or disposable aluminum pan.

Stuff the large cavity of the bird with the remaining ingredients.

Cover the turkey loosely with foil.

Prepare the smoker and heat to 250 degrees Fahrenheit. Place the turkey in the smoker and baste every 1-2 hours with turkey juices from the pan. 

Smoke until the internal temperature reaches 180 degrees Fahrenheit in the thickest part of the thigh.&nbsp;It’s good to plan 30 minutes per pound when you smoke a turkey between 225-250 degrees Fahrenheit. This turkey was 13 pounds and took about 7-8 hours to get to temperature.&nbsp;

Remove the turkey from the smoker and allow it to sit, still covered with foil, for 10 minutes before slicing.

How to Smoke a Turkey

This Apple Cider Vinegar Brine For Turkey is perfect for smoking a turkey! The brine adds so much flavor and also keeps the turkey moist! You can also use this brine to make a turkey in the oven as well! Perfect to smoke on a pellet grill or an electric smoker!

Apple Cider Vinegar Brine For Turkey

Turkey

Salt

Cup Brown Sugar

Tbsp Peppercorns

Tbsp Dried Rosemary

Cinnamon Sticks

Tbsp Thyme

Tbsp Ground Sage

Tsp Minced Garlic

Tbsp Whole Cloves

Medium Oranges

Quarts Apple Cider Vinegar

Gallon Water

Cut up your oranges into quarters.

In a large stockpot add all of the ingredients of the brine (but not the turkey).)

Bring the brine ingredients to a rolling boil to allow the salt and sugars to dissolve.

I stirred mine as it was warming up to make sure everything was mixing well.

Remove from heat and allow to cool to room temperature.

If your pot is big enough add your turkey to the brine once it has cooled if not pour the brine into a container to put the turkey in it with.

I used a Tupperware That&#39;s Mega Bowl and it held my 12 lb turkey plus the brine.   

Keep cold in a fridge or continue to add ice to it.

Allow the turkey to brine for at least 18-24 hours.

HOW TO MAKE APPLE CIDER VINEGAR BRINE FOR TURKEY:

Remove your turkey from your brine and place it to the side on a tray or platter, when I removed my turkey I lifted it straight up so it kept some of the seasonings on it.

Sprinkle with more rosemary, you can use more seasonings as well if you want to.

Pour your brine out, I poured the brine into an over-the-sink strainer to catch all the large pieces of the brine.

Start your smoker up and get it rolling smoke.

You will need to monitor your turkey with a meat thermometer to watch for the turkey to cook thoroughly thru.

I smoked my turkey on the smoke setting for 1 1/2 hours, and then smoked it at 250 for 6 hours.

Serve and enjoy!
