These Maple Mustard Roasted Turkey Thighs are super juicy, delicious and a great alternative for roasting a whole turkey. Perfect not just for Thanksgiving dinner but for any weekend supper.

Maple Mustard Roasted Turkey Thighs

butter (unsalted)

tsp rosemary (fresh, chopped)

tsp thyme (fresh, chopped)

tbsp smoked paprika

tbsp dijon mustard

maple syrup

turkey

salt

½ tsp pepper

water

onion

celery (chopped)

carrots (chopped)

rosemary

thyme

Preheat your oven to 350F.

In a small saucepan add the butter and melt over medium high heat. Add the rosemary, thyme, smoked paprika, dijon mustard, maple syrup and stir. Bring to a boil then remove from heat.

Score the skin of the turkey thighs. Season your turkey thighs with salt and pepper. Pour about 3/4 of the maple/mustard mixture over the thighs and toss.

Add the water to a roasting pan, then add the onion, celery, carrots, rosemary, and thyme. Place a roasting rack in the pan.

Place the turkey thighs, skin side up, on the rack and brush with remaining maple/mustard glaze.

Roast for 2 hours or until the internal temperature reads 175-180F, basting every 30 minutes with the juices from the pan.

Remove from the oven and cover the thighs with aluminum foil. Let them rest for 10 minutes before slicing them.

Maple Roasted Turkey Thighs

Anyone who has spent time in New Mexico knows that fiery red chile sauce, made with local dried chiles, finds its way into most meals there, enhancing plates of huevos rancheros or enchiladas. But just as often, it is the base for a meat stew, usually beef, pork or lamb. The dish is known as carne adovada, and it is insanely good.
Yes, there probably is a roasted turkey in most homes for Thanksgiving, and maybe a steaming pot of tamales. But the thought occurred to me that turkey thighs (the tastiest part of the bird) simmered in red chile would be a welcome substitute. It turns out I was right. Slowly braised for 2 hours, this spicy turkey is succulent and tender.

Slow-Cooked Red Chile Turkey

turkey thighs,

Salt and pepper

New Mexico chiles, about 24 large pods

vegetable oil

onion,

coriander seeds,

cumin seeds,

garlic cloves,

bay leaf

Season turkey generously with salt and pepper, then set aside at room temperature.

Heat oven to 400 degrees. Quickly rinse chiles and pat dry. Put chiles on a baking sheet in one layer and bake just until fragrant and lightly toasted, about 5 to 7 minutes, then cool. (Alternatively, toast chiles in batches in a dry cast-iron pan over medium-high heat, turning them frequently.) Split chiles lengthwise with a sharp knife. Remove and discard stems and seeds (wear gloves if you have sensitive skin).

Put chiles in a saucepan, cover with 4 cups water and bring to a boil. Turn heat to low and simmer for 10 minutes, then let cool.

Remove chiles from cooking liquid and place in a blender jar. Add a cup or so of cooking liquid and purée to a smooth paste, adding more liquid if the mixture seems very thick.

Put a large wide skillet over medium-high heat. Add oil, then add onion and a little salt. Cook, stirring occasionally, until onion is softened, 5 minutes or so. Lower heat as necessary to keep onion from browning. Add coriander, cumin, garlic and bay leaf, then add chile purée and let simmer for 8 to 10 minutes, stirring occasionally. You should have about 4 cups sauce.

Put seasoned turkey in a Dutch oven or deep roasting pan. Pour red chile sauce over, making sure meat is well coated. Cover and bake at 400 degrees for 30 minutes, then reduce heat to 350 degrees and bake for 1 1/2 hours, until turkey falls from the bone when probed with a fork.

To serve, put turkey on a platter and cut meat into large pieces. Nap with sauce and garnish with cilantro sprigs. For more casual dining, serve directly from pot.

(It is safe to remove them from the oven when the thermometer reaches 165°F. We cook them longer to break down the connective tissue).

Perfectly Roasted Turkey Thighs

(907-1,360 g) turkey thighs

Salt and pepper, (to taste)

butter, (unsalted)

(10 g) garlic, (minced)

sage, (minced)

rosemary, (leaves removed and minced (about one tablespoon))

(2 g) paprika

(4 g) parsley, (chopped)

onion, (quartered)

celery, (chopped)

thyme, (minced)

Rinse turkey thighs with water, then pat dry with paper towels.

Season turkey thigh with salt and pepper, slipping salt under the skin where possible.

Clean the Turkey

Combine butter, minced garlic, sage, rosemary, paprika, and parsley.

Let the turkey rest in the fridge until ready to use. You can make the herb spice a day or so in advance if desired.

Loosen up the turkey skin by carefully running your fingers between the skin and the meat, the skin is very fragile so be careful not to tear it up.

Generously rub the thighs with the herbed butter combination. Refrigerate until ready to roast or up to 24 hours.

Preheat your oven to 400ºF/200ºC.

Place onion, celery, and thyme in a 3-quart baking dish, then place the thighs on top of veggies.

Roast the turkey thighs for 30 minutes, then reduce the temperature to 325°F/165℃. Continue roasting until an instant-read thermometer registers 165°F/75℃ in the thickest part of the breast. About an hour, depending on the size of your turkey thighs.

If the turkey is browning too fast, tent it with a piece of foil to prevent over-browning.

Remove from the oven and let it sit for about 10-15 minutes before carving. That allows the juices to settle back into the meat—reserve turkey drippings to make gravy if desired.
