Boyoz Bread Recipe

flour

water (warm)

butter

tbsp. oil

salt

sugar

Preheat the oven to 400 degrees.

Combine flour, salt, oil, and sugar in a mixing bowl.

Stir well until combined.

Follow by adding the warm water slowly.

Once you have a firm dough, knead it to give your dough an oval shape.

Divide the dough into 6 equal parts.

Cover and let it rest for 30 minutes.

Place the dough parts on your work counter and apply pressure from the top to each one, using your hands. They should be about 15 centimeters in diameter.

Grease one ball with butter, and put another one on top of the former.

Repeat until you’re out of dough.

Transfer the combined balls to a baking tray and cover.

Rest for one and a half hours.

Press the edges and form a rectangular shape.

Bake for about 30 minutes.

Baba mesleğimiz, 35 senedir bu işi yapıyoruz.İspanya’dan göç eden Musevi ustalar (Avram usta,Aşar usta,Yoko)para kazanmak için yapıyorlarmış.O dönem de bollos isminini taşırken ,söylene söylene  günümüzde boyoz olarak bilinmektedir ve  bunun yanında fırın yumurta yapılır .
Fırın yumurtanın özelliği ;yavaş yavaş fırında  12-13 saatte  pişmesi , bu nedenle  daha lezzetli ve  rengi de kahverengi olur. 
Boyozu sabah 6:00-6:30 gibi pişirmeye başlıyoruz .İzmir’de boyozu seven çoktur,sabah yada öğlen diye ayırt etmezler .İnsanlar 6:30 gibi  kahvaltısını etmeye gelirler ,bu öğlenden sonraya kadar devam eder. Geleneksel bir hal almıştır.2’ ye 1  derler ,3’e 1 derler :2 boyoz 1 yumurta,3 boyoz 1 yumurta demektir. 
Boyoz da   en iyi  ,kaliteli  böreklik ve  baklavalık un,çiçek yağı ve tahan kullanırız.Açma şeklinde olur ve   el ile  açılır.
Geleneksel  boyoz ıspanaklı ve sade  olur ,tabi bu günlerde  biraz daha çeşitlendirdik.
(şekerli,çikolatalı,peynirli,patlıcanlı,otlu,pırasalı,enginarlı,zeytinli) bu çeşitlendirmeler de artarak devam ediyor. Boyozun diyet  olanı maalesef yok fakat  ,zaten  hafif bir yiyecektir.
Boyoz ve   yumurta vazgeçilmez ikili olmuştur.Kahvaltıda2 boyoz 1 yumurta yada  3 boyoz 1 yumurta  yediğiniz  zaman ,sizi öğlen yemeğine  kadar  tok tutar .
İzmir’in birde meşhur sübyesi vardır  .Kavun   çekirdeği ve  şekerden yapılır  .Fakat   insanlar bu dönemde  çok  bilmediği için servis yapamıyoruz. Boyozun yanında genellikle  çay içilir.
İzmir’lilerin  yıllardır  vazgeçilmez sabah kahvaltısıdır ,Boyoz ve Yumurta !

First, prepare our dough. For this, mix all the ingredients except water, add water little by little to get a slightly solid dough from the earlobe.

It would be better if you put the water in a controlled manner. After gathering the dough in the bowl, you can sprinkle very light flour on the counter and crush it with your hand on the counter or continue to knead in the bowl.

When the dough is ready, divide it into 4 equal parts and make it into a meringue. Cover the bowl you kneaded and let it rest for half an hour.

At the end of this period, flour one of the meringues on the counter lightly and open it as a plate by pressing with your hand.

Put 2 spoons of butter that is slightly cooler than room temperature into it and open another meringue in the same size and cover it.

Cover the edges by pressing well, apply a very light oil with your hand on the bottom and put it on a tray.

Prepare the other two meringues in this way, cover them with stretch film and rest for 1 hour.

You will take one of the resting dough on the counter which you greased lightly. While doing this, remove your hand carefully from the bottom of the dough and lift it slowly and leave it on the bench.

Then large as much as you can with your hand, slowly pulling by pull. There may be tears at this stage. It&#039;s not too much of a problem.

Then roll the edges in an envelope and cut into 5 equal parts.

Hold each piece vertically, press it from the middle to the bottom with two fingers, pull your fingers and press it with your hand not far from the top.

Prepare the others in this way and cook them at 200 degrees until they turn pink. Bon Appetit.
