Golden Coconut Lentil Soup

lb. red or yellow lentils (about 1 cup) (1.35)

Add the olive oil to a large pot. Dice the onion, mince the garlic, and grate or mince the ginger (I use a small-holed cheese grater). Sauté the onion, garlic, and ginger in the olive oil over medium heat for 2-3 minutes, or until the onions are soft and transparent. While the onions, garlic, and ginger are sautéing, peel and slice the carrots.

Add the turmeric and red pepper to the pot and sauté for a minute more. Add the carrots to the pot, sauté for a minute more, then add the lentils and water. Place a lid on the pot, bring it up to a boil over high heat, then turn the heat down to low and simmer for 20 minutes.

Toast the coconut flakes while the soup simmers. Add the coconut flakes to a dry skillet and place it over medium-low heat. Stir continuously as the flakes heat until they are about 50% golden brown (1-3 minutes). Remove the flakes from the hot skillet immediately to stop the toasting process.

After 20 minutes the lentils should be soft and broken down. Stir the coconut milk into the soup. Use an immersion blender or carefully blend the warm soup in small batches until about half of the soup is puréed (or all of it if you want it completely smooth). Once blended, begin adding salt, 1/2 tsp at a time, until the soup is properly seasoned. I used 1.5 tsp or 1/2 Tbsp of salt. Also adjust the red pepper flakes, if desired.

To serve the soup, ladle about 1.5 cups into a bowl and top with 1/2 cup cooked rice, some fresh cilantro leaves, and a sprinkle of toasted coconut flakes.

Healing Chicken and Rice Soup that is limey, salty, and so fresh! Garlic-ginger-infused broth, shredded chicken thighs, tender jasmine rice, fresh herbs, and peanuts. YUM.

Healing Chicken and Rice Soup

olive oil

lbs. boneless skinless chicken thighs

salt

baby spinach

jasmine rice

chicken broth

soy sauce

herbs

peanuts or cashews for topping

Heat olive oil in a large soup pot over medium heat. Add the garlic, ginger, and shallots. Sauté for 3-5 minutes.

Add the chicken thighs. Sprinkle with 1 teaspoon salt and turmeric. Cook, undisturbed, for a few minutes. (Add 1/4 cup water to the pan to create a little steam bath if it&#8217;s getting too browned on the bottom.) Flip and repeat until cooked through. Remove chicken and set aside.

Add spinach and 1/2 teaspoon salt to the pan. Sauté for 2-3 minutes until wilted. Remove spinach and set aside.

Add rice to the pan. Sauté for 1-2 minutes so it picks up all the good pan flavors. Add 6 cups broth and bring to a simmer.

While the rice is cooking, shred the chicken.

When the rice is soft, add chicken and spinach back to the pan. Season with lime juice, soy sauce / fish sauce, and fresh herbs. Add extra broth as needed. YUM.

Best chicken soup I've EVERY eaten let alone made! I use udon noodles instead of rice and it is awesome!  I've been making this for my friends with COVID-19 and they swear it helps them heal!  I've made this soup so many times don't need to look at recipe any longer.

I lightly brown the chicken on one side then add all of the other ingredients  to the pot.  Spinach and toppings added at the end after pressure cooking.

This was delicious. I added an extra cup of wild rice.

I just whipped this up because our WI Autumn was begging for a warm, enriching soup tonight. It came together so quick, and I just snuck a spoonful before serving my littles and WOW. The lime, ginger and turmeric are incredible together. You are absolutely 100% correct on all accounts and to be clear, I expect this will heal my son's ear infection instantly ;)

I was so upset when I forgot to buy peanuts on my shopping excursion today and I pretended they wouldn't be necessary -- but this recipe definitely needs some warm flavors -- the turmeric can feel a little bitter.  I added a little cumin (1/2 tsp) with the turmeric but doing multiple process tastings, it needed more.  I added two spoonfuls of peanut butter and it really helped.  I still feel it needs a little "something", but I think it is a very good starting point.  I would say that the lime juice and the cilantro really improved the flavor.  As hinted in the recipe, more broth is definitely a good idea.

I made this tonight with leftover roasted turkey and turkey broth. It was fantastic! It would be a great way to use up leftover Thanksgiving turkey.

After one bite, my 12-year-old son said, "Can you make this again?" The family all had two bowls for dinner, then he requested another one later for a snack. And one of us may have eaten a bowl of it for breakfast. I followed the recipe exactly, except for the cilantro because the store was out of it (!). New favorite soup -- definitely nourishing and super delicious.

I felt a cold coming on today and remembered I had just seen this recipe. I wanted to add even a little bit more veggie goodness so I sautéed a Serrano pepper with the garlic, ginger and shallot and then included some chopped up baby bok choy with the spinach. I made this soup tonight and it was AMAZING!!!  Even my 3 and 6 year old had seconds.  This will definitely be a winter staple in our house.  I love all of the beautiful flavors.

Turmeric Chicken and Rice Casserole

(13.5 ounces) full fat coconut milk

water

¼ cup long grain white rice (rinsed)

carrot (grated)

lime (juiced (about 2 tablespoons))

chicken breasts

Grease

Preheat the oven to 350°F (177°C). Lightly grease a 9x13-inch casserole pan.

Saute

Heat the oil in a skillet over medium-high heat. Add the onion and saute for 3 to 4 minutes, until slightly translucent.

Cook

Add the garlic, turmeric, salt, pepper, ginger, and cumin, and stir for another 30 seconds. Then add the canned coconut milk and gently stir until there&#39;s no longer lumpy coconut milk bits. Transfer the mixture to the casserole pan.

Stir

Add the water, rice, carrot, and lime juice to the casserole pan, and stir together.

Bake

Nestle the chicken breasts on top of the rice mixture (I like to coat both sides of the chicken breast in the liquid for more flavor). Cover the pan with aluminum foil and bake for 45 to 50 minutes, until the rice is tender and the chicken is cooked through.

Serve

Before serving, fluff the rice with a fork, season the chicken with additional salt and pepper, and sprinkle with cilantro.

Recipe video above. This Golden Coconut Chicken Curry blows me away every time I make it - and I&#39;ve been making it a lot lately! Thai vibes with a whisper of Indian, like a less shrimpy version of Thai Yellow Curry with a hint of Massaman. Don&#39;t skip the star anise and cinnamon stick, and really try to use fresh turmeric rather than dried, for max flavour and yellow colour. All credit to JB for this one, his invention. :)

Golden coconut chicken curry

tbsp coconut oil (, vegetable or canola oil (Note 1))

star anise

onion (, finely diced)

chicken thigh

tsp garlic (, finely grated)

tsp ginger (, finely grated)

chicken stock/broth (, low sodium)

/ 14 oz coconut cream ((sub coconut milk, Note 4))

broccoli

coriander/cilantro leaves

tsp cooking/kosher salt

tsp garam masala ((Note 5))

coriander powder

cumin powder

fennel powder ((sub more garam masala))

Rice

Spice mix - Mix the spices in a small bowl.

Toast - Heat the oil in a large heavy based pot over medium high heat. Toast the star anise and cinnamon for 1 minute.

Add onion, cook for 2 minutes.

Add chicken, cook for 3 minutes or it&#39;s no longer pink on the outside (still raw inside).

Add aromatics - Add garlic, ginger and turmeric. Cook for 1 minute.

Add spice mix and stir for 30 seconds.

Simmer 12 minutes - Add stock and coconut cream. Stir and bring to an energetic simmer. Cook for 12 minutes (no need to stir) so the sauce thickens slightly.

Add broccoli florets. Bring back to a simmer and cook for 3 minutes or until softened.

Serve - Stir in coriander and serve with rice (basmati or jasmine especially nice). Garnish with extra coriander and crispy fried shallots.

cooked quinoa (from 1 cup uncooked)

Cook quinoa until light and fluffy, about 10 - 15 minutes. (I use this method)

Allow the quinoa to cool until it's warm to the touch, then stir in the remaining ingredients. Taste and adjust salt as needed.

Made this tonight. Used basil evoo. Added black pepper, toasted cashews, and sauteed onions and peppers. It was very good. My husband (who doesn't love quinoa) even ate it and said he would eat it again.

This homestyle Indonesian baked fish recipe is made with a Turmeric Curry Paste slathered on to white fish fillets which are then baked, and served topped with an Indonesian-style tomato salsa called Sambal Tomat.The curry paste is a gorgeously vibrant yellow colour thanks to the turmeric, and packed with fragrant and fresh South-East Asian curry flavours (as opposed to big, in-your-face-spice like Indian curries!).Sambal Tomat comes in all forms, from complex versions with flavourings like shrimp paste, to simpler and fresh ones like this one. We only need a simple one, the curry paste has plenty of flavour!

Golden Turmeric Fish (Indonesian baked fish recipe)

white fish fillets (, medium to thick, skinless (Note 1))

tsp salt

lime juice

garlic (, finely grated*)

turmeric (, finely grated* or substitute powdered (Note 3))

tsp ginger (, peeled and finely grated*)

tbsp macadamia nuts ((Note 4))

tsp black pepper

kaffir lime leaf (, torn by hand (Note 5))

2.5cm / 1" piece of fresh lemongrass, white part only,

tbsp oil

tsp oil

/ 8 ounces cherry tomatoes (, quartered)

red chilli (cayenne pepper) (, deseeded and finely diced (adjust to taste, Note 7))

tsp coriander/cilantro leaves (, finely chopped (plus more for garnish))

Prep: Preheat oven to 200°C / 390°F (180°C fan). Line a tray with baking / parchment paper.

Quick fish marinade: Sprinkle fish with salt and drizzle with lime juice. Leave in fridge while making paste - just 10 minutes is fine.

Turmeric Curry Paste: Place ingredients in a container that fits a stick blender. Then blend with stick until smooth, using extra water if needed until it is a paste consistency (ie. can be slathered on fish).

Slather and bake: Smear paste onto surface of fish (not underside). Bake for 15 minutes until the internal temperature is 55°C/131°F (medium, just cooked but not raw at all, very juicy).

Rest: Remove from oven and remove fish from tray (otherwise it keeps cooking). Rest 3 minutes, serve over rice with Sambal Tomat (below) and extra fresh coriander.

Sambal Tomat Topping: Heat oil in a non-stick pan over medium heat. Add tomato, chilli and salt. Sauté 2 minutes until tomato is slightly softened. Stir through coriander, serve over fish.

My family , kids included, loved this dish. I had to substitute a few ingredients - I used powdered tumeric, as well as minced lemongrass and ginger from a jar. Also, I skipped the first step of marinating the fish in lime. Despite these hacks, it was still delicious ! I served with the Sambal tomat, jasmine rice and Asian greens. Can't wait to make it again. Very easy provided you have ingredients or substitutes.

The crowning glory of this dish was the Sambal tomat. You’re so right Nagi, it is a must. I found the curry paste a little bitter and I’m not sure if it was the kafir lime leaf (fresh from my own tree) or the lemon grass from the green grocer. It didn’t matter as overall it was delish.

Nagi, this recipe is amazing! white fish can be a bit plain for me, but this Indonesian twist takes the dish to another level of awesomeness! Love, love, love it!

I made this tonight. Delicious and spectacular on the plate!
