Sugar Free Pecan Turtle Candies

tbsp Swerve Brown

tbsp Bocha Sweet ((or allulose or xylitol))

butter

heavy whipping cream

tsp xanthan gum

tsp sea salt

pecan halves

sugar free dark chocolate (chopped)

More sea salt

In a large saucepan over medium heat, combine the sweeteners and 4 tablespoons of the butter. Bring to a boil and cook 3 to 5 minutes, watching carefully so it doesn't burn. Remove from heat and add the cream. The mixture will bubble vigorously.&nbsp;

Return the mixture to heat and bring back to a boil. Boil 3 minutes, watching carefully. Sprinkle the surface with xanthan gum and whisk to combine. Whisk in the salt. Let the caramel cool until thickened but still pourable, about 1 hour

Meanwhile, preheat the oven to 350F and line a cookie sheet with parchment or a silicone baking mat. Spread the pecans out on the mat in a single later and bake 7 to 10 minutes, until toasted. Arrange the pecans in clusters of 3 or 4, making about 20 to 24 clusters.&nbsp;

Drizzle a few teaspoons of caramel over each pecan cluster, making sure some caramel is touching each of the pecans. Place the cookie sheet in the freezer to set the caramel.

In a small bowl set over a bowl of barely simmering water, combine the chocolate and the remaining tablespoon of butter. Stir until melted and smooth, then drizzle over the chilled clusters.

Sprinkle with sea salt if desired, and let set.&nbsp;

Melt chocolate in microwave in 30 second intervals, stirring after each interval until smooth (about 1-2 minutes total). Dollop a Tablespoon or so of chocolate on the tops of each caramel turtle. Allow to set.

Layer pecans, then candy coating, then chocolate bar into crockpot (I used a 5 quart). Cover. Cook for 1 hour on low temperature. Do not stir. After 1 hour stir mixture and continue to cook, stirring every 15-20 minutes for another hour (a total of 2 hours). Once mixture has completely come together, stir in caramel bits and turn off the heat. Cover for 5 minutes.

Meanwhile line counter top or table with a long piece of parchment paper.

Stir. Use 2 table spoons to scoop out candy from crockpot and scoop it onto parchment paper. Make sure candy is not touching.

Meanwhile, melt 2 cups chocolate chips and chop 1/2 cup pecans. Drizzle over turtles and garnish with chopped pecans.

Allow to set completely.

Serve and enjoy!

Turtle Chocolates (Crockpot Candy)

These easy Chocolate Pecan Turtle Clusters are a classic holiday treat. Made with toasted pecans, homemade caramel sauce and chocolate, everyone adores this turtle candy.

Chocolate Pecan Turtle Clusters 

brown sugar

corn syrup

sweetened condensed milk

vanilla

milk chocolate chips

shortening

In a large skillet, toast the pecans over medium high heart for a few minutes.

Line 2 large baking sheets with parchment paper and spray with nonstick cooking spray.

Arrange the toasted pecans in groups of 3 leaving about an inch of space between each group. Set aside.

In a medium saucepan, melt the butter over medium-high heat.

Stir in the brown sugar, corn syrup, and sweetened condensed milk. Cook and stir continuously until it reaches 235-240F on a candy thermometer.

Remove from heat and stir in the vanilla.

Drizzle about 1/2 tablespoon of caramel over each cluster, set aside.

Fill a pot about 1/4 of the way with water, and fit with a bowl that won&#39;t touch the bottom of the pot to create a double boiler.

Heat the pot over medium heat.

After letting it heat up for a few minutes, start to stir the chocolate chips until they are fully melted and smooth.

Stir in the shortening and spoon about 1/2 tablespoon on the top of each cluster.

Once the chocolate has cooled serve immediately or store in an airtight container with parchment paper between each layer of clusters.

These are delicious! The only thing I did different is,  i added almond extract flavoring instead of vanilla

Definitively a more involved recipe than mixing ingredients but well worth the extra time to make. I made this recipe exactly according to direction, except my chocolate only came in 10 oz bags instead of 12 oz and I didn't realize it until ready to melt it, but it was absolutely prefect! We loved these turtles

I made these turtles and they are great!  One of the candies I make for hubby every year.

Made these for the first time, and they were way better than the turtles I get in Savannah Georgia. I would definitely make this again and again.
