Easy Twice Baked Potatoes

russet potatoes

buttermilk ((or milk))

sour cream

garlic powder

butter

chives ((or green onions))

bacon bacon bits

cheddar cheese (, divided)

salt and pepper

Preheat oven to 375 degrees. Wash potatoes and poke with a fork.&nbsp;Bake potatoes in oven 1 hour or microwave until soft. Allow to cool slightly.

Slice each potato in 1/2 lengthwise. Scoop out the pulp of the potato leaving a 1/8" shell.

In a bowl, mash potatoes, sour cream, butter, garlic powder, salt and pepper until smooth. Add butter milk as needed to create a creamy texture. Stir in chives, bacon and 3/4 cup cheddar cheese.

Fill each skin with the mashed potato filling and top with remaining cheese.

Bake 15-20 minutes or until heated through and cheese is melted.

This is a fun recipe and so delicious. Now you can enjoy a restaurant favorite right at home that’s made healthier but, no one will know. They’re that good!  Enjoy!!

-1/3 cup butter or margarine, softened

turmeric

plain Greek yogurt sour cream

In medium bowl, mash potatoes with potato masher. Then, switch over to a hand held mixer. 3.Add milk slowly and beat on low speed. Trying to get all the lumps out.4.Add butter, salt, pepper, onion powder and turmeric. Beat slowly then turn to medium high. Whip until smooth and fluffy. Add yogurt. Beat on slow to incorporate.5.Stir in cheese and scallions.6.Scoop out potato mixture into shells. Place on cookie sheet.7.Bake at 400 degrees for about 20 minutes. Take out and add a little cheese on top. Put back in for 5 minutes just for the cheese to melt.8. Top with additional yogurt or sour cream and enjoy the creamy, cheesy yumminess!

Remove from oven and slice potatoes in half lengthwise. Scoop out the insides and transfer them to a large bowl, leaving about 1/8&quot;-1/4&quot; of shell to hold the filling. Arrange shells on the baking sheet.

Add the warm milk, butter, sour cream, cream cheese, and mash with a potato masher. Add half of the cheddar cheese, green onions, garlic powder, salt, and pepper. Stir to combine, then taste and adjust the salt and pepper as needed or add more milk if the potato filling seems too dry.

Fill each shell with the potato filling, then sprinkle with the remaining cheese.

Bake for 15-20 minutes until hot all the way through and the cheese has melted on top.
