Twice Smoked Ham with Brown Sugar Honey Glaze

chicken stock

Preheat your smoker to 225 degrees f.

Place the ham, cut side down, directly on the grill grates.

Close the lid and smoke the ham for 1.5 hours.

Place the ham in a large 12 inch cast iron skillet. Pour 1 cup of chicken stock over the ham and then cover the ham and the top of the pan tightly with aluminum foil. Close the lid, increase the temperature on your smoker to 300 degrees F and continue cooking for an additional 2 hours, or until the internal temperature reads 140 degrees F.

When the ham is almost done cooking, prepare the glaze. In a small saucepan, combine all of the glaze ingredients. Cook over medium heat, stirring frequently with a whisk, just until the glaze comes to a boil. Remove from the heat immediately.

Remove the ham from the smoker and open up the foil. Drain off any excess cooking liquid and set aside for serving. Turn the ham over onto it's side and brush liberally with the brown sugar honey glaze.

Place the glazed ham into your oven on High broil. Cook for 2-3 minutes, or until the glaze is bubbling and caramelized.

Serve immediately with the drippings from the cast iron skillet on the side, if desired.&nbsp;

pre-cooked, spiral-cooked ham (about 10 lbs)

Cup Dr Pepper

Smoked Ham With Brown Sugar Glaze

Pre-cooked bone-in half ham

Brown sugar

Honey

Pineapple juice

Apple cider vinegar

Dijon mustard

Black pepper, freshly ground

Garlic powder

Prep the smoker

Preheat smoker to 225°F. Most pellet grills don’t need it, but you can add a pan of water in the corner of the smoker to keep moisture inside. If using a Traeger with a Super Smoke option, turn it on as well.

Smoke the ham

Place ham cut side down on the smoker and cook until an internal temperature of 120°F. I recommend using a good leave-in meat thermometer so you don't have to constantly check the short ribs.

Prepare the smoked ham glaze

Mix all of the glaze ingredients in a medium sauce pan and simmer for 10 minutes or until thickened.

Glaze the smoked ham

Brush all sides of the ham with a thick coating of the glaze. You can do this on the smoker with a long brush to avoid getting burned or remove it from the smoker, glaze it, and then return it to the smoker.

Continue smoking the ham

Continue smoking the ham until it reaches an internal temperature of 140°F.

Rest the smoked ham

Transfer the ham to a cutting board, brush another coating of the glaze, and let rest for 20 minutes before slicing.

Serve the smoked ham

Slice the ham against the grain in 1/4 inch slices (pencil thickness) and serve with the remaining glaze.
