Caruso Sauce with Pasta originated in Uruguay to honor the famous Italian tenor, Enrico Caruso. Over time, this creamy pasta sauce spread throughout South America and eventually to Europe. Enriched with cheese, ham, and mushrooms, and delicately seasoned with cinnamon and nutmeg, Caruso sauce is usually served over cappellini or tortellini. It tastes just as delicious served over spaghetti!

Caruso Sauce with Pasta

dry spaghetticookeddrained and held warm

(3/4 stick) unsalted butterdivided

(8 ounces) or about 3 cups sliced mushrooms

all-purpose flour

(about 6 ounces) chopped ham (can use smoked)

(12 fluid ounces) NESTLÉ® CARNATION® Evaporated Milk

MAGGI® Beef Flavor Bouillon Cubecrusheddissolved in 1 1/2 cups warm water

(4 ounces) shredded Emmental (Swiss)Gruyère or mozzarella cheese

black pepper

cinnamon

nutmeg

toastedchopped walnuts (optional)

parsley (optional)

Melt 3 tablespoons butter over medium heat in medium saucepan. Add mushrooms; cookstirring occasionallyfor 6 to 8 minutes or until tender and golden.Add ham; stir for 1 minute. Remove from heat.

Melt remaining 3 tablespoons butter over medium heat in large saucepan or skillet.Add flourstirring constantlyuntil mixture turns light brown in color.With wire whiskslowly add evaporated milk and warm beef brothwhisking constantly.Bring to a boil.Cook for 6 to 8 minutes or until smooth and slightly thickened (mixture coats back of spoon).Remove from heat.Stir in cheese.Stir in peppercinnamonnutmegreserved mushroom mixture and nuts.

Pour sauce over hot pasta.Sprinkle with parsley.

Preheat oven to 375° F.Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thincotton kitchen towel with 1/4 cup powdered sugar.

Combine flourbaking powderbaking sodacinnamoncloves and salt in small bowl. Beat eggs and granulated sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.

Bake for 13 to 15 minutes or until top of cake springs back when touched. (If using a dark-colored panbegin checking for doneness at 11 minutes.) Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel togetherstarting with narrow end. Cool on wire rack.

Beat cream cheese1 cup powdered sugarbutter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before servingif desired.

Cooking Tip: Be sure to put enough powdered sugar on the towel when rolling up the cake so it will not stick.

(11-ounce package) NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels

Microwave morsels in largeuncoveredmicrowave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; stir. The morsels may retain some of their original shape.If necessarymicrowave at additional 10- to 15-second intervalsstirring just until morsels are melted.Stir in peanut butter until well blended.Add chow mein noodles and marshmallows; toss until all ingredients are coated. Drop by rounded tablespoon onto prepared trays. Refrigerate until ready to serve.

Double Boiler Method: Place morsels in top of double boiler over hot (not boiling) water.Do not cover.When most of the morsels are shinystir just until melted.(Prevent water from coming in contact with morsels.)Remove from heat; stir in peanut butter. Transfer to large bowl. Add chow mein noodles and marshmallows; proceed as above.

(10 grams) Pandan Flavor Gulaman powder

Coconut shredded (200 grams) and reserve 2 cups of coconut water

NESTLÉ® All Purpose Cream

NESTLÉ® Carnation® Condensada

Mix gulaman  coconut water and sugar in a pot. Stir and bring to simmer. Pour into a container. Set aside to cool. Cut into cubes. (15mins)

Combine NESTLÉ® All Purpose Cream and NESTLÉ® Carnation® Condensada. (2mins)

Add pandan jelly and shredded coconut. Mix well and refrigerate overnight. Serve well chilled. (overnight)

(2 1/2 sticks) butterdivided

soda crackers

dark brown sugar

(14 ounces) NESTLÉ® CARNATION® Sweetened Condensed Milk

(9 ounces) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels

Preheat oven to 425° F. Line 15 x 10-inch jelly-roll pan with heavy-duty foil.

Melt 1/4 cup (1/2 stick) butter in medium saucepan. Pour into prepared jelly-roll pan. Arrange crackers over butterbreaking crackers to fit empty spaces.

Melt remaining 1 cup (2 sticks) butter in same saucepan; add sugar. Bring to a boil over medium heat. Reduce heat to low; cookstirring occasionallyfor 2 minutes. Remove from heat; stir in sweetened condensed milk. Pour over crackers.

Bake for 10 to 12 minutes or until mixture is bubbly and slightly darkened. Remove from oven; cool for 1 minute.

Sprinkle with morsels. Let stand for 5 minutes or until morsels are shiny; spread evenly. Sprinkle with nuts; press into chocolate. Cool in pan on wire rack for 30 minutes. Refrigerate for about 30 minutes or until chocolate is set. Remove foil; cut into pieces.
