Upside Down Apple Pecan Pie

Oh, this is an ooey-gooey delight, with a rich, chocolate POW!  And it's ridiculously easy to make.
I make my cake from scratch, 'cause that's how I roll, but I've given the directions for a cake mix.  Either way this is a fabulous no-fail dessert.

German Chocolate Upside-Down Cake

c chopped pecans

pkg german chocolate cake mix*

pkg cream cheese, room temp.

c confectioner's sugar

This classic Roast Turkey Recipe is cooked to the perfect temperature inside and out, with extra crispy brown skin and juicy and flavorful turkey meat! Start it upside down and finish it breast side up for the absolutely perfect result!

Roast Turkey Recipe

turkey (10-15 lbs.)

unsalted butter

olive oil

chicken broth

Rosemary

thyme

Lemon

garlic (cut in half crosswise)

Tablespoon Butter

Oregano

Thyme

Sage

Black Pepper

Nutmeg

Optional: Brine your turkey 2-3 days prior to roasting.

Remove the neck and giblets and pat the turkey completely dry.

Let the turkey sit out for an hour or until it gets close to room temperature. This ensures it will cook evenly.

Stuff the turkey with 1 Tablespoon butter, ½ lemon, thyme, rosemary, and garlic cut in half crosswise. Optional: Truss the legs by tying kitchen twine around them.

Move oven rack 1 level below the center. Preheat oven to 425 degrees.

Massage the entire turkey with butter and olive oil, getting into every nook and cranny. If desired, rub the turkey with the seasoning mix.

Place ¾ cup chicken broth on the bottom of the pan. Place the turkey breast side down on a roasting rack, tucking the wings underneath the bird. Roast for 20 minutes. Rotate the pan 180 degrees. Roast for 20 more minutes.

Remove from the oven and decrease heat to 350° degrees. Flip it so that it’s breast-side-up (Use Ove-Gloves or oven mitts). Baste it with ¾ cup chicken broth.

*At this point, the thighs are around 110° and the breast is around 85° (just what we want)!

Insert a thermometer into the thickest part of the breast and return it to the oven.

Roast until the thermometer reads 160°. Remove from the oven. It will reach 165 degrees while it sits.

Pro Tip: As the turkey nears completion, check on the color and increase heat to 500 degrees if additional browning is desired.

Let it sit for a full 20-30 minutes to allow the meat to fully absorb the juices before you slice into it.

While the turkey rests, prepare turkey gravy with the drippings in the pan.

A wonderful example of a classic dessert!  This will be a hit any place you serve it: potluck bake sale, brunch... or breakfast!

Preheat oven to 350°F. Generously coat a 12-cup muffin pan with non-stick cooking spray.

In a medium bowl, whisk flour, cornstarch, baking powder and salt together until combined.

In a large bowl, using a hand mixer or stand mixer, beat 3/4 cup Splenda Original Granulated Sweetener, eggs and vanilla until frothy and thick, about 3 minutes. Add 4 tablespoons melted butter and oil and beat until combined.

Add flour mixture and milk in 3 alternating batches, beating well between each addition, until combined.

In a small bowl, whisk remaining melted butter and remaining sweetener together until combined.

Pour melted butter mixture evenly into each muffin cup. Arrange strawberry slices in a circle around the bottom edge, and one cherry in the center of each muffin cup. Divide batter evenly among muffin cups, filling about two-thirds full.

Bake until light golden brown, or until toothpick inserted into the center comes out clean, about 20-23 minutes.

Run small knife around edge of each cake to help loosen from pan. Invert muffin pan onto cooling rack to release cakes. Serve cakes with whipped topping and mint sprigs

This is a super simple pineapple upside-down cake, that's just a little different. Using crushed pineapple ensures you get pineapple in every bite. In the baking process, the pineapple and brown sugar crystallize a bit. Walnuts add flavor and crunch. The super moist cake part is filled with flavor from the pineapple juice. While this isn't your traditional pineapple upside-down cake, it's just as good.

Preheat oven to 350°F (180°C) and grease a 9-inch (23cm) cake pan.

In a bowl, cream together the butter and sugar.

Whisk in the eggs, vanilla and milk until fully incorporated.

Add the flour, baking powder, salt, and cinnamon. Whisk until combined.

For the sauce, melt butter in a saucepan over medium heat, and stir in the brown sugar. Bring to a boil and continue to stir for 30 seconds, or until vigorously bubbling.

Pour the sauce into the greased cake pan.

Arrange the apples on top of the sauce in a circular pattern. Pour cake batter on top of apples and smooth the top of the batter.

Bake for 45-55 minutes, or until the cake is done (the top will spring back when gently poked).

Cool for 10-15 minutes and loosen the sides of the cake by running a butter knife around the edge.

Place a plate upside down on top of the pan, then invert the pan, flipping the cake onto the plate.

Garnish slices with vanilla ice cream or whipped cream.

Caramel Apple Upside-Down Cake

(2 sticks) butter, divided

(15.25-ounce) box yellow or butter flavored cake mix

Preheat the oven to 325° F. Add 1/2 cup (1 stick) of the butter and the brown sugar to a well-seasoned, medium (about 10.25") cast-iron skillet. Place the skillet over medium heat, and stir until the butter is melted and the mixture is combined. Remove from the heat.

Melt the remaining 1/2 cup (1 stick) butter in a small bowl in the microwave. In a large bowl combine the cake mix, eggs, melted butter and 1 cup water. Mix well.

Place the sliced apples in the skillet on top of the caramel mixture arranging them in whatever fashion you like. Pour the cake batter on top of the apples. Bake 45 to 50 minutes or until a toothpick inserted in the center comes out clean. Immediately cover the skillet with a platter and invert to remove the cake.

Remove the puff pastry from the freezer and place into the refrigerator to let thaw overnight. 

Preheat oven to 400 degrees Fahrenheit.

Remove the pastry from its packaging and flatten it out a bit about a couple inches. You will need a little bit of flour to it prevent sticking to your countertop. 

With a pizza cutter or knife cut into 6 even portions. 

Make the egg wash. Crack the egg into a small bowl and scramble with a fork or whisk until light and foamy.

Line a metal tray or sheet pan with parchment paper. 

Drizzle a little honey and top with sliced apple. Place a portion of puff pastry over the apple and honey. 

Lightly press on the sides of the pastry to seal it down a bit. Brush with the egg wash and it’s ready to bake.

Place 4-6  slices of banana and top with Nutella. Place a portion of puff pastry over the banana and Nutella.

Nutella Banana

Drizzle a little olive oil and top with dried basil. Layer with sliced tomato and sprinkle Parmesan cheese. Place a portion of puff pastry over the tomato and parmesan.

Place 4-6 pieces of pepperoni and top with mozzarella. Spread pizza sauce evenly and top with a portion of the puff pastry over the pepperoni and mozzarella cheese.

Place into the oven and bake for 12 minutes until golden brown. Let fully cool and flip them over. Enjoy.

Set a 10” cast-iron skillet over low heat; add butter to melt. Remove from heat and sprinkle with Splenda Brown Sugar Blend. Spread mixture evenly in pan. Arrange pineapple slices and cherries over mixture; sprinkle with pecans. (Alternately, pour melted butter into a 10” round x 2” high cake pan and proceed as directed.)

In a bowl, combine cake flour, Splenda Sugar Blend, baking powder, baking soda, and salt. Use a pastry blender or two knives to cut butter into flour mixture until crumbly.

In another bowl, stir together buttermilk, egg substitute, and vanilla extract.

Add ⅓ of the buttermilk mixture to flour mixture. Use an electric mixer on low speed to mix until blended, then beat at medium speed for 30 seconds or until batter is smooth. Repeat procedure with another ⅓ of the buttermilk mixture. Add remaining buttermilk mixture; beat for 30 seconds or until mixture is smooth. Transfer batter to prepared pan.

Bake for 35–40 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 5 minutes; run a thin metal spatula around edge to loosen cake. Place a serving plate over pan; use potholders to invert. Serve warm or at room temperature.
