Peanut Butter Cookies

(550 mL) all-purpose flour

baking soda

(2 mL) salt

(2 sticks) (250 mL) Becel® salted margarine sticks or unsalted margarine sticks

(250 mL) firmly packed light brown sugar

(60 mL) granulated sugar

eggs

vanilla extract

(125 mL) chunky peanut butter

Step 1

Preheat oven to 375°F (190° C). Combine flour, baking soda and salt in medium bowl; set aside.

Step 2

Beat Becel® salted with sugars in large bowl. Beat in eggs and vanilla until blended. Gradually add in flour mixture; beat just until blended. Stir in peanut butter. Drop by tablespoonfuls on ungreased baking sheets, 2-in. (5 cm) apart. Flatten slightly in crisscross pattern with fork.

Step 3

Bake 7 minutes or until edges are golden. Cool 2 minutes on wire rack; remove cookies from sheets and cool completely.

Classic Sugar Cookies

(625 mL) all-purpose flour

baking powder

(1 mL) salt

(175 mL) granulated sugar, divided

(125 mL) icing sugar

Preheat oven to 350°F (175°C).  Combine flour, baking powder and salt in medium bowl; set aside.

Beat Becel® sticks, 1/2 cup (125 mL) granulated sugar and icing sugar in large bowl with electric mixer until light and fluffy. Beat in egg and vanilla until blended. Gradually beat in flour mixture just until blended.

Shape dough into 1-inch (2.5-cm) balls, then roll in remaining 1/4 cup (50mL) granulated sugar; arrange on ungreased baking sheets, 2 in. (5 cm) apart. Flatten each with the bottom of a glass.

Step 4

Bake 10 minutes or until edges are slightly golden. Cool sheets 2 minutes on wire rack; remove cookies from sheets and cool completely.

Triple Chocolate Cherry Cookies

(75 mL) white chocolate chips

(75 mL) dark chocolate chips

(125 mL) milk chocolate chips

(125 mL) dried cherries

Beat Becel® sticks with sugars in large bowl. Beat in eggs and vanilla until blended. Gradually add in flour mixture; beat just until blended. Stir in chocolates and cherries. Drop by tablespoonfuls on ungreased baking sheets, 2-inches (5 cm) apart.

Bake 7 minutes or until edges are golden. Cool cookies on sheets 2 minutes on wire rack; remove cookies from sheets and cool completely.

'OAT'ver the Top Spiced Chai Muffins

(30 mL) flax meal *

(75 mL) water *

(500 mL) all-purpose flour

(175 mL) firmly packed light brown sugar

(15 mL) baking powder

(5 mL) cinnamon

(2.5 mL) ground ginger

(2.5 mL) ground cardamom

(1 mL) ground nutmeg

(1 mL) ground clove

(250 mL) oat milk

(125 mL) Becel with Oat M!lk, melted

(125 mL) all-purpose flour

(125 mL) rolled oats

(125 mL) firmly packed light brown sugar

(1 mL) cinnamon

(1 mL) ground cardamom

nutmeg clove

(75 mL) Becel with Oat Beverage margarine

Preheat oven to 375°F (190°C). Line 12-cup muffin pan with paper cupcake liners; set aside.

Combine flax meal and water, and let stand 10 minutes.

Combine flour, sugar, baking powder, spices and salt in large bowl until blended. Stir in oat milk, Becel with Oat M!lk margarine and flax egg mixture until smooth.  Evenly spoon into prepared pan.

For STREUSEL TOPPING, combine flour, oats, sugar and spices in medium bowl.  Add Becel and mix with fork until mixture resembles coarse crumbs.  Sprinkle evenly over muffins.

Step 5

Bake on middle oven rack 18 to 20 minutes until toothpick inserted in centres comes out clean. Cool on wire rack 10 minutes, then remove from pan and cool completely.
