These are soft, fluffy muffins made with buttermilk, oil, and there’s cream cheese swirled into the batter so it’s impossible to have dry muffins. The crumb topping adds texture and an extra pop of sweetness. I can’t resist crumb toppings and wanted to pick those sandy, slightly crunchy crumbs right off. When you’re filling your muffin pan with batter, make sure not to overfill because you need to account for the crumb topping and oven rising. They’d be so festive for holiday parties from Christmas to Valentine’s Day or anytime. Red velvet fans love it year-round and the muffins will be a hit with any red velvet lover.

Strawberry Cheesecake Cookies

This recipe makes 12 LARGE cookies. See NOTES below for instructions to make smaller cookies** Line a small baking sheet or plate with parchment paper. In a small bowl, use a whisk or mixer (depending how hard your cream cheese is) to mix the cream cheese with powdered sugar until smooth and combined.

Place 10-12 heaping teaspoons of cream cheese on the baking sheet or plate. Freeze for at least one hour, or until frozen almost completely solid.

When the cream cheese is frozen almost solid, line two large baking sheets with parchment paper and set aside. Whisk together flour, salt, and baking soda then set aside.

In the bowl of a handheld mixer or standing mixer, beat the butter and sugars together until light and fluffy (about 1-2 minutes). Mix in the egg, egg yolk, and vanilla extract.

Add in the flour, salt, and baking soda, and mix until just combined (don&#039;t over-mix).

Dice the strawberries and gently fold them in. You don&#039;t want to mix them in too much or they&#039;ll get squished and the color will bleed into the dough.

Scoop 12 heaping tablespoons of dough onto each baking sheet. They should be fairly big - if measured they&#039;d be almost 2 tbsp-sized (these are big cookies!). Press the back of a teaspoon slightly into the top of half the balls of dough to create an indent.

Remove the cream cheese filling from the freezer and place one into each of the cookies. Take a second ball of dough and place it over the cream cheese, pinching the sides to seal the cream cheese inside (see picture in post above), but making sure to not squish the cream cheese into the cookie dough. The dough may start to get sticky and a bit crumbly, and a bit harder to work with because of the strawberries, but just go with it! Wipe your hands clean before moving on to the next cookie. You should have tall balls of dough.

Refrigerate the prepared cookie dough balls and repeat with the second cookie sheet and remaining dough. Preheat the oven to 350°F and leave the cookie dough in the fridge while it preheats.

Bake the cookies in the preheated oven one sheet at a time for 13-17 minutes, or until the edges are slightly golden brown and the tops are set. Remove from the oven and leave them on the baking sheet for 10-15 minutes, then transfer to a cooling rack to cool completely.

Heat the oven to 220C/200C fan/gas 7. Bring a large pan of salted water to the boil, add the potatoes and cook for 5 mins. Drain and leave to steam-dry in the <a href="https://www.bbcgoodfood.com/content/test-five-best-colanders">colander</a> for a few minutes. Toss the potatoes with the Cajun seasoning, half the oil and a good pinch of salt. Tip onto a <a href="https://www.bbcgoodfood.com/content/kimberley-wilsons-top-5-baking-trays">baking tray</a> and roast for 25-30 mins or until golden and crisp, tossing halfway through.

To make the slaw, combine the cabbage, onion, mayonnaise, soured cream and&nbsp;chipotle paste in a bowl until the cabbage and onion are well coated. Set aside.

Rub the steak with the remaining oil and season both sides. Heat a <a href="https://www.bbcgoodfood.com/content/test-five-best-griddle-pans">griddle pan</a> or non-stick frying pan over a high heat until very hot. Add the steak to the pan, cook for 2 mins on one side, then 3 mins on the other. Remove, put on a <a href="https://www.bbcgoodfood.com/howto/guide/board-choice">chopping board</a>, cover with foil and leave to rest for 5 mins. Slice into strips.

Serve the steak with the potatoes scattered with the coriander and a pile of the spicy slaw.

Pre-heat oven to 450 F.

Prepare 2 - 3 " mini cake pans by spraying them with oil and dusting with flour. Don't skip the flour or the cakes will stick.

In a medium microwave safe bowl, melt butter for 30 seconds.

Add white chocolate chips and let sit for a minute.

Stir chocolate chips and butter together until white chocolate chips are melted. If the chocolate chips do not melt then microwave for 5 second intervals then stir until they are all melted into the butter.

Add vanilla, food coloring, sugar and salt to the butter mixture and stir.

Add egg and egg yolk and stir again.

Sprinkle flour over the top of batter and mix it in well.

Pour into prepared mini cake pans and bake for 8:30-9 minutes. In my experience 10 minutes will be too long but all ovens vary slightly. The sides will fell like they are starting to set but the middle will feel runny.

Remove from the oven and let them cool for 1 minute before gently flipping them over onto the serving plate.

Cook the gnocchi in a large pan of lightly salted, boiling water. Drain and reserve 200ml of the cooking water.

Heat the butter in a large frying pan. Add the gnocchi, cheese and pepper as well as 150ml of the cooking water, raise the heat a little and stir vigorously until melted and the gnocchi is well coated. Pour in more of the reserved water if you like it saucier. Season with a little salt. Transfer the gnocchi to bowls and serve with a mixed salad, if you like.

Delicate smoked trout makes a great base for a smooth Italian rice pot with added mascarpone cheese, lemon and chives

In a frying pan, gently fry the onion in the oil until softened. Tip in the risotto rice and cook for 2 mins, stirring continuously. Add a third of the stock, and simmer, gently stirring until the stock has been absorbed. Add half the remaining stock and carry on cooking, stirring a bit more, until that has been absorbed too.

Tip in the final lot of stock and cook until creamy and the rice is just tender. Stir in the trout, mascarpone, lemon zest, most of the chives and some seasoning – it won’t need too much salt. Cover and leave for 5 mins to rest. Finally season with a squeeze of lemon juice, divide between two bowls and top with the remaining chives. Great with a green salad on the side.

Heat 1 tbsp of the oil in a frying pan. Tip in the onion, garlic and chilli flakes and cook over a low heat for 10 mins until soft. Add the tomatoes and ¼ can of water and cook for 8 mins until thick, then stir through the capers and olives. Can be done earlier in the day and chilled.

Meanwhile, heat oven to 220C/200C fan/ gas 7. Put the celeriac on a non-stick baking sheet. Add another 1 tbsp oil, season and mix with your hands. Spread into a thin layer and roast for 25 mins, stirring once, until golden and tender.

Put the kale in a steamer and cook for about 5 mins until tender. When done, pop a knob of butter on top, squeeze over a little lemon juice and season.

Heat the remaining oil in a non-stick frying pan. Season the fish fillets, then put in the pan, skin-side down. Cook for 3-4 mins until the skin is golden and the fish is almost cooked through. Turn and cook for 1-2 mins more, depending on the thickness of the fillets.

Meanwhile, heat the sauce through, season and add the parsley. Spoon the sauce onto 2 plates, top with the fish and serve with the celeriac chips and kale.
