Keep it simple this weekend and have a go at this quick and easy triple-tested vanilla cookie recipe. Your bakes can be stored and enjoyed throughout the week.

Vanilla cookies

175 g (6 ounces) unsalted butter, softened

200 g (7 ounces) golden caster sugar

350 g (12 ounces) plain flour

vanilla bean paste

golden icing sugar

These extra cute cookies are easy to make and you get to enjoy a chocolate and vanilla cookie in one!

Checkerboard Cookies

all purpose flour

cocoa powder

In the bowl of your stand mixer fitted with the paddle attachment mix together the butter and sugar for 2 minutes.

Add in the egg, the yolk, vanilla, baking powder, and salt and mix for 1 minute until smooth, scraping the sides of the bowl as necessary.

Turn the mixer to low and add in the flour, mixing until just combined.

Divide the dough in half, removing half from the mixing bowl.

Add in the cocoa powder to the remaining dough in the mixing bowl and mix until incorporated.

Form each dough into a squared off log, 2- inches tall and 6- inches long. Make sure both are the same size.

Place dough on a baking sheet and cover with cling wrap. Place dough into the refrigerator to chill for at least 1 hour.

Using a sharp knife slice the dough into thirds, longwise. Then turn the dough one turn and cut into thirds again. You will have 9 strips. Repeat the process with the other dough. You will have 18 strips total.

Lay 1 piece of vanilla dough, one piece of chocolate, and another piece of vanilla on a flat surface next to each other. Top the 3 strips with alternating colors. Repeat this once more, so you have a square log. Press the dough strips together tightly, keeping the square shape. Repeat this with the remaining dough.

Refrigerate again for at least 30 minutes.

Preheat the oven to 350°F. Line a baking sheet with Reynolds Kitchens® Parchment Paper.

Remove the dough from the refrigerator and slice into 1/4- inch pieces.

Place the pieces on the prepared baking sheet.

Bake for 9-10 minutes, or until set. Transfer to a wire rack to cool completely.

Pure Vanilla Cookie Easy Recipe

/ 2/3 cup of butter (soft at room temp)

/2/3 cup of light brown sugar

/ 3/4 cup + 2 tbsp of caster sugar

plain flour

baking soda

bakin powder

tbsp vanilla extract

For The Icing: (optional)

powdered sugar

water

Beat the sugars and butter together until creamy.

Add the egg, vanilla, mix, then fold in the flour, bicarb, baking powder and salt.

Chill the cookie dough in the fridge for 30 minutes.

Preheat the oven to 360F/180C and line 2 baking sheets with parchment paper.

Shape the cookie dough to 2.30oz/65g balls. Should make about 10. And place 2-3 each per baking sheet with plenty of space between them. Do not flatten them, they will flatten naturally when they bake.

Bake in the oven for 13 minutes for gooey middle, or 15-16 minute for crispier cookies.

Let them cool on the sheet for 10 minutes before moving them and repeating the process with the rest of the cookies.

If you would like to go for the icing, mix the powdered sugar with vanila and touch of water to reach the right thick consistency. Then spread/pipe the icing on top of the cookies.

Southern Vegan Banana Pudding (Gluten-Free, Allergy-Free)

Cups Unsweetened Coconut Milk (not canned!)*

TB Corn Starch

Tsp Pure Madagascar Bourbon Vanilla Extract

To make the vanilla pudding, combine the non-dairy milk, sweetener, starch, and vanilla together in a large sauce pot on the stove.

Mix well to reduce lumps from the starch and bring the pot to a boil over medium-high heat.

Reduce the pot to medium-low heat and continue to mix frequently for the next 10 minutes.

At this time the pudding shoud have thickened and you can remove the pot from the heat, allow it to come to room temperature, and then transfer the pudding to the fridge to thicken-up even more as it becomes cold (it will, don't worry!).

Vegan Vanilla Pudding:

 In your serving dish, start with a single layer of vanilla wafers, then a layer of banana slices, and then enough of the cold vanilla pudding to cover everything.

Repeat this layering one more time (or as many times as you can!).

To finish the banana pudding, top with the homemade fluff (or whipped topping), sprinkle some extra crushed cookies, and place on additiona banana slices.

Refrigerate for at least 2-4 hours before serving.

Southern Vegan Banana Pudding

A buttery and delicately beautiful cone-shaped cookie.

Krumkake (Norwegian Waffle Cookies)

unsalted butter,

eggs

milk

cornstarch

Whisk salt, cornstarch and flour together in a medium bowl.  Set aside.

Combine granulated sugar and eggs in a large bowl and whisk until fully combined and no lumps of sugar remain.  Slowly whisk in cooled butter and vanilla extract. Keep whisking until the mixture is emulsified and cohesive.

Add milk and water and whisk until fully combined.  Add flour mixture and whisk until batter is smooth and no lumps remain.  Rest batter for 30-45 minutes at room temperature.

Working with 1 tablespoon of batter at a time, bake cookies on a krumkake iron, either an electric model or one that goes on the stove, according to manufacturer’s instructions.  It may take a few tries to get the hang of how your iron works so be patient. I like to err on the side of a cookie that is darker in color. They are more crisp and have better flavor.

Remove the hot cookie from iron and place it on a clean kitchen towel.  Quickly, while the cookie is still hot, carefully roll the krumkake around a cone-shaped form.  Use the towel to help start the rolling process if the cookies are too hot for your fingers. The sooner you begin rolling the better.  The cookies will almost immediately start to harden as they cool and become difficult or impossible to roll into a cone shape. Let the rolled cookie rest with the form inside, seam side down on the clean towel, while the next cookie is baking.  Remove the cone form and transfer krumkake to a wire rack to cool completely. Repeat with remaining batter. Serve.

This simple vanilla cookie will be your new go-to easy cookie recipe. A soft and chewy classic vanilla cookie, it comes together in less than 10 minutes and is a super versatile base cookie recipe. Read my post for more information on how to make homemade cookies!

Soft and Chewy Classic Vanilla Cookies

granulated sugar

all-purpose flour, sifted

tsp (3 grams) kosher salt

½ tsp baking soda

Preheat the oven to 350°f / 180°c. Line 2-3 baking sheets with parchment paper (you may have to bake these in several batches depending on how many trays your oven can tolerate).

In the bowl of a stand mixer fitted with the paddle attachment, cream the butter, sugar, and vanilla together on high speed until light and fluffy (this step can also be done with an electric hand mixer). Add the egg and mix to combine. Sift together the flour, salt, and baking soda in a small bowl. Add to the mixer, and mix until just combined. 

Place the granulated sugar for rolling in a small bowl.

Using a 2 Tbsp cookie scoop, scoop balls of dough (about 45g each) onto the prepared baking sheets. I like to do 6-8 on each sheet - start with 6 to make sure that they will not join together, and then move to 8 on the next sheet once you know how much they spread.

Roll each ball of dough between your hands to form a ball, then roll in the sugar before placing on the baking sheet. Leave any mixture that you are not baking off just yet in the bowl and scoop just before baking.

Bake the cookies for 11-12 minutes or until puffy and set around the edges. Remove from the oven and cool on the pan for 10 minutes - the cookies will deflate as they cool. Transfer to a wire rack and allow to cool completely. Repeat the baking process with the remaining cookie dough.

Store leftover cookies in an airtight container at room temperature

These are so easy to make they whip up in no time. What a great base for your favorite add ins. I did put sprinkles in it for the kids and they loved them. I had no baking soda on hand so I used a teaspoon and a half of baking powder. Such a soft cookie. Definitely my new go to.

Hi. I made the cookies yesterday and they were delicious. I added peanut butter chips to half the recipe which was a hit. Only thing was we found them very sweet. Would they work with less sugar? Maybe 250gm instead of 300g? I guess this might change the consistency? They are a great cookie though!!
