In times when butter is very expensive, I have been experimenting with an easy vanilla cupcakes recipe without butter.

Easy Fluffy Vanilla Cupcake Recipe without Butter

120 gms White sugar

ml Oil. (Rapeseed, Sunflower

120 gms Plain Flour

1.5 tspn Baking Powder

UK Large Egg

tspn Vanilla Extract or Vanilla Bean Paste

120 ml Milk (Whole, semi skimmed, nut milk, soya milk

Pre-heat your oven to 150c fan, 170c, 325f, GM 3

Line a cupcake pan with 8 cupcake cases

In a large bowl, or stand mixer, mix together the sugar and oil

Add the flour and baking powder and mix

Add the egg, vanilla extract and milk and mix to a runny cake batter

Evenly distribute the batter between the cake cases

Bake for 15 to 20 minutes or until the cake are well risen and are golden brown

Remove from the oven and immediately transfer to a wire rack to cool.

Moist Vanilla Cupcakes

260 ml Milk* (room temp; see notes for options)

tsp White Vinegar* (or lemon juice)

g Plain Unsweetened Yogurt* (or greek yogurt

185 g Cane Sugar* (or castor sugar)

80 ml Vegetable Oil (or any neutral oil)

tsp Vanilla Extract

g Cornstarch

1½ tsp Baking Powder

¼ tsp Baking Soda

210 g All Purpose Flour

Salt

Sugar (sifted; or icing sugar)

Vanilla Extract

ml Whipping Cream* (room temperature; see notes for options)

Preheat the oven to 350℉(175℃) and line a cupcake pan with cupcake liners.

In a bowl combine and mix room temperature milk, vinegar & yogurt. Let it sit for 5 min until it is slightly curdled.

Add sugar, oil & vanilla extract. Mix with a hand whisk until sugar granules are dissolved and oil is combined.

Combine and sift all the dry ingredients (flour, corn starch, baking powder, baking soda and salt) into liquid ingredients. Mix very gently with a hand whisk or electric whisk until the batter is smooth.

Fill the cupcake liners with the cupcake batter 3/4 way and bake for 13-15 minutes or until firm to touch. Cool them completely at room temperature.

Vanilla Cupcake Instructions

Add all the butter to a mixing bowl and beat it with an electric whisk or a paddle attachment at medium speed until it is soft & fluffy.

Add sifted powdered sugar into the bowl in 2-3 parts and beat for 4-5 minutes or longer if needed to get a fluffy texture.

Pour whipping cream into the buttercream and mix on medium speed for 2-3 minutes.

Prepare a piping bag fitted with a star tip nozzle and fill it with frosting.

Arrange all the cupcakes on a plate.

Pipe frosting on the cupcakes with a nozzle or simply use an ice cream scoop. Enjoy!
