My favorite vegan avocado toast recipe! Super simple, healthy, yet very filling! Perfect for an awesome breakfast, brunch, or a quick lunch.

Simple Vegan Avocado Toast Recipe

bread ((or just pick your favorite))

avocado ((or 2 small ones))

lime lemon

chickpeas

smoked paprika ((sweet

olive oil

sundried tomatoes in olive oil

sea salt

black pepper

pea shoots ((see notes))

black sesame seeds

Toast the bread until golden and crisp.

Make a paste with the sundried tomatoes by chopping them as finely as possible.

Heat the olive oil in a pan, add the chickpeas, sprinkle with the smoked paprika, and stir. Salt to taste. After 5 minutes, add the sun-dried tomato paste and turn off the heat.

Slice the avocado in half, smash it with a fork. Sprinkle with lime juice (or lemon juice) and a pinch of salt and pepper.

Top the bread with smashed avocado, warm chickpeas, pea shoots, and sesame seeds. Enjoy!

Pesto Avocado Toast with Fresh Tomatoes

tsp sea salt ((plus more to taste))

Tbsp extra virgin olive oil

Tbsp water ((plus more as needed // or sub additional olive oil))

Tbsp basil pesto ((ingredients listed above))

tomato ((heirloom

PESTO: To a food processor or small blender, add the basil, garlic, lemon juice, nutritional yeast, and sea salt and blend/mix on high until a loose paste forms.

Add olive oil a little at a time (streaming in while the machine is on if possible) and scrape down sides as needed. Then add water a little at a time until the desired consistency is reached — a loose, scoopable sauce that’s not too thin or watery.

AVOCADO TOAST: Toast bread in a toaster or in the oven until golden brown. Top with sliced avocado and use a fork to smash. Then add 2 tablespoons pesto (per slice of bread) and spread it over the avocado with a fork or spoon. Add sliced tomatoes and sprinkle with a pinch each of sea salt and red pepper flakes. Enjoy right away!

Pesto can be made in advance and used for avocado toast throughout the week. Store leftover pesto in a sealed container in the refrigerator for up to 1 week. After that, pour into an ice cube tray, freeze, and store up to 1 month or more. Thaw at room temperature or in the refrigerator overnight.

Toast some slices of your favorite bread.

Meanwhile, peel the avocado and remove the pit. If you want the avocado to look pretty, then slice it, arrange the slices on the bread, drizzle the avo with lime juice and sprinkle it with the spices.

You can also mash the avocado in a bowl with a fork, add the spices, and the lime juice, then top the toasted bread with the mashed avocado. Enjoy!
