The Best Damn Vegan Biscuits

almond milk

lemon juice

all-purpose flour

Tbsp baking powder

tsp baking soda

tsp sea salt

Tbsp non-dairy, unsalted butter ((I use Earth Balance))

Preheat oven to 450 degrees F (232 C), and add lemon juice to almond milk to make "vegan buttermilk." Set aside.

In a large mixing bowl, whisk together dry ingredients.

Add cold butter and use fingers or a pastry cutter to combine the two until only small pieces remain and it looks like sand. Work quickly so the butter doesn’t get too warm.

Make a well in the dry ingredients and, using a wooden spoon, stir gently while pouring in the almond milk mixture (vegan buttermilk) 1/4 cup (60 ml) at a time. You may not need all of it. Stop when it resembles a slightly tacky but moldable dough, stirring until just combined.

Turn onto a lightly floured surface, dust the top with a bit of flour and then very gently turn the dough over on itself 5-6 times – hardly kneading. Add more flour as needed to prevent sticking.

Form into a 1-inch thick disc, handling as little as possible.

Use a 1-inch thick dough cutter or a similar-shape object with sharp edges (such as a cocktail shaker) and push straight down through the dough, then slightly twist. Repeat and place biscuits on a baking sheet in two rows, making sure they just touch – this will help them rise uniformly. Gently reform the dough and cut out one or two more biscuits – you should have 7-8 (as original recipe is written).

Next brush the tops with a bit more of melted non-dairy butter and gently press a small divot in the center using two fingers. This will also help them rise evenly, so the middle won’t form a dome.

Bake for 10-15 minutes or until fluffy and slightly golden brown. Serve immediately. Let remaining biscuits cool completely before storing them in an airtight container or bag.

Soft, flaky biscuits are believed to be a pre-Civil War Southern creation. And because flour was expensive back then, they were enjoyed as a special treat on Sundays. The concept may have been inspired by British biscuits which were more like a thin cookie or cracker.

Our recipe resembles the Southern version, but is our plant-based take on this delicious, buttery creation.

Fluffy, soft vegan biscuits are so easy to make! They require just 1 bowl, 7 ingredients and 30 minutes. Oil free and wholesome, but not sacrificing on taste!

Easy Vegan Biscuits

unsweetened non-dairy milk

apple cider vinegar

all purpose flour, plus more as needed

almond flour

baking powder

baking soda

salt

Preheat the oven to 425 degrees F.

Stir the apple cider vinegar into the non-dairy milk and set aside to curdle.&nbsp;

Whisk the 4 cups flour, almond flour, baking powder, baking soda and salt in a large bowl.

Pour the milk/vinegar mixture into the dry ingredients, and mix. Avoid over stirring.&nbsp;

Dump the dough onto a floured surface and gently work it together with your hands, adding a little more flour if it's too sticky. Roll the dough about 1/2 inch thick, then use a biscuit cutter and cut out the biscuits. Continue re-rolling the dough until you have used it all.

Place the biscuits on a baking sheet lined with a silicone mat or parchment paper. Bake for about 12 minutes until light golden brown and fluffy. Allow to cool for a few minutes, serve and enjoy!

Preheat oven to 475F.

In a blender or food processor, puree the cashews and water into cream.

In a medium bowl, whisk together the flour, baking powder, and salt.

Add the cashew cream and stir until a shaggy dough is formed.

Turn the dough out onto a well floured surface and fold the dough over on itself three or four times, sprinkling flour as needed if it is too wet. The main goal is to avoid overworking the dough. I use a bench scraper for this so that my hands barely touch the dough until it’s time to pat it out.

With floured hands, pat the dough out until it is about 1/2-3/4” thick.

Using a floured biscuit cutter, cut out biscuits and transfer to a baking sheet about 1 inch apart.

Bake on the upper rack at 475F for 10-12 minutes.

Heat the vegan butter in a large skillet over medium. Once melted, saut&eacute; the onions for 3 minutes, or until translucent. Add the minced garlic and red pepper flakes, and cook for another 30 seconds.

Add the vegan sausage crumbles and brown them in the pan for about 8-10 minutes. Once the sausage is browned, sprinkle in the flour and stir the mixture.

While constantly whisking, add &frac12; cup of vegetable broth and soy milk at a time until all of the liquid is gone. Bring the gravy to a simmer for an additional 5-10 minutes, or until it is thickened.

Taste and season with salt and pepper to your liking, then remove from the heat and keep warm while you make the vegan biscuits.

Serve the gravy warm over a few freshly baked vegan buttermilk biscuits. Happy eating!

In a small bowl, combine the plant-based milk and vinegar. Set aside.

Mix the flour, baking powder, baking soda, sugar, and salt. Add in the vegan butter and combine with a pastry cutter. Put in freezer for 10 minutes.

Mix the squash puree and plant-based milk and vinegar combo. Stir in the chopped sage.

Add wet ingredients to the dry and stir until the wet is fully incorporated. Don’t overwork it, though. You don’t want the vegan butter to melt.

Dust a clean work surface with flour. Roll out the dough all at once or in batches and use an upside-down drinking glass to cut uniform biscuits. Place a sage leaf on each biscuit and brush with a little melted vegan butter.

Bake for 12- to 15 minutes.
