Lentil Bolognese With Spaghetti

spaghetti

red lentils ((split

olive oil

oz mushroom (, chopped small)

onion (, chopped small)

garlic (, finely chopped)

carrots

tsp dried oregano

basil

thyme sage

onion powder

yeast (optional)

tomato paste (, optional)

tsp salt (depends on the salt content of the sauce. Use less and add more later to taste)

black pepper and red pepper flakes

red wine

(or use veggie broth)

fresh basil or thyme

Cook the Spaghetti according to instructions on the package or prepare other pasta.

Wash the lentils, drain and add to pot with 2 cups of water. Cook over medium heat for 11 to 14 mins or until just about cooked. The water will start boiling half way through. Stir once in between to cook evenly. Drain if there is too much water (a few tbsp is ok) Set aside. Or use 1.5 cups cooked lentils, chickpeas or split peas of choice.

Heat a skillet over medium heat, add onion, mushroom, garlic and a good pinch of salt. Cook for 5 minutes or until golden. Stir occasionally.

Add the carrots, herbs, spices and mix in. Cook for 2 mins. (Variation: You can also add 1/4 cup or more finely chopped walnuts for additional texture)

Add the marinara/pizza sauce, salt, pepper, wine/broth and mix in. Bring to a boil. (If using diced tomatoes, double the herbs, add 1 tbsp tomato paste and cook for 10 to 15 minutes. Mash the large pieces of the tomatoes and continue).

Fold in the cooked lentils and mix well. (add 1 tbsp tomato paste if the mixture is not tomatoey enough). Cook for 1-2 minutes. Adjust consistency by adding more water if needed. Taste and adjust salt and flavor.&nbsp; Then cover, take off heat and let sit for another few minutes for the flavors to develop.

Garnish with fresh basil and optional&nbsp;vegan parm. Serve over cooked spaghetti, pasta or mashed potato/root veggies or roasted veggies.

I use red lentils in it as they add texture but are not overly earthy like whole lentils. You can use whole brown or green lentils, chickpeas as well or skinned whole red lentils. Add a bit more herbs/flavor to preference depending on the lentils used. 

I serve this sauce over Spaghetti! It also goes well over zucchini pasta as well, or some mashed root veggies or mashed potato + veggie cakes (great option for gluten-free).

MUSHROOM LENTIL BOLOGNESE WITH SPAGHETTI | Vegan Richa Recipes

Rich, bold and savory, this Vegan Bolognese is reminiscent of the Italian classic we all love. The filling combines mushrooms, ground walnuts, grated carrots, and onions for a meaty mince that is hearty and satisfying!

Vegan Bolognese Sauce

grapeseed oil (or preferred oil)

cremini mushrooms (, finely chopped (sub baby bella mushrooms))

onion (, grated)

carrots (finely grated (*see note))

garlic (, minced or crushed)

tomato paste

gluten-free tamari (, low sodium (sub soy sauce))

Italian seasoning

tomatoes

vegetable broth (, low sodium)

walnuts (,

nutritional yeast (* Optional (see note))

bay leaf

Salt and fresh-cracked pepper (,

Heat a Large Pan (with high sides) over medium-high heat. Add oil and wait until it&#x27;s hot and shimmering. Now add mushrooms and sauté until they have released their moisture, reduced in size and are slightly browned. The pan should be mostly dry (about 7-8 minutes).

Reduce heat to medium and add onions, carrots, and garlic. Sauté until cooked down about 3-4 minutes.

Make a small open space in the pan to add the tomato paste (make sure it&#x27;s touching the surface of the pan). Cook for 30 seconds and then stir into the veggies.

Add tamari and Italian seasoning. Cook for 30-60 seconds until fragrant.

Turn up the heat to medium-high and pour in the red wine. Cook until almost completely reduced, about 2-3 minutes. Turn heat back to medium.

Add the tomatoes, broth, walnuts, nutritional yeast bay leaf. Bring to a simmer then reduce to a low simmer. Cook until sauce thickens and flavor deepens, about 10-15 minutes (longer for deeper flavor). Add salt and pepper to taste. Remove bay leaf and remove from heat. Let the sauce sit a few minutes to thicken. Top over freshly-cooked pasta if desired.

This Mushroom and Lentil Ragu Recipe is a delicious and vegan alternative to the classic Italian Bolognese Pasta. It&#039;s very easy to make with wholesome ingredients, full of umami flavor, nourishing, satisfying and makes the perfect weeknight dinner! You can serve the ragu with your favorite (gluten-free) pasta or over mashed potatoes, creamy polenta, gnocchi, rice or just with naan on the side.

Mushroom and Lentil Ragu Pasta

olive oil (for frying)

onion (finely chopped)

carrot (finely chopped)

celery (finely chopped)

8,8 oz mushrooms (finely chopped)

soy sauce (or tamari sauce

garlic (minced)

dry green lentils (or brown lentils or canned lentils (*see notes))

red wine (or sub more veggie broth/water or coconut milk

vegetable broth (or more as needed)

tsp thyme leaves (fresh

tsp smoked paprika powder

tsp miso paste (optional)

salt (adjust

walnuts (crushed (optional))

12,3 oz pasta

Heat the olive oil in a large pan over medium heat. Add the onion, carrots, and celery. Cook for about 3-5 minutes, until the onion starts to turn translucent. Add the mushrooms and continue cooking for about 5 minutes, until the mushrooms have released most of their water. Add the soy sauce, garlic, and lentils and cook for another minute, stirring frequently until fragrant.

Pour in the wine, and cook for a minute until most of it has evaporated. Then add in the tomatoes, vegetable broth, tomato paste, bay leaf, thyme, paprika, miso (if using), and salt. Stir to combine and bring it to a boil. Reduce it to a simmer, cover the pan and cook for 30 to 35 minutes until the lentils are done. (If the sauce becomes too thick, add more veggie broth or water). Taste and adjust seasonings as needed. Remove the bay leave in the end and stir in the crushed walnuts if using.

Start to cook the pasta in a large pot of salted water according to package instructions around 15 minutes before the sauce is done. Once the pasta is al dente, drain the cooking water and toss in a little bit of olive oil (optional to prevent from sticking). Also, sauté the extra garlic mushrooms in a skillet for the topping as instructed in this recipe.

Serve the pasta with the mushroom and lentil ragu and garnish with extra garlic mushrooms, vegan parmesan cheese, and fresh herbs or any topping you like. Enjoy!

Extra Firm Tofu ((226 grams))

Walnuts ((100 grams) Finely Chopped)

Cremini Mushrooms ((480 grams))

Brown Lentils

Medium Onion (White, Yellow or Brown, Chopped)

Tbsp Olive Oil

Tbsp Crushed Garlic

tsp Dried Basil

tsp Oregano

tsp Cayenne Pepper

Tbsp Dark Soy Sauce

Tomato Paste ((130 grams))

Canned Crushed Tomato ((400 milliliters))

Tbsp Coconut Sugar

Basil

Mash the tofu with a fork and add to a mixing bowl.

Place the walnuts into the food processor and process until finely chopped and then add to the mixing bowl with the tofu.

Add the mushrooms to the food processor and process until finely chopped and add to the mixing bowl.

Add lentils to the mixing bowl.

Mix up the tofu, walnuts, mushrooms and lentils together.

Add the chopped onion and olive oil to a frying pan and sauté until the onions are softened.

Then add in your tofu/walnut/mushroom/lentil mix along with crushed garlic, dried basil, oregano, cayenne pepper and dark soy sauce and stir fry for a couple of minutes letting the bolognese cook off some of the water, so it's not too wet.

Then add in the tomato paste and crushed tomatoes and keep frying for a few minutes until you reach a good consistency.

Stir in the coconut sugar and add salt and pepper to taste.

Serve over spaghetti and top with fresh basil and vegan parmesan cheese.

Leftovers can be stored in the fridge and reheated the next day.

These Vegetarian Spaghetti Squash Boats are super healthy and ready in just 30 minutes. Filled with a vegan bolognese sauce and topped with vegan cheese!

30-Minute Vegetarian Spaghetti Squash Boats

Preheat the oven to 425ºF. Cut the squash in half, lengthwise and put them face down in a baking dish. Add enough water to cover the squash by 1/4". Roast squash for 20 minutes.

While the squash is cooking, add the remaining ingredients (minus the cheese) into a saucepan. Start with just 1/2 cup of water and add more as needed.&nbsp;Bring the pot to boil, then reduce and simmer until thickened, about 10 - 15 minutes.&nbsp;

Once squash is done roasting, remove from oven, flip over and scoop out the seeds. Fill each squash half with about 1 cup of sauce. Sprinkle with cheese.

Place the squash back into the oven and turn the oven to broil. Broil for 2 - 3 minutes, watching carefully so the cheese doesn't burn.

Remove and serve immediately!

Lentil Bolognese Recipe

½ cup carrots, small diced

celery diced

garlic, rough chopped

salt

pepper

¼ teaspoon chili flakes- optional

oregano

splash red wine (optional) ¼ cup-ish

black caviar lentils (or other small lentils- see notes)

tomatoes, tomatoes

veggie stock

hemp seeds, or crushed toasted walnuts or pecans

Heat oil in a large pot or dutch oven over medium-high heat. Add the onion and saute for 2-3 minutes stirring until fragrant. Lower heat to medium, then add the carrots, celery, garlic, salt, pepper, chili flakes, and herbs.  Saute 7-8 minutes, stirring.

Add the tomato paste, browning it just a bit in the pan (this will deepen the flavor), then deglaze with wine if you want, scraping up any brown bits.  Once most of the wine has cooked off add the tomatoes and their juices, cook them down for just a few minutes.

Add the lentils, veggie stock and hemp seeds or walnuts.  Bring to a boil, cover tightly, lower heat to low, and simmer gently 20-25 minutes, or until the lentils are tender. Uncover.

Continue cooking uncovered until most of the liquid has cooked off.  Stir in the balsamic vinegar, taste, and adjust salt, pepper, vinegar and chili flakes to your liking. Keep in mind, you want this just slightly salty if tossing with pasta.

Serve this tossed with your favorite pasta or serve it over this creamy polenta or this Instant Pot Polenta. Sprinkle with optional  pecorino cheese&#8230; or try this Vegan Cheesy Sprinkle!
