Healthy Strawberry Watermelon Smoothie

Cups Frozen strawberries, (halved (220 grams))

Cups Frozen watermelon, (cut into 1 inch cubes (214 grams))

Cup Unsweetened vanilla almond milk

Cup Avocado ((about 1/2 a large) 60 grams)

Water

Tbsp Fresh mint, (packed)

Tbsp Honey ((or agave))

- 1 tsp Ground turmeric, (to taste)

black pepper

Put all ingredients in a high-powered blender and blend until smooth, stopping to scrape down the sides as necessary. *

Vegan French Toast

soy milk

cornstarch

flaxseeds

baking powder

cinnamon

maple syrup

vanilla

bread,

vegan butter oil

For serving: maple syrup, powdered sugar, or fresh fruit

In a shallow bowl, wide enough to hold a piece of bread, whisk together the soy milk, cornstarch, ground flaxseeds, baking powder, cinnamon, maple syrup and vanilla.

Add a little bit of vegan butter/coconut oil to a pan over medium-high heat and melt. Whisk the batter again right before dipping bread, as the cornstarch will settle to the bottom of the bowl.&nbsp;

Dip each side of the bread in the batter and let soak for about 10 seconds, then add the bread to the pan and cook for 2-3 minutes on each side, until golden brown. Add more vegan butter/oil to the pan as needed in between pieces of bread.&nbsp;

Serve with maple syrup, powdered sugar and fresh fruit, if desired.&nbsp;

Each serving provides 478 kcal, 17g protein, 60g carbohydrates (of which 11.5g sugars), 16.5g fat (of which 2g saturates), 12.5g fibre and 0.8g salt. 

Tuscan beans on sourdough toast

tbsp olive oil,

red onion, roughly chopped

I’ve used no sugar, but before you start thinking this is virtuously sugar-free (which I could claim it to be), remember that the sweetness that comes from the dates is, in essence, sugar, though certainly it’s unprocessed and full of fibre at the same time.

Make these bars at the weekend, and you’ll be set up for the week if you’re someone who needs to grab-and-go in the morning.
