This Cabbage Soup is the perfect hearty meal for busy weeknights or lazy Sundays. It&#039;s easy to make, budget-friendly, and so darn tasty!

Vegan Cabbage Soup

olive oil

onion

carrots (, diced)

celery (, diced)

garlic (, minced)

tomato paste

thyme

smoked paprika

red pepper ((*optional))

bay leaf

vegetable broth (, low sodium if preferred)

head medium green cabbage (, cored and chopped (about 6 cups))

can tomatoes (, fire-roasted or regular)

cannellini beans (, rinsed & drained (about 1.5 cups))

potatoes

Sea salt (, more to taste)

pepper (,

parsley

Heat oil in a large pot over medium heat. Add the onion, carrot, celery, and a sprinkle of salt. Sauté until veggies are aromatic and are slightly softened, about 5-7 minutes.

Add in the garlic, tomato paste, thyme, smoked paprika, and crushed red pepper. Saute for 30-60 seconds until fragrant.

Pour in the vegetable broth, tomatoes, cabbage, potatoes, bay leaf, salt, and pepper. Turn up the heat to get things moving, then reduce heat slightly to maintain a medium simmer. After 15 minutes, add the beans and continue to simmer until the potatoes and cabbage are tender (about another 5-10 minutes). Stir occasionally.

Remove from heat, taste for seasoning, and add more if needed. Remove bay leaf. Sprinkle with fresh parsley and serve. Enjoy!

Hearty Cabbage Soup

low-sodium vegetable broth (or 4 cups broth, 4 cups water)

Salt and pepper (to taste)

Aromatics: Warm the oil in a large pot or dutch oven over medium heat. Add the onion, celery, and carrot and sauté for 3 to 5 minutes, until beginning to brown. Add the garlic, black pepper, thyme, and caraway seed and sauté for 1 minute, or until fragrant.

Simmer: Add the potatoes, cabbage, tomatoes, and vegetable broth to the pot and stir well. The soup may look overly thick right now, but the cabbage will release more liquid as it cooks. Bring to a boil over high heat, then reduce the heat to medium and simmer for 12 to 15 minutes, stirring occasionally, until the cabbage is tender and translucent.

Serve: Season with additional salt and pepper to taste, if necessary. Ladle the soup into serving bowl and top with freshly ground black pepper, or as desired. Serve warm; leftovers will keep in the refrigerator for up to 5 days.

Hungarian Savoy Cabbage Soup

tbsp sweet paprika powder

tbsp smoked paprika

potatoes, diced (about 2 cups)

vegetable broth

savoy cabbage

plant milk

flour (use GF if needed)

salt, pepper

sour cream

Heat up oil in a large pot, then add onion and carrots. Cook for 10 minutes, stirring occasionally. Use a few spoons of vegetable broth instead of the oil, if you prefer to keep this oil-free.

Add sweet and smoked paprika, and garlic, and cook for 20-30 seconds, just until fragrant. Then add potatoes and enough vegetable broth to cover. Bring soup to a boil, then simmer for 15-20 minutes.

Add chopped or thinly sliced savoy cabbage, plus the rest of the vegetable broth to cover the veggies, and bring to a boil again. Simmer for 10 more minutes, until potatoes and savoy cabbage are fully cooked.

Whisk together milk and flour, and pour into the soup. Cook for 2-3 minutes, until soup thickens.

Meanwhile prepare vegan sausage according to package instructions, then slice it.

Serve soup warm topped with sour cream and sausage slices. Enjoy!
