vegan cauliflower recipes

Orange Cauliflower is a vegetarian version of the popular Chinese orange chicken! And honestly, you won&#x27;t miss the meat at all. The sticky orange sauce is incredibly addicting, and the cauliflower is baked, not fried.

Orange Cauliflower

cauliflower (about 5 cups)

water

flour (see notes for gluten free)

garlic powder

salt

panko breadcrumbs (see notes

orange juice, fresh squeezed preferred

granulated sugar (see notes for substitutions)

rice vinegar

soy sauce (or tamari

ginger

garlic cloves, garlic powder

Sriracha hot sauce

cornstarch

rice

chopped green onions

sesame seeds

Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper.

Wash and cut cauliflower into bite sized pieces.

In a large bowl, add water, flour, garlic powder and salt. Whisk until well combined. Place the breadcrumbs in a medium sized bowl and set it next to the wet batter bowl. Also place your baking sheet nearby.

Add the cauliflower to the bowl with the wet batter and toss to combine, coating all the pieces well.

One by one, remove a cauliflower piece, tapping any excess batter off, and roll in the breadcrumbs to coat. Place on the prepared baking sheet and make sure they are not touching each other, or they will all get stuck together as they bake.

Bake for about 20-30 minutes until golden brown and crispy.

Roasted Crispy Cauliflower

In a large pan (large enough to fit the cauliflower and sauce), add all sauce ingredients except the cornstarch and water. Bring to a boil, and cook for a minute or two.

Mix the cornstarch and water in a small bowl to combine, and then add to the pot. Stir over medium-high heat constantly for a couple of minutes, until the sauce thickens.

Sticky Orange Sauce

Once the cauliflower is done, add it to the pan with the orange sauce and stir to coat. There won&#x27;t be a lot of extra sauce; if you want more double the sauce.

Serve over brown or white rice. Sprinkle with green onions and/or sesame seeds. Serve hot and enjoy!

Cauliflower Adobo {vegan}

cauliflower,

garlic,

soy sauce

brown sugar

black pepper

red pepper

Preheat a large lidded skillet to medium-high heat with a drizzle of oil. Add the cauliflower in one layer and sear on one side for about 5 minutes until very browned. Do this in batches if necessary. When the cauliflower is browned, remove to a plate and reduce the heat on the skillet to low. 

Quickly add the sauce ingredients to the skillet and return the cauliflower to the pan, seared side UP. 

Cover the skillet and simmer for 15 minutes until the cauliflower is tender, then remove the lid and increase the heat on the sauce until it bubbles. Let the sauce bubble and reduce just for a minute or two.

Serve on plates with freshly cooked rice, scallions, or any other green herbs you like. Drizzle the sauce over everything!

Trim the cauliflower &#8211; either cutting off the stem (easier) to create a flat base, or leaving it intact, trimming and slicing the bottom so it stands up straight ( like a tree trunk).

Place it in an ovenproof skillet or dutch oven. Drizzle 1 tablespoon oil all over the cauliflower, sprinkle with salt and Zaatar spice.  Pour 1/2 cup of water into the bottom of the pan. 

Bake

Cover tightly with the lid or foil and bake for 25-45 minutes&#8211; depending on size &#8211; or until just tender when pierced with a knife. Smaller cauliflower heads may only take 25 minutes, larger ones can take up to 60.

Uncover

Very carefully take the lid or foil off, minding the hot steam (it will burn!). Drizzle with a little more olive oil, place back in the oven for 30 minutes uncovered, perhaps rotating halfway through. At this point it should be deeply golden, but if not, continue roasting until it is&#8230; please no pale cauliflowers here!

Remove from the oven and sprinkle more zaatar if you like, fresh herbs, and optional aleppo chili flakes,  and either drizzle the tahini sauce over the whole thing right in the pan, or cut it up, like a cake, into wedges and serve the tahini sauce on the side. Enjoy!

This easy plant-based vegan ceviche would be a delicious and gorgeous start to any meal.

Vegan Dilled Ceviche

cauliflower florets

grapefruit juice

lime juice

cucumber

red onion

chopped cherry tomatoes

jalapeño ((diced))

dill

avocado ((diced))

Steam cauliflower florets until just tender, about 7-8 minutes.

Combine cauliflower with grapefruit and lime juice, diced jalapeño and diced red onion in a large bowl. Set in fridge for 30 minutes to marinade, mixing once or twice to ensure all ingredients are getting covered in juices.

Meanwhile, prep/chop all other ingredients.

After cauliflower mixture has marinaded, add all remaining ingredients and mix well.

Use a slotted spoon to serve, but I like to keep any leftovers in the marinade to keep the flavors mingling.

Serve immediately or refrigerate until serving time.
