Seitan Vegan Chicken Breast

block extra firm tofu (drained and pressed (about 200 grams/7 ounces))

water

yeast

soy sauce (or tamari/shoyu (use gluten-free if needed))

onion powder

garlic powder

liquid smoke (optional)

poultry seasoning (optional)

vital wheat gluten

In a food processor, place all ingredients, except vital wheat gluten. Blend until a smooth batter forms.

Next, add vital wheat gluten to the food processor and pulse until a dough forms.

Knead the dough for 1-2 minutes, then separate them into 5 parts. Shape them into the shape of chicken breast. Wrap them up using aluminum foil.

To steam - Bring 1-2 inches of water to boil in a pot with the steamer basket inserted in. Once the water starts boiling, transfer seitan chicken into the basket and place the lid on. Steam for 30 minutes.Instant Pot -  Place a cup of water into the pot and insert the trivet. Place vegan chicken breasts in and cook at high pressure for 15 minutes. Quick release pressure after the timer goes off.

Let cooked seitan cool slightly before removing them from the foil. You can now prepare them however you like!

Vegan Chicken Breast

A quick and easy vegan chicken recipe made in a skillet with lemon and thyme. Aromatic and delicious, this vegan chicken recipe works really well on its own as a main, or as part of a vegan chicken burger. You can cut it in strips, dip it in sauces or just have it in salads. 

Vegan Chicken

chickpea

tomato sauce

vegetable stock

soy sauce

tbsp dijon mustard

oregano

paprika

tbsp coriander

tsp peppercorn

tsp salt

wt. oz vital wheat gluten

turmeric

tbsp liquid smoke

Lemon & Thyme Vegan Chicken

Add chickpea, nutritional yeast,

Add chickpea, nutritional yeast, tomato sauce, vegetable stock, soy sauce, dijon mustard, oregano, paprika, coriander powder, turmeric, liquid smoke, black pepper and salt to a food processor and process until all ingredients become a runny paste.

Transfer the mixture to

Transfer the mixture to a bowl and add the vital wheat gluten. Stir in with a wooden spoon, then start kneading with your hands. Knead the dough for a short minute until everything is well mixed together. You'd want to see your dough be firm and stretchy for a tender vegan chicken breast, but don't over knead as your vegan chicken breast will become too tough.

Cut your dough into

Cut your dough into 4 roughly equal sizes. Shape them a little to resemble a chicken breast. Wider on one end, and slightly thinner on the other.

Wrap each vegan chicken

Wrap each vegan chicken breast in aluminium foil. Using a steamer, steam them for 20 minutes.

While your vegan chicken

While your vegan chicken is steaming, it's time to make the vegan chicken dressing. Add all ingredients to a bowl and mix them together. Taste and adjust the seasoning. Add more lemon juice if you prefer a tangier flavour.

Once your vegan chicken

Once your vegan chicken has steamed, unwrap the aluminium foil and transfer them to a deep plate. Pour the vegan chicken dressing over it. Turn around and make sure it's fully covered in dressing.

Add lemon slices and

Add lemon slices and fresh thyme sprigs to a skillet. Drizzle a little oil over them. Warm up the skillet on medium heat, then carefully add the vegan chicken breasts. Fry for about 3-5 minutes on each side, or until it's golden brown on both sides. Serve immediately, hot.
