This delicious white bean and orzo soup is filling, nutritious, and full of flavor! Perfect for anyone dealing with cold weather.

White Bean Soup with Lemon and Orzo

olive oil

carrots (diced)

garlic (minced)

celery

oregano

vegetable broth

white beans

lemons (juiced)

cashew butter (or tahini)

In a pot over medium heat, add the onion, carrot, celery, garlic, and oregano. Sauté until softened, approximately 5 minutes. 

Add the vegetable broth, drained and rinsed can of beans, lemon juice and lemon zest to the pot. Bring to a boil, then simmer for 10 minutes covered.

Stir in fresh dill and orzo and cook for another 10 minutes until the orzo is cooked through, keeping the lid off and stirring intermittently to prevent the orzo from sticking.

Stir in the cashew butter or tahini and turmeric, along with the kale until heated through. Serve immediately. 

A healthy and delicious mac and cheese sauce that is vegan, nut/cashew free, and made with six different hidden vegetables!

Hidden Veggie Mac and Cheese

yellow onion

garlic (large)

cauliflower

red bell pepper (roughly chopped)

butternut squash (chopped)

carrot (chopped)

paprika

garlic powder

tsp sea salt

tbsp tahini

coconut milk

hot sauce

pasta water

yeast

oz whole wheat macaroni (cooked)

Preheat the oven to 400F and line a baking sheet with parchment paper.

Cook the pasta according to the package instructions. Drain the liquid, reserving some pasta water for later.

Add the onion, garlic, cauliflower, bell pepper, squash and carrot to the baking sheet, along with the paprika, garlic powder and sea salt sprinkled on top. Bake for 40 minutes, until all of the vegetables are soft and tender.

Once safe to handle, add the ingredients to a high speed blender with the vegetable broth, tahini, coconut milk, pasta water, hot sauce and nutritional yeast. Blend until a smooth “cheese” sauce is formed, adding more vegetable broth as needed to thin. Taste and adjust salt as desired.

 Pour the desired amount of cheese sauce into your cooked macaroni, stir and enjoy immediately. Use any remaining sauce as a delicious nacho or cracker dip.
