Jalapeno Cornbread Chili Casserole is an easy vegan comfort food casserole recipe with a quick jalapeño cheddar cornbread crust baked right on top of the lentil chili. It’s warm and savory and comes together in one dish.  Nutfree soyfree. Glutenfree option.

Vegan Jalapeno Chili Cornbread Casserole

garlic (minced)

onion

red bell pepper (chopped)

Split red lentils (use 1/3 cup if you like less lentilly chili)

black beans beans

tbsp chili powder blend

tsp cumin

tsp oregano

onion powder

tomatoes

tsp salt

tsp black pepper

maple syrup

tbsp oil

non-dairy milk (Such as almond

tsp vinegar

all purpose flour

Medium grain cornmeal (or fine grain or grits)

cornstarch

tsp baking powder

tsp baking soda

tbsp chopped pickled jalapaneo

jalapeno thinly sliced for topping

In a 9x9 casserole dish, add all of the ingredients under "for the chili" and mix well. Add 1 1/2 cups of water and mix in, and even out the mixture

Place in a pre-heated oven at 400 degrees F, and cook for 35 minutes. Meanwhile make your cornbread mixture, and keep ready.

Mix all your dry ingredients, cornmeal, salt, baking powder, baking soda, and cornstarch in a bowl, then add in the wet ingredients and mix well.

Add in your pickled Jalapenos and cheddar shreds and mix, and let the mixture sit for five minutes to see if you need more non-dairy milk.

Take the chili casserole out of the oven and the lentils by now should be al dente, or just about done.There should be barely any liquid in the mixture. If it's too liquidy, then bake for another 10 minutes.

-Spread the cornbread mixture over the casserole, and even it out with a spatula, spread the sliced jalapenos on top.

Put the casserole back in the oven to bake for another 25-30 minutes, check if the cornbread is done in the center and the sides are startng to turn golden, thats when the casserole is done.

Take the casserole out and cool for 5-10 minutes, and just take large helpings and enjoy!

Although vegan cornbread goes perfect with chili, cornbread is wonderful as a side dish salads,  soups, or alone as a breakfast treat! And we love this oil-free cornbread for Thanksgiving!

This crispy-crusted, buttery, and moist vegan cornbread is truly the best cornbread you&#039;ll ever eat. A must-make, whether paired with vegan chili or on your holiday table! No one will know it&#039;s vegan (easy to make GF).

The Best Vegan Cornbread

½ cups (360 mL) full-fat oat milk

apple cider vinegar

½ cups (195 grams) stone-ground yellow

(94 grams) all-purpose flour***

baking powder

sea salt

(40 grams) organic brown sugar

(84 grams) agave nectar

rosemary (4 grams)

Preheat the oven to 400ºF/204ºC and arrange a middle rack in the oven. Stir the vinegar into the oat milk and set aside for 5-10 minutes to slightly curdle.

In a large bowl, combine the flour, cornmeal, baking powder, and salt. Whisk well to break up any clumps.

Make a well in the center and pour in the 4 tablespoons melted vegan butter, oil, brown sugar, agave, and buttermilk. Gently mix with a whisk until just smooth, taking care to not overmix - there will be lumps, that’s okay!

Fold in the rosemary using a silicone spatula. Allow the batter to rest for 10 minutes, or up to 1 hour. It should look somewhat like a pancake batter.

Meanwhile, transfer a 9- or 10-inch cast iron skillet to the pre-heated oven to heat up for 10 minutes. Remove the pan from the oven (use oven mitts!) and add the 2 tablespoons of vegan butter. It will start melting almost immediately. Dust the pan lightly with a sprinkle of cornmeal, about 1 teaspoon.

Pour the cornbread batter into the hot skillet (but not too quickly or the butter will pool up to the top). Bake for 25 to 28 minutes (check at 25 minutes), until a toothpick inserted in the center comes out clean and the top is golden brown.

Transfer to a wire rack and allow to cool for 15 to 20 minutes before slicing. Serve warm, or with a pat of softened vegan butter on top of each slice, if desired. Store leftovers in an airtight container for up to 3 days on the counter.

If making the maple butter, add the softened butter to a small bowl and whisk vigorously until it starts to get fluffy. Add the maple syrup and whisk until well combined and smooth.

160 gr harina de maíz (amarillo, molienda media)

gr azúcar de coco (azúcar de caña orgánica, o blanca granulada)

½ cucharadita sal

½ cucharadita bicarbonato de sodio

½ cucharadita polvo de hornear

gr mantequilla vegana (derretida o margarina,aceite de canola o aguacate)

300 ml leche de soya casera

cucharadita limón (exprimido, o vinagre de sidra de manzana)

mantequilla vegana

jarabe de arce

Cazuela de frijoles colorados

Precalentar

Precalienta el horno a 204 ºC (aproximadamente 400 ºF ) y engrasa ligeramente un molde de 20 x 25 cm (8 x 10 pulgadas), 20 x 20 cm (8 x 8 pulgadas) o un molde redondo para pastel de  (9 pulgadas).

Precalentar molde

Precalienta el molde para hornear. Luego, úntalo cuidadosamente con mantequilla vegana antes de verter la masa más tarde.

Preparar suero de leche

Prepara el suero de leche. Mide la leche de soja y añade el jugo de limón. Deja a un lado.

Mezclar ingredientes secos

Agregar ingredientes húmedos

Añade los ingredientes húmedos. Remueve hasta que estén bien combinados.

Verter

Vierte la masa en un molde. Vierte la masa en el molde preparado.

Hornear

¡Hola! Encontre este sitio de pura casualidad y francamente me habia encantado porque 
tiene los segmentos de sutitutos y conservacion que me parecen muy positivos. 
Sin embargo, debido a que no soy experta en la cocina, necesitaria algunas precisiones:


   Note que en la primera lista de ingredientes y en la seccion de variantes 
y sustitutos se menciona al "azucar de coco" pero mas adelante, en la receta
dice "Es posible que desees sustituir el azúcar de caña orgánica por un endulzante natural. 
No lo sugeriría. El sabor y la textura del pan de elote se ven 
comprometidos al usar endulzantes como jarabe de arce, agave e 
incluso azúcar de coco." HELP!! :-(


   Por otro lado miraba tambien la primera lista de ingredientes y la seccion de receta,
donde estan incluidas las cantidades... En la primera se incluyen el bicarbonato de sodio y
la levadura en polvo aunque en la otra habla de bicarbonato de sodio y polvo de hornear... O_o
cualquiera de las opciones es valida, ¿verdad?


   Finalmente vi que se refiere en un parrafo al "harina de avena" como "sin gluten". No soy celiaca, 
empero estaba considerando la variante para tener opciones y esa parte se causo confusion. Asi
qu escarbe para asi descubrir que en ALGUNOS paises existe la dicha harina pero no en mi pais.
¿Tal vez fuera mejor hacer una aclaracion al respecto? Porque los celiacos no pueden consumir trigo, 
avena, cebada o centeno... :-)
