vegan energy balls

Chocolate Date Energy Balls Recipe! These healthy energy balls are made in 5 minutes with 8 ingredients and they taste brownie bites! They are vegan, Paleo gluten-free and have no refined sugar, but you'd never know it! They're also freezer-friendly!

Chocolate Date Energy Balls (Vegan & Paleo)

dates

pecans

cashews

cocoa powder

½ tsp salt*

almond butter

almond milk

vanilla

Line a baking pan with wax paper, set aside. (You will not be baking these, you just need a place to set your rolled bites as you make them).

Put dates, pecans and cashews in your food processor fitted with an “S” blade or in your Vitamix. Process until mixture is fine and homogeneous.

Add the rest of the ingredients in the order listed (cocoa powder, salt, almond butter, almond milk, & vanilla) to your food processor and process until mixture just starts to clump together.

Roll 1 TBS portions of your “dough” into balls and place them on your prepared baking sheet.

Put them in the fridge or freezer until they harden.

Transfer to an airtight container to save for later! These can be stored at room temperature, but will last longer when kept in the fridge or freezer! I think they taste the best cold/frozen!

Chocolate Date Energy Balls

These Whole30 / Paleo chocolate coconut energy balls are an amazing midday snack and energy boost! Sweetened only with dates and super easy to make, they taste decadent, similar to an almond joy, but are 100% guilt-free.

Chocolate Coconut Energy Balls with Pecans and Dates

dates (roughly chopped)

coconut (divided)

coconut oil

kosher salt

water ((if needed))

Put pecans (1/2 cup) in food processor and pulse until roughly chopped.

Place 1/4 cup of the shredded coconut in a small bowl. Set aside.

Add the remaining ingredients except for the 1 tablespoon water to the food processor. Turn food processor on until very well mixed. If mixture seems too dry to stick together, add the water.

Using a tablespoon measure, spoon out mixture and roll in balls.

Coat each ball in the reserved 1/4 cup shredded coconut.

Place on a parchment covered baking sheet and refrigerate for at least thirty minutes, until they harden.

Store in the fridge in an airtight container or plastic bag for up to two weeks.

Vegan Energy Balls- Just 3 Ingredients!

This easy, healthy, no-bake vegan snack is full of wholesome ingredients to keep your energy levels up all day or refuel after a workout.

No-Bake Peanut Butter Oatmeal Balls

Old-Fashioned Rolled Oats

Maple Syrup

Vanilla

Dairy-Free Dark Chocolate Chips

Pecans (chopped,

Shredded Coconut (Unsweetened) (or any seeds)

Cinnamon

In a large mixing bowl, add all the ingredients in this order: old-fashioned oats, fresh runny peanut butter, maple syrup, vanilla, dark chocolate chips, pecans, coconut, and cinnamon.

Use a spatula or the paddle attachment of your stand mixer to combine all the ingredients until it forms a sticky dough.

Refrigerate for 20 minutes to make it easier to roll into energy bites.

Remove from the fridge, and slightly wet your hands with water before shaping each energy ball to prevent the batter from sticking to your hands. Scoop out about one tablespoon of dough and roll with your hands to shape energy balls.

Place each energy ball onto a plate covered with parchment paper.

Yum! I made this a ton my freshman year of college. It was a great option for an easy, cheap, and healthy snack :-)

These were so easy and are delicious and nutritious! My 12 year old son loves them!!! Thanks for sharing!! I will definitely be making them again and trying some other variations. :)

Back in the groovy 1970s, my mom used to make energy bars and these are as close as I’ve found to her recipe. Delish! I like mine with dried cherries and apricots, chocolate chips, and roasted pumpkin seeds. I keep them in the fridge for those mornings when I have to run out of the house without a proper breakfast. Thanks for the awesome recipe!

I'm in Uganda and I was able to make these with gluten free oats/granola, dates instead of cranberries, cashews instead of pumpkin seeds and honey instead of maple syrup. Somethings are hard to find here. Thank you for this recipe. I love these and so do the locals!!

Wonderful recipe but I would halve the maple syrup next time....way too sweet with 1/2 c of maple syrup.

If you are obsessed with peanut butter like myself you definitely have to try these.
